This organic recipe was taken from a recipe provided by the Columbus Dispatch. You can enhance the texture and flavor of the
skinless, boneless organic chicken breasts and make them more nutritious by stuffing them with three enticing types of
cheese, spices, onion and garlic.Thus, even though the chicken breasts are boneless and skinless they are far from being bland.For a more touch of gourmet, the chicken breasts can be rubbed
with spice, olive oil, paprika, dried oregano and dried thyme. This chicken recipe goes fine with salad for you to enjoy a light and healthy meal. When served with baked potatoes, this makes a
satisfying dish for lunch or for dinner. Chicken breasts when cooked boneless and skinless, do not only dry out easily but also can be a boring dish as they are only plain white meat, thus they
become bland to the taste.To solve this problem, cooks then stuff them with cheese of their choice and spinach and then use aromatic spices to flavor them. To make the chicken breasts
tender and moist, sufficient amount of olive oil is then added. For a flavorful and juicy white meat, the moisture coming from the spinach, onions and cheese does the trick.
Ingredients
2 pkg. (10 oz. each) frozen chopped organic spinach,
thawed
1 cup shredded low-fat organic Swiss cheese
3/4 cup low-fat organic ricotta cheese
1/3 cup grated low-fat organic Parmesan cheese
1 clove organic garlic, minced
3 tbsp. organic white onion, finely chopped
1/2 tsp. course ground black pepper
1/4 tsp. ground nutmeg
6 boneless, organic skinless chicken breasts
2 tbsp. olive oil
1 tsp. paprika
1/2 tsp. organic dried thyme
1/2 tsp. organic dried oregano
1.The oven is preheated to 350 ⁰ F. Lightly spray or grease a 5 by 10 inch baking pan with cooking spray.
2.Moisture from spinach is then squeezed. It is then placed in a large bowl together with nutmeg, pepper, onion, garlic and cheeses. They must be combined through stirring.
3.A slit is then cut lengthwise in the middle of every piece of chicken breast forming a pocket. The spinach mixture is then stuffed into each chicken breast piece. Then the chicken pieces are
placed in the baking pan.
4.With the use of a small bowl, the rest of the spices are then combined. The mixture is then brushed over each piece of the chicken breast.
5.You are now ready to bake them uncovered for an hour to an hour and fifteen minutes or till meat is fully cooked.
