After working as an Executive Director in Senior Living for several years, I developed
an affinity for the culinary side of the business and learned everything I could about
food and being proactive in exceeding guest satisfaction. Thus began my direction in
F & B Management. I learned the purchasing side of the business, attended culinary
school and learned food prep and all that goes along with cooking and casual dining
management. I have the ability to motivate, educate, train, retrain and develop

operations and financial results at skilled nursing and rehab facilities.
Responsibilities included managing labor, food cost and purchasing in accordance
with census through my direct reports. My position was responsible for seven
communities in south central Texas.
Food Service/Dietary Consultant, self employed
3-13-15 to 5-22-15
Contracted with Morningside Ministries, a not for profit Senior Living Retirement
company. Assignment was at Menger Springs, in Boerne, Texas. This 33 acre
community is a CCRC with Independent Living, Assisted Living, Memory Care and
Skilled Nursing.
• Study and evaluate existing community dining program
• Evaluate food service management and food service workers job skill sets
• Formulate menu recommendations to Executive Chef
• Clarify training needs for Food Service management, cooks and servers to
Executive Director
• Organize resident focus group and collect information regarding likes, dislikes,
expectations and resident satisfaction
• Recommend employees needing NRA ServSafe training and or Texas Food
Handlers Permit
• Prepare the Assisted Living and Skilled Nursing employees and kitchens for
upcoming annual State Inspection

• Hire, train and manage all supervisory staff for kitchen and dining room
including Executive Chef, Dining Room Manager, SNF Certified Dietary

• Serve 530+ meals per day between I.L. and SNF within two separate kitchens

• Developed resident menus, catering menus, special event menus, emp. meals
• Marketed prospective residents with 100% tour conversion to rental
