Tomatoes are an important agricultural commodity that are cultivated extensively for their edible fruits. While botanically classified as a fruit, tomatoes are considered a vegetable for nutritional purposes. Tomatoes provide many health benefits as they are high in the antioxidant lycopene and vitamins C, K, and folate. Lycopene in particular has been linked to reduced risk of various cancers and heart disease.
