Modeling organism:
Saccharomyces cerevisiae (means “the sugar fungus of the beer”)
Yeasts belong to the fungi kingdom
• Unicellular
• Cell wall (chitin not cellulose)
• Normal reproduction: asexual (budding)
Metabolism
• Anaerobic (does not need oxygen)
• Breaks down glucose for energy
• Byproducts: carbon dioxide & ethyl alcohol
