How to cook "Pindang Tulang" the traditional food from Palembang

There are a lot of tradisional food from Palembang. Palembang is rich in the typically foods
not only the snacks but also the heavy meal. The tradisional snacks or cakes from Palembang
are Maksuba, Sri Kayo, Delapan Jam, kue jongkong, kolak duren, otak-otak and so many
others. The Tradisional heavy meal from Palembang are Pempek, Tekwan, Model, Laksan,
Celimpungan, Rujak Mie, Burgo, Lakso, Raget. That’s all about the tradisional snacks and
heavy meal form Palembang but there are also tradisional side dishes form Palembang such
as Pindang Tulang, Brengkes Patin Tempoyak, Pindang Patin, Malbi, Rosep, and so many
others. From all the tradisional food from Palembang, I know that every body had already
know about pempek because Pempek is very famous. So that, I would like just to describ
about another the tradisional side dishes from Palembang. It is Pindang Tulang.
Pindang Tulang is one of my favorite food. The Taste of Pindang Tulang is Spacy, hot, a little
bit acid, and rich of flavor. This is some of the necessary ingredients for cooking Pindang
Tulang.
500 gr beef ribs, local meats, cut into pieces (± 5 cm)
8 shallots, pounded rough
6 merah2 lemongrass chili sauce, crushed
2 pieces of leaves
2 tsp salt
2 liters of water
2 tbsp vegetable oil for stir fry
1 tbsp tamarind Java
2 red tomatoes, sides lengthwise into 4 sections
1 tbsp soy sauce
And these are spices used;
4 cloves garlic
2 cm galangal
2 cm ginger
2 cm turmeric
How to Make Bone pindang:
1. Boil water, add lemon grass, bay leaves and salt, beef ribs, boiled until soft
2. Saute the spices until fragrant enter shallots, and stir well.
3. Add spices fried ribs earlier in the broth, add the other ingredients.
4. Cook over low heat until the sauce is absorbed and all ingredients well.
5. Remove from heat and serve hot, warm.
