  2. 2. Being in the hospitality industry, in food and beverage service to be specific, you need to learn what drinks are available in your workplace so that you can offer suggestions or other alternative of drinks to the customers who orders something not in your beverage list. Introduction

The general information you need to know for the customers includes:  Which ones are suitable for aperitifs  Which ones are suitable for drinking during and after a meal  Wines and food combinations  What the beverage taste like, look like, smell like and where they come from  What is the beverage alcoholic strength  Where they come from domestic or imported  Information specific to wines – details relating to wine makers, wine styles, wine growing areas, grape varieties, wine characteristics and information relating to wine shows and the wine industry  Size of serves, bottles, cans and glasses  The variety of ways in which different liquors can be served
  4. 4. The term “beverages” refers to all kinds of potable drinks that have thirst-quenching, refreshing, stimulating and nourishing properties. Food service operators deal with wide rnage of beverages to satisfy the requirements of guests before, during, and after meals and at any time of the day.

  7. 7. Non – Alcoholic Beverages The term “non-alcoholic beverages” covers drinks that are either totally free from alcohol or that have less than 0.5% abv. It includes a gamut of drinks from hot to cold and from simple to erotic.

  11. 11. These are beverages that contain ethyl alcohol or ethanol. The percentage of alcohol in a drink varies from 0.5% to 95%, depending on the method by which alcohol is obtained. Drinks with higher alcoholic content are diluted to 40% alcohol by volume (abv) for consumption and they are ideal for (more than 60%) culinary preparations (especially for flambéing) and for medicinal purposes.
  12. 12. Methods of Preparing Alcohol Fermentation Distillation Fermentation is the process in which sugar is converted to alcohol and carbon dioxide by yeast. Distillation is the process of separating elements in a liquid by vaporization and condensation. There are two types of distillation (1) the Pot still Method (2) The Patent still method

  14. 14. What is Proof? Proof is a term found in the label of alcoholic beverage to indicate the alcoholic content of the said beverage.
