derivers the name of the firm.
"Salis" is a sedimentary rock made of sands assembled with calcareous
cement, clayey or calcareous clayey. This kind of ground causes a less
vegetative development, limiting the production of the vine stock naturally.
Rearing system: Sylvoz.
Plant density: 2500-3000 plants per hectare.
Yield: max 135 hundred kilograms per hectare.
Time of vintage: Last week of September till half of October.
Vinification: Pressing with pneumatic presses of the entire grape.
Static settling of the must and fermantation with selected leavens at
controlled temperature (17°-19°C).
A part of the cutting is fermented in total lack of oxygen.
The wine stays in "noble containers" for about 3 months.
Foam talking: Charmat short method or Italian method, refermentation in
steel containers (autoclaves) for about 40 days.
Tartaric stabilization at -3°C and filtering of the sparkling wine before the

derivers the name of the firm.
"Salis" is a sedimentary rock made of sands assembled with calcareous
cement, clayey or calcareous clayey. This kind of ground causes a less
vegetative development, limiting the production of the vine stock naturally.
Rearing system: Sylvoz.
Plant density: 2500 plants per hectare.
Yield: max 150 hundred kilograms per hectare.
