From the "Kids' Corner" - Cheese-Topped Grilled
Tomatoes
Thanks to Benedictine University Dietetic Intern Sarah Thelen for sharing this recipe.
Sarah says: "While kids may not be able to help with cutting the tomatoes, they can
assist with sprinkling the cheese and drizzling the dressing."

4 red-slicer type tomatoes, cut in half lengthwise
1/4 cup light Italian dressing (or balsamic dressing)
1/2 cup shredded mozzarella cheese
2 tablespoons Parmesean cheese
1 tablespoon chopped fresh herbs, such as basil, parsley, and/or chives

Heat grill to medium-high heat. Place tomatoes, cut-sides up, in 8-inch square foil pan
sprayed with cooking spray. Drizzle with dressing; top with cheeses. Place pan on grill
grate. Grill 10 to 12 minutes or until mozzarella is melted and tomatoes are heated
through. Sprinkle with herbs and serve.

Serves 4.
