● 2 tablespoons soy sauce (or tamari for gluten-free option)
● 2 eggs, beaten
● Salt and pepper to taste
● Optional toppings: chopped green onions, sesame seeds, sliced avocado
Instructions:
1. Cut the cauliflower into florets and pulse them in a food processor until they
resemble rice-like grains. You can also grate the cauliflower using a box
grater.
2. Heat 1 tablespoon of coconut oil in a large skillet or wok over medium heat.
Add the minced garlic and chopped onion, and sauté until they become
fragrant and slightly golden.
3. Add the mixed vegetables to the skillet and cook until they become
tender-crisp, about 5 minutes.
4. Push the vegetables to one side of the skillet and add the remaining coconut
oil to the empty side. Pour the beaten eggs into the oil and scramble them
until they are fully cooked.
5. Combine the scrambled eggs with the vegetables in the skillet. Add the
cauliflower rice and stir-fry for about 3-5 minutes, until the cauliflower is
tender but not mushy.
6. Pour the soy sauce (or tamari) over the cauliflower rice and stir to combine.
Season with salt and pepper to taste.
7. Continue to cook for another 2-3 minutes, allowing the flavors to meld
together.
8. Remove the skillet from heat and serve the cauliflower fried rice hot. Garnish
with chopped green onions, sesame seeds, and sliced avocado if desired.
