1. CHEF Y.B. MATHUR
Chef Y.B. Mathur is one of senior most chefs of the country. He retired from the services of ITC
Limited as Senior Executive Chef. He has impeccable records of his perfectionist services to ITC,
to the culinary industry and to Generation Next. For many years, Chef Mathur was positioned as
Regional Chef (South) – ITC Hotels at the iconic hotel in Bangalore–Windsor. Chef Mathur has
been responsible for total conceptualization and implementation of the Food & Beverage concepts
of multiple hotel units.
Chef Mathur owns and manages Culinary Design and Application Group, a hospitality
consultancy company that specializes in designing concepts, economics of the business and project
management services. Chef Mathur is an expert in positioning and repositioning culinary
businesses and creating benchmarks of commercial excellence and success. He is an acknowledged
expert on economics of food production, and is in the process of setting up a fresh business venture
entitled ‘Institute of Culinary Economics’.
Chef Mathur has won many national and international awards, accolades and recognitions in his
career spanning over 43 years. He has been recognised by the industry with prestigious awards like
Executive Chef of the Year, Golden Hat Chef, Times Food Guide Awards, and many others. Chef
Mathur has been featured in each of the two editions of the book – ‘50 Master Chefs – India’s
Most Dynamic Food People’.
Chef Mathur’s last posting at ITC was at the ITC Hospitality Management Institute. In this in-
house training institute of ITC Hotels, world class training is given, under various flagship
courses, to future chefs and managers. He continues to lecture and train management trainees of
ITC Hotels at the ITC Hospitality Management Institute.
Chef Mathur is passionate for the cause of the Generation Next. He has written two very valuable
books-“Culinary Economics”, and “Culinary Terms” to benefit quality culinary education.
Chef Mathur was responsible to institute the processes for the first Institute of Culinary Arts in
India under the aegis of Indira Gandhi National Open University. In addition he was responsible
for the institution of a Research, Development and Documentation Centre at IGNOU.
Chef Mathur is India’s hospitality skills expert for the purposes of skills competitions. He has the
additional responsibility as the World Skills expert for cookery.
Chef Mathur is an alumnus of the Institute of Hotel Management, Catering & Nutrition located at
Pusa, New Delhi.
