This document outlines 5 basic cooking techniques: 1) How to fine chop onions by slicing them in half and making horizontal cuts while holding the onion together. 2) How to cook rice perfectly by rinsing rice, adding aromatics like cardamom and star anis, simmering with a lid for 8-10 minutes. 3) How to cook pasta properly by boiling water with oil, adding pasta and cooking for 3-4 minutes until al dente. 4) How seasoning adds flavor to food using salt, pepper, acid like lemon juice, and experimenting. 5) How to scramble eggs by whisking eggs in a pan with butter over heat, taking the pan off heat periodically to prevent overcooking.

3. How to fine chop an onion? 3
Root of the onion is absolutely crucial, leave that on there. If you cut that off the
onion will start to bleed and you will start crying. Slice the onion into half.
4. Keep 3 fingers, one in front and 2 from behind on top of the onion, point
the knife towards the root and try to get as close to the root as possible.
Push the onion back together, push the knife halfway in to the onion, one
on the top and then gripping the onion like a tennis ball holding it
together in place make horizontal cuts.

5. How to cook rice perfectly?
Take 400 gm of rice and rinse the rice using cold water.
Remember, always use cold water for this.

6. Take 3 cardamom pods, pierce them so it allows all that flavor to come
out, add them in the rice.
Take 2 whole star anis, it makes the rice really nice and fragrant.
Season the rice with some salt and pepper.
Take 600 ml of cold water.
Keep the it on the stove, lid on. Let it simmer for 8-10 minutes.
That's the secret, allow it to steam as it's cooking.
Do not lift the lid up while cooking.
Take the lid off, light and fluffy rice is ready.

7. How to cook perfect pasta?
Pasta can be easily undercooked or overcooked, here's how to do it properly.
Take water in a nice large pan to make sure that pasta got sufficient room to
cook evenly.

8. Add some oil which stops the pasta from sticking together.
Keep the pan on stove and let the oil boil, it stops the pasta from sticking
together.
Spread the pasta, add it in the water, turn it with the tongs, once it starts to
melt, gently twist it into the pan.
Pasta take usually 3-4 minutes to cook, if you want set the timer.
Taste it, it should not be crunchy.
Drain the water now.
Season with some salt and pepper and tbl spoon of oil, mix it together
which will stop it from sticking together.

9. How to season?
Seasoning adds flavor to the
food.
The reason why the food in
restaurants taste so good is
because they focus on seasoning
extensively.
Salt is very important it adds
flavor, without it the food is going
to be bland.

10. Spice comes with the pepper flakes, spice work really well when it
complements sweetness in the dish. One way of adding spice in the food is
chopping some Chili pepper and tossing them on the food.
To add some sourness and make the flavor bright and pop add some lemon
juice or vinegar in the food.

11. How to scramble the eggs?
One of the most popular
breakfast is Scrambled Eggs
hence it makes it to my list of 5
cooking basics.
Start with 3 eggs, don't season
it, because if you put salt at
this stage it breaks down the
eggs and it starts turning into
something sort of very watery.
Add the eggs in the pan.
Add some butter in it.

12. It's important to add butter at this stage because it gives that nice velvety
finish to the scrambled egg.
Turn on the heat and with the help of spatula start whisking in the pan
(remember, never whisk the egg).
Once it starts to come together and becomes a little bit thick, back off the
heat and whisk it 3-4 times, Keep it back onto the heat, whisk it, back off
the heat now, keep on whisking.
If you put it onto heat now it may overcook, let it cook due by the
temperature of the pan and add some creme in it to stop it from
overcooking.
Season it at this stage and serve it with a toasted bread.
