Keto-Friendly Cauliflower Fried Rice is a low-carb alternative to traditional fried rice. It replaces rice with cauliflower, stir-fried with vegetables and protein. Seasoned with tamari or soy sauce, ginger, and sesame seeds, it's a flavorful and nutritious option for those following a keto or low-carb diet.

Keto-Friendly Cauliflower Fried Rice
Ingredients:
1 medium head of cauliflower
2 tablespoons coconut oil
2 cloves garlic, minced
1/2 cup diced onion
1/2 cup diced bell peppers (any color)
1/2 cup diced carrots
1/2 cup peas (optional)
2 tablespoons soy sauce or tamari (for gluten-free)
2 large eggs, beaten
Salt and pepper to taste
Green onions, chopped (for garnish)
Instructions:
Prepare the cauliflower rice: Cut the cauliflower into florets and discard the tough core.
Place the florets in a food processor and pulse until they resemble rice-like grains. Be
careful not to over-process, as you want the texture to be similar to rice. Set the
cauliflower rice aside.
Heat the coconut oil: In a large skillet or wok, heat the coconut oil over medium-high
heat. Add the minced garlic and sauté for about 1 minute until fragrant.
Sauté the vegetables: Add the diced onion, bell peppers, carrots, and peas (if using) to
the skillet. Cook for about 4-5 minutes until the vegetables are tender-crisp. Stir
occasionally to ensure even cooking.
Add cauliflower rice: Add the cauliflower rice to the skillet and stir well to combine with
the vegetables. Cook for an additional 3-4 minutes until the cauliflower rice is heated

through. The texture should be tender but not mushy.
Season and scramble eggs: Push the cauliflower rice and vegetable mixture to one side
of the skillet, creating an empty space. Pour the beaten eggs into the empty space and
let them cook for a few seconds until they start to set. Gently scramble the eggs with a
spatula until cooked through. Mix the scrambled eggs with the cauliflower rice and
vegetables.
Season with soy sauce: Drizzle the soy sauce or tamari over the cauliflower fried rice.
Stir well to evenly distribute the sauce and season the dish. Season with salt and pepper
to taste.
Serve and garnish: Remove the skillet from heat and transfer the cauliflower fried rice to
serving plates. Garnish with chopped green onions for an extra burst of flavor and
freshness.
