A Beginner’s Guide to Baking Bread
Paul "Paolo" Mozzicato
Introduction
Bread is a staple eaten all over the world and comes in many forms. In Brazil, it is
commonly eaten in a cheese bun called Pao de Queijo. The French-speaking
Canadian province of Quebec enjoys it as a plain white loaf, while India prefers
baked flat bread. Different types of bread are crafted with different recipes.
No-knead bread is a simple recipe widely appreciated by cooks because of
its delicate, crispy crust and soft, tart interior. It is relatively easy to bake at
home, and it requires no stand mixer, no unique skills, and no kneading of
dough.
To begin making no-knead bread, the baker should mix the dough in a bowl
into a rough, wet ball before covering it and leaving it overnight to rise in a
warm environment. After the dough has been given time to rise, bake it in a
dutch oven for 30 minutes uncovered and 15 minutes covered. This last step
keeps the heat in a tight space, ensuring the steam creates the beloved
crispy crust.
Another easy bread recipe is 90-minute cheesy garlic dinner rolls. They're
filled with cheese, garlic, and butter, and when properly baked they turn out
fluffy and soft.
Start by preparing the dough, a combination of milk, butter, sugar, yeast,
salt, and egg poured into a large mixing bowl and stirred into a semi-solid
mix. Add flour and keep mixing until no dry flour is apparent in the bowl.
Move the dough from the bowl to a sparingly oiled surface. The grease will
help keep the dough from sticking to your hands. Lightly oil your hands,
then massage the dough for about 5-10 minutes till it is polished and no
longer sticky.
Mix cream cheese and mozzarella in a small bowl, then roll the smooth
dough into a pole shape and use a blade or bench scraper to cut it into 10-
12 equal pieces. Put one and a half tablespoons of the cheese mix into the
center of the split dough. Pinch all edges into the center to plug it so that
the cheese doesn't escape during baking, then roll each piece into a smooth
ball.
Transfer the dough balls filled with the cheese mix to a lined baking pan and
cover the pan with plastic film to prevent the dough from drying out. Let the
rolls rise for an hour, after which they should have doubled in size.
Combine garlic, mozzarella cheese, parmesan, melted butter, and chopped
green onions and mix. Brush whipped eggs over each roll and add a
spoonful of the garlic cheese mixture on top. Garnish the rolls with
sprinkled sesame seeds if desired.
Preheat the oven for 20 minutes at 375 degrees and bake until the tops of
the rolls are golden brown. Cool for 15 minutes before serving.
Novices can also try their hand at making festive Italian Easter bread. Mix
flour, water, active yeast, salt, graduated sugar, unsalted butter, large eggs,
and all-purpose flour into a bowl until it has achieved a smooth, airy
consistency. Knead and braid the dough properly before putting it in the
refrigerator to cool overnight.
Add water, vinegar, and eggs into a pot and boil till it becomes hard-boiled.
Vinegar creates the perfect conditions for dying the eggs. To decorate the
Easter eggs, mix food coloring and vinegar into a bowl, add the hard-boiled
eggs and refrigerate overnight.
Before baking, preheat the oven to 350 degrees. Press the dyed eggs gently
into the braided dough and brush the dough with whipped eggs, being
careful to avoid the decorated eggs. Add sprinkles, if desired. Bake for 30 to
40 minutes, till the bread is golden brown. Remove from the oven and cool
for 20 minutes before serving.

A Beginner’s Guide to Baking Bread

  • 1. A Beginner’s Guide to Baking Bread Paul "Paolo" Mozzicato
