products. Agriculture is the most important sector of
Serres economy. Let's have a look at the most important
ones.

Mpougatsa (Cream pie)
0 The history of bougatsa is very old. The origin is Istanbul
 Etymologically it means sweet pie and came to Greece after
 the Asia Minor catastrophe. Etymologically it means sweet
 pie and came to Greece at about 1920.
The secret is the
perfect spreading
of the yeast, the
excellent quality
of flour, vegetable
oil and butter.
The sheet of bougatsa is
hand made and requires
skill and artistry.
The largest cream pie in the world!

For the third consecutive year, after the Creampie from Serres in
2008 and meatballs from buffalo meat in 2009, Serres has won a
new Guinness record with the exceptional and unique rice of
Serres!
Sugar
    The sugar factory of
    Serres was founded in
    1963 and is the third
    biggest in Greece.
     Sugar is produced
    from beet processing.
     Around 5-6000
    farmers contribute
    substantially to rural
    economy cultivating
    an average of 15
    acres.
Flour - Semolina




0 They are produced from grain, in the fertile plain of Serres.
0 The flour, the semolina and the traditional pasta are known and
  popular for their excellent quality, in Greece and abroad.
0 The flour industries of Serres are among the top companies in the
  area.
Akanes Lailia Serres
The Akanes Lailia, dating back to 1700’s is made by
confectioners of Serres with great zeal and quality
ingredients, always according to the traditional way. It's a
sweet delight of excellent taste and quality, known
throughout Greece and abroad.
The preparation of Akane
AKANES RECIPE
Ingredients:
1 glass of goat butter;
1 glass of corn flour;
2 glasses of sugar;
1 cup of chopped almonds;
2 ½ glasses of water;
1 tablespoon of lemon juice

Method:
0 We put the almonds in boiled water for 10 minutes, we leave them to dry and then we
  chop them.
0 We roast the almonds with 3 tablespoons of butter. We put the remaining butter,
  sugar, two cups of water into saucepan and boil them.
0 In the meantime, we dissolve the corn flour with the half glass of water well.
0 As soon as the mixture in the saucepan is ready, we take it out of the stove we add the
  corn flour, the almonds, the lemon juice and stir until it thickens well.
0 We leave the mixture to cool and we make little balls. When all is finished, we pour
  icing sugar.

0 Over the last years, cultivation of pomegranate has
 begun to develop rapidly mainly for juicing.
Macedonian ostrich farm in Pentapolis Serres




0 The Macedonian Ostrich Farm is the first established in Greece
 in 1995. It is located 15 km outside the town of Serres, near the
 village of Pentapolis. .
Eggs
0 The shell of the eggs except from the many nutrients were used
  in ancient times by the Egyptians, Assyrians and Greeks, as
  glasses.
0 Nowadays from the eggs that are infertile, the yolk is removed
  with a syringe and have been used as decorative painted items.
0 They weigh 1.4 kg.
Feathers
0 Recently the feathers of the ostrich are used for
 dusting sensitive surfaces, as well as carpets and
 mattresses. They are also used as hat accessories,
 clothes as well as for decoration.
Skin
0 The skin ostrich is used for making shoes, purses,
 handbags, leather clothes that are actually quite
 expensive. It is five times stronger than the skin of a
 cow.

The people of Serres have won a new Guinness
record for the biggest burgers weighed 312.5
pounds. The buffalo meat is very healthy, and has
great flavor.
Sausages of Tzoumagia
The famous sausages of Tzoumagia (Heraclea)
are produced traditionally for many years and
they stand out for their special taste and flavor
and are known throughout Greece.
Spiroulina
     Spirulina, a blue-green
     microscopic algae has
     proven to be a source of
     high quality protein
     concentration, minerals
     and fats that are essential
     for a healthy body. The
     main advantage is that its
     vitamins and salts it
     contains is 100% herbal
     and does not contain
     toxic residues. .

     It is currently grown by
     just three producers
     worldwide, from which
     two are from Nigrita
     Serres. Spirulina
     (Spirulina) can provide
     more energy to the body
     to strengthen the
     defense, provide better
     performance at work, at
     sports and at study. It is

   Cotton is the main
   production of
   10,000 farms in
   Serres that are

  countries of Eastern. Europe, Asia, etc.

In Serres there are factories and industries that manufacture
fresh pasteurized milk, traditional sheep and cow yogurt and
other dairy products (butter, ariani etc.) that stand out for
flavor and quality.

AKANES RECIPE Ingredients: 1 glass of goat butter; 1 glass of corn flour; 2 glasses of sugar; 1 cup of chopped almonds; 2 ½ glasses of water; 1 tablespoon of lemon juice Method: 0 We put the almonds in boiled water for 10 minutes, we leave them to dry and then we chop them. 0 We roast the almonds with 3 tablespoons of butter.   1. μεγέθυνση εικόνας Ρύζι καρολίνα Σερρών ΑΡΟΣΙΣ   Το ρύζι καρολίνα Σερρών ΑΡΟΣΙΣ καλλιεργείται κατά μήκος του ποταμού Στρυμόνα. Οι ορυζώνες είναι προσήλιοι και συνήθως πλημμυρισμένοι με νερό. Το άρωμα και τα φυσικά συστατικά του «κλείνονται» μέσα στη πρωτότυπη συσκευασία. Παραμένει σπυρωτό και δε λαπαδιάζει κατά το μαγείρεμα. Χρησιμοποιείται κυρίως για ριζότο, γεμιστά, σαλάτες. Είναι φυσικό τρόφιμο υψηλής διατροφικής αξίας. Η απουσία λίπους, χοληστερόλης και αλάτων το καθιστά ιδανική -  υγιεινή τροφή, ακόμη και για άτομα με ειδικές διατροφικές ανάγκες (χορτοφάγοι). Το ρύζι αποτελεί κύριο συστατικό της Μεσογειακής Διατροφής.  Συσκευασία 500γρ.
  2. Γενικά : Ο ακανές είναι το κατ' εξοχήν παραδοσιακό γλυκό των Σερρών. Δεν θα το βρείτε σε καμιά άλλη περιοχή, τόσο της χώρας όσο και της υφηλίου. Οπτικά μοιάζει με ένα μικρό λουκούμι. Γευστικά όμως είναι η διαφορά. Αυτό που καταλαβαίνεις από την πρώτη στιγμή είναι η γεύση του φρέσκου βουτύρου και το καλοψημένο αμύγδαλο.Ο ακανές Λαϊλιά Σερρών είναι το γλυκό που σίγουρα θα πάρετε μαζί σας πριν φύγετε από την πόλη μας. Ιστορικά στοιχεία :Η ιστορία του ακανέ στις Σέρρες ξεκινά επί Τουρκοκρατίας, όταν οι Μπέηδες έκαναν τις καλοκαιρινές διακοπές τους στο Λαϊλιά Σερρών.Η παρασκευή του γινόταν με τις τεχνικές της εποχής: μέσα σε μεγάλα καζάνια έβραζαν ρετσέλια και πετιμέζια με νερό από την πηγή του Λαϊλιά. Γι' αυτό μάλιστα έμεινε και η ονομασία " Ακανές Λαϊλιά Σερρών ". Λέγεται ότι το νερό του Λαϊλιά, καθότι ήταν δροσερό και ελαφρύτερο, ήταν το βασικότερο συστατικό και αυτό που έδινε όλη τη νοστιμιά στον ακανέ. Τα πετιμέζια και τα ρετσέλια αντικαταστάθηκαν με χυμό ζαχαροκάλαμου και νισεστέ. Σήμερα, αντί ζαχαροκάλαμου χρησιμοποιείται η ζάχαρη. Το παραπάνω μίγμα, αφού γινόταν πηχτό, πρόσθεταν φρέσκο βούτυρο και στο τέλος ξηρούς καρπούς. Κατά τη διαδικασία παρασκευής, επειδή χρειαζόταν πολύωρο ανακάτεμα, βρισκόταν πάντα εκεί ένας δούλος και ανακάτευε το μίγμα με μία ξύλινη κουτάλα. Όταν κρύωνε, το πηχτό αυτό μίγμα το έκοβαν σε μικρά κομμάτια και το σέρβιραν για γλυκό. Προέλευση ονομασίας : Σήμερα κανείς δεν μπορεί να πει με σιγουριά από που προήλθε η ονομασία ακανές . Η ιστορία του χάνεται στην εποχή της Τουρκοκρατίας και ίσως μαζί της χάθηκε και η ιστορία προέλευσης του ονόματός του. Βάσιμη ετυμολογία της λέξης δεν υπάρχει. Παρόλα αυτά όμως υπάρχει μία εκδοχή που ίσως να πλησιάζει περισσότερο την πραγματικότητα. Η λέξη "ακανές" προήλθε, όπως λένε, από την λέξη "ανακατεύω", γιατί το μίγμα χρειάζεται πολύωρο ανακάτεμα και από το κατάφαση "ναι", που έλεγαν πάντα οι δούλοι, οι οποίοι ήταν αυτοί που ανακάτευαν το μίγμα.Σήμερα Μετά την απελευθέρωση το 1913 από τους Βούλγαρους, οι δούλοι έγιναν μαστόρια και παρασκεύαζαν αυτό το γλυκό στην πόλη. Σήμερα, στην πόλη των Σερρών υπάρχουν τέσσερις -4- επιχειρήσεις που παρασκευάζουν τον παραδοσιακό ακανέ. Είναι: ο ακανές Ρούμπου , ο ακανές Βασάκη , ο ακανές Νικολαίδη και ο ακανές Μπουφίδη .
