2. INTRODUCTION
Our love affair with ice cream is centuries old.
The ancient Greeks, Romans, and Jews were known to
chill wines and juices. This practice evolved into fruit
ices and, eventually, frozen milk and cream mixtures.
The Italians were especially fond of the frozen
confection that by the sixteenth century was being
called ice cream. Ice cream is a frozen blend of a
sweetened cream mixture and air, with added
flavorings. The first public sale of ice cream occurred in
Paris at the Café Procope in 1670.
3. INGRIDIENTS
• There are three categories of ingredients in
the ice cream mix: dairy, sweeteners, and
additives.
• Milk, cream, and non-fat milk solids make up the
dairy portion of ice cream.
• Sucrose or Splenda® is used to sweeten the mix.
• And stabilizers and emulsifiers are added to give
the ice cream the desired body and mouth feel.

7. Refrigeration Cycle
An optimized ammonia refrigeration
cycle design is displayed in the following
figure. The three temperatures utilized for this
process are -45.6°C, -40.0°C, and -34.7 °C for
the hardener system , the continuous freezer
system, and the cold storage
room, respectively.
11. Ice Cream Mix Plant
We manufacture complete ice cream mix
plant from 200 LPD to 10000 LPD in compact
SS skid. We have used PHEs to heat the mix
and two stage PHEs for chilling the mix.

14. Quality Control
Every mixture is randomly tested
during the production process. Butterfat and
solid levels are tested. The bacteria levels are
measured. Each mixture is also taste-tested.
Ice cream producers also carefully monitor the
ingredients that they purchase from outside
suppliers.
15. The Future
Ice cream manufacturers continue to
develop new flavorings. Ironically, given the
industry's experiences during Prohibition, one
of the more recent innovations has been the
introduction of liqueur-flavored ice creams.
