2. Introduction
• PINAKBET is an Indigenous dish from the northern regions of the
Philippines. PINAKBET is made from mixed vegetable steamed in fish or
shrimp sauce. The word is the contracted form of the Ilokano word meaning
“Shrunk” or “Shriveled”. This dish is a unique dish of Filipino because some
of the ingredients can only found in the Philippines.
3. • ABOUT PINAKBET
• The dish came from the Ilocano word “PINAKEBBET” meaning to dried up or
shrunk since the cooking involves several local vegetable slowly sweltered in their
own juices until it slightly evaporates or dries up. Typical PINAKBET includes
vegetable such as (bitter gourd), (eggplant),(squash),(string beans),(lady finger)with
(fermented shrimp).In some PINAKBET version fresh tomato, onions, and garlic.
4. HOW TO COOK PINAKBET
First is prepare the utensil that needed in cooking pinakbet.
After that prepare the ingredients.
Then put the pan in the medium heat ,heat oil. Add onions and garlic and cook,
stirring regularly , until limp and aromatic. Add pork and cook, stirring occasionally ,
until meat is lightly browed. Add tomatoes, mashing with back of spoon, for about 5
minutes or until softened and have released juice.
Add water and bring to a boil. Lower heat, cover and cook for about 15 to 20
minutes.
Add squash and cook for about 2 minutes. Add okra, bitter gourd, long beans and
eggplant. Continue to cook for about 4 to 5 minutes or until vegetable are tender yet
crispy. Season with salt and pepper to taste.
