Ocupava o tempo a fazer bem a quantos a rodeavam, visitando e tratando doentes, distribuindo esmolas pelos pobres. Ora, conta a lenda que o rei, já irritado por ela andar sempre misturada com mendigos, a proibiu de dar mais esmolas. Mas, certo dia, vendo-a sair furtivamente do palácio, foi atrás dela e perguntou o que levava escondido por baixo do manto. Era pão. Mas ela, aflita por ter desobedecido ao rei, exclamou: - São rosas, Senhor! - Rosas, em Janeiro? - duvidou ele. De olhos baixos, a rainha Santa Isabel abriu o regaço - e o pão tinha-se transformado em rosas, tão lindas como jamais se viu.
