6. THROUGHPUT / PROCESS
• Process: Cooking the Kwek Kwek
• Boil the Quail Eggs
• Remove egg shells
• Combine the cornstarch, all-purpose flour, salt, and pepper
• Dilute the anatto powder in water and combine the liquid with the first
mixture.
• Put the boiled eggs in the mixing bowl and coat with the batter.
• Heat the pan and pour cooking oil.
• Deep-fry the eggs until the coating is crispy.
• Serve with vinegar or sweet chili sauce.

11. SUGGESTED IMPROVEMENTS
• Improved Packaging for the Kwek Kwek and Vinegar, make it easier to
do take out orders
• Develop new dips / sauces for the Kwek Kwek
• Add new flavors to the batter (Spicy, Barbeque, etc..)
• Improve marketing by having a sound system that will attract more
customers
• Offer a free drink (sago/gulaman) for every 50 pesos spent by the
customers
• The cart should be attractive and the vendor can have a uniform that
will attract more consumers
