3. Before you enter the store:
• Appearance of Italian villa
(eyes and nose captured)
• Door is ways open
• Warm and cozy colors
• Travel in your own city
• Quiet space for waiting
Could have live music played softly (accordion, violin…) or
live perfomance with actors, dancers, jugglers.
4. Environment:
Inside reproduces the experience of
an Italian warehouse and
surroundings of the 21st century.
i. Tables tight, close from each other.
ii. Very noisy.
iii. Eventually too hot.
5. Personnel:
ALWAYS very gentle - eyes open to serve those who just
finish their piece of pizza.
Uniform neutral, almost black and white.
Team could learn English.…
6. Product:
Gather skilled cooks, tasty
dough, wood-fired oven,
accuracy and mix tradition
and innovation.
Caprese : mozzarella, tomato persimmon, mozzarella from buffalo milk, basil giant and
pesto from black olives. Could have delivery.
7. Customers:
That’s me and my wife and other people in
different days.
Could offer more espace and make special
offerings during week days (from Mon. to Wed).
8. Other Observations:
Could have an outside area to relax after
the meal, not just as a place to wait before.
