Food Fact:
Monkey Bread, also known as Bubble Loaf, Pinch Me
Cake, or Hungarian Coffee Cake, began appearing in woman’s
magazines and community cookbooks back in the 1950s. The
origin of the name is unknown, though it has been suggested
the bread resembles the monkey puzzle tree whose prickly
branches make it difficult to climb. Some feel the name derives
from the act of pulling the pastry apart with their fingers.
Much like monkeys would do if they were presented with such
a treat.
Ingredients:
For the dough:
3 1/4 cups flour, plus
extra for kneading
1/2 tsp salt
1/2 tsp cinnamon
1/4 tsp nutmeg
1/8 tsp cloves
2 Tbsp unsalted
butter, melted
1/2 cup warm milk
1/4 cup warm water
2/3 cup pumpkin
puree
1/4 cup sugar
2 1/4 tsp active dry
yeast
For the coating:
1 cup sugar
2 tsp cinnamon
3/4 stick butter,
melted
For the glaze:
2/3 cup powdered
sugar
2 Tbsp pure maple
syrup
1-2 tsp milk
