2. The problem
Brighton is a hub for foodies (including bloggers, Twitterers,
photographers) - people enjoy cooking, but often do so in
isolation
Many people are limited in their creativity by a lack of space and
equipment in their homes - many flats in Brighton
Those that do have this infrastructure often don’t have
community to share and learn with
Fragmented collection of initiatives and organisations with no
physical hub - similar to freelancers discovering coworking
3. What is it?
A community of food lovers that meet regularly
A fully equipped commercial cooking space
A space for members to try their skills on paying diners
4. Community
Bringing people out of their kitchens and creating connections
Knowledge and skill sharing
Using empty spaces and regenerating a less profitable area of
the city
5. Sustainability
Estimated monthly expenditure and income
Lease - £2,500; break-even (inc. bills and rates) - £5,000
Membership fees - £3,000
Space rental e.g. dining nights, lunches - £1,000-£3,000
Member’s and friends dining nights - £3,000
Produce sales - £100-£1,000
Workshops - £100-£500
6. Technology
Management of responsibility sharing among members
Systems to run space booking and membership - tools already
in use by coworking spaces
Online feedback from the dining public
Use of social media to publicise menus, availability
7. Making it happen
Cookery leadership course
Initial funding of £10,000:
Idea validation - encourages participation
£7,500 lease deposit (building and equipment)
£2,500 operating capital and contingency
Commitment from first paying members - minimum number
of 75 to ensure break-even before taking on lease
8. Connections
Brighton and Hove Food Partnership
Local food groups - Harvest, Landshare, allotment societies,
Brighton Permaculture Trust
Educational institutions - City College, Falmer High School
Jamie Oliver
Community Chef, Fresh Ideas, Kitchen Academy

9. Future
Sponsored membership for people disadvantaged
backgrounds
Small business incubation, similar to La Marqueta in New
York
Development of an online hub for related groups
Creation of a larger movement, similar to Hackspace
Whatever ideas come out of the new community!
