How will Zomato do it? Using dark kitchens + stores?

Now these areas could be as small as 500m/sq - let's
call them hubs

Zomato orders, they can predict pretty accurately what
will get sold tomorrow, where and when.
8. This will enable them to make a curated but a hot
selling menu of 20-30 items in each of their dark stores
in hubs.
9. Zomato can actually buy food from restaurants in bulk,
And pass a nice discount to users making it even
lucartive.
10. So basically the food is ready, before you even
order This solves the menu problem.
