To have metabolic reactions on its surface. © 2009 Ebneshahidi "Fluid mosaic model suggests" that the phospholipids form a bilayer framework, with their hydrophilic (polar) heads on the surface and their hydrophobic (nonpolar) tails on the inside. Proteins are embedded in the phospholipids bilayers. Experimental data have indicated that the proteins the in this model are securely held to the phospholipids, making the structure very stable.
