Keto Grilled Chicken and Avocado Salad
Ingredients:
For the Chicken Marinade:
● 2 boneless, skinless chicken breasts
● 2 tablespoons olive oil
● 2 cloves garlic, minced
● 1 teaspoon dried thyme
● Salt and pepper to taste
For the Salad:
● 4 cups mixed salad greens (lettuce, spinach, arugula, etc.)
● 1 avocado, sliced
● 1/2 cucumber, sliced
● 1/4 red onion, thinly sliced
● 1/4 cup cherry tomatoes, halved
● 1/4 cup feta cheese, crumbled (optional)
For the Dressing:
● 3 tablespoons olive oil
● 2 tablespoons lemon juice
● 1 teaspoon Dijon mustard
● 1 clove garlic, minced
● Salt and pepper to taste
Instructions:
​ Marinate the Chicken:
● In a bowl, combine the olive oil, minced garlic, dried thyme, salt, and
pepper. Mix well.
● Place the chicken breasts in a resealable plastic bag or shallow dish and
pour the marinade over them.
● Seal the bag or cover the dish and refrigerate for at least 30 minutes,
allowing the flavors to meld.
​ Preheat the Grill:
● Preheat your grill to medium-high heat.
​ Grill the Chicken:
● Remove the chicken from the marinade and place it on the preheated grill.
● Grill for about 6-7 minutes per side or until the chicken is cooked through
and has nice grill marks.
● Make sure the internal temperature of the chicken reaches 165°F (74°C).
● Remove the chicken from the grill and let it rest for a few minutes before
slicing it into thin strips.
​ Prepare the Salad:
● In a large salad bowl, combine the mixed greens, sliced avocado,
cucumber, red onion, cherry tomatoes, and crumbled feta cheese (if
using).
​ Make the Dressing:
● In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard,
minced garlic, salt, and pepper until well combined.
​ Assemble the Salad:
● Drizzle the dressing over the salad and toss to combine.
● Place the grilled chicken strips on top of the salad.
​ Serve:
● Serve the Keto Grilled Chicken and Avocado Salad immediately.
