Os instrumentos de laboratório não podem medir a perceção humana.
As análises instrumentais mais precisas não conseguem diferenciar um
vinho com defeitos, nem distinguir um vinho corrente (vinho de mesa) de
um vinho de topo (reserva).
As características sensoriais dos produtos estão na base da
preferência/aceitação dos consumidores.
Os nossos olhos, nariz e boca são os juízes finais da qualidade de um
vinho.
