TY48 is the only yeast product that will ferment pure sugar to 20% ABV high quality alcohol base. The resultant alcohol base can be used to produce a whole range of alcoholic beverages and will provide your end drink with a more natural, smooth, fuller-flavour than using potable distilled alcohol (GNS).

2. Introduction
TY48 is the only yeast product that will ferment pure sugar to 20%
ABV high quality alcohol base.
The resultant alcohol base can be used to produce a whole range of
alcoholic beverages and will provide your end drink with a more
natural, smooth, fuller-flavour than using potable distilled alcohol
(GNS).
The taxation benefits of using TY48 to produce your own alcohol base,
in comparison to using potable distilled alcohol, are also a major
advantage.
3. Containing complete, chemically defined macro and micro nutrition blended with a vigorous,
temperature tolerant active dried distillers yeast; TY48 is capable of fermenting pure
glucose-based sugar syrups such as ‘95DE’ to 20% in 7 days with no additional nutritional requirements.
4. TY48 can be used to ferment any fermentable sugar based
feedstock but is especially recommended for fermentation of pure
glucose-based feedstocks such as 95DE glucose syrup.
TY48 contains fermentation activators to ensure rapid start to
fermentation; this combined with very low bacterial content
eliminates the potential for bacterial spoilage where good plant
hygiene is observed.
5. Tax Benefits
Most countries around the world have a taxation system that does
not tax all alcoholic products with the same %ABV at the same
rate. As a result, there are huge taxation saving benefits
associated with producing your own alcohol base using TY48,
compared with purchasing in potable alcohol (GNS).

9. Batch Preparation
1. Transfer 47,500 kg 95DE glucose/dextrose syrup into
fermentation tank (71% solids).
2. Top up to 100,000 litres with mains cold water.
3. Add 540 kg of TY48 directly, mix well and leave to ferment.
10. Notes
Start temperature – 95DE should be delivered hot at 60°C, after
filling fermenter with mains cold water the temperature should
be between 21-35°C depending upon the time of year/mains cold
water temperature. The perfect start liquid temperature is 30°C
but any temperature within this 21-35°C range is acceptable
providing the fermenter has automatic cooling facilities.
TY48 addition – either directly into the fermenter as dry mix
where the fermenter has mixing facility or add to 5,400L of 30°C
water in a separate mixing vessel, mix for 3 minutes then pump
across into fermenter within 15 minutes of product preparation.
11. Notes
Target start gravity– +130 (30.6 Brix)
Alternate feedstock– Whilst Ty48 is designed for use with pure
fermentable sugars such as 95DE sugar syrup a wide range of
other fermentable feedstocks can be used such as dry sucrose, dry
dextrose, molasses and starch converted grains. Support can be
provided where such alternative feedstock is used.
13. Process Conditions
Fermentation temperature – It is important that the liquid fermentation
temperature be maintained between 20-26°C (optimum 25-26°C).
Temperature 27°C or above may result in stuck fermentation. Note that the
lower the temperature the longer the fermentation time, for example, a
fermentation temperature of 20°C would take 10 days to reach 20%ABV.
pH – There is no need for pH monitoring and adjustment during
fermentation with TY48. This product contains sufficient food-grade pH
buffers for intrinsic pH control.
Foaming – TY48 is extremely low foaming and does contain antifoaming
agents. Minimal foaming will occur during the first 24 hours where liquid
antifoam should be added where less than 10% free tank head space.
17. Post Fermentation Treatment
Dependent upon what capital facilities are available, see below for
the two main approaches to removal of solids and unwanted
fermentation impurities. All consumable raw materials such as
activated powdered and granular carbons, finings agents kieselsol
& chitosan and other abosbents such as activated silicon dioxide
can be supplied together with TY48.

20. Solids Removal
Fermentation in a conical vessel will result in a solid ‘plug’ of
yeast cells and absorbents collecting at the bottom of the vessel;
this must be removed before the fermented alcohol base can be
transferred from the vessel for filtration. The solids should be
‘blown’ out of the vessel outlet valve by repeated short openings
of the outlet valve followed by two hour re-settling time until the
majority of the solids have been removed.
22. End Drink Options
The post-treatment 20% ABV alcohol can be used to produce a
variety of alcoholic beverages with quality advantages over and
above using potable distilled alcohol (GNS) conferring a
natural, smooth and fuller flavour.
All consumable raw materials such as flavourings and natural
extracts, sweetening sugars, cream powder and all other
ingredients required to make any of the below alcoholic beverages
can be supplied together with TY48.
