Keto Cauliflower Fried Rice
Ingredients:
● 1 small head of cauliflower
● 2 tablespoons coconut oil or olive oil
● 1/2 cup diced onion
● 1/2 cup diced bell peppers (any color)
● 1/2 cup diced carrots
● 2 cloves garlic, minced
● 2 eggs, beaten
● 2 tablespoons soy sauce or tamari (gluten-free option)
● 1 teaspoon sesame oil
● Salt and pepper to taste
● Optional: Chopped green onions for garnish
Instructions:
1. Cut the cauliflower into florets and pulse them in a food processor until they
resemble rice-like grains. You can also grate the cauliflower using a box grater.
2. Heat the coconut oil or olive oil in a large skillet or wok over medium-high heat.
3. Add the diced onion, bell peppers, and carrots to the skillet. Sauté for about 5
minutes until the vegetables start to soften.
4. Add the minced garlic to the skillet and sauté for an additional 1-2 minutes.
5. Push the vegetables to one side of the skillet and add the beaten eggs to the
other side. Scramble the eggs until they are cooked through.
6. Combine the scrambled eggs with the vegetables, then add the riced cauliflower
to the skillet. Stir well to mix everything together.
7. Pour the soy sauce or tamari and sesame oil over the cauliflower mixture.
Season with salt and pepper to taste. Continue stirring and cooking for another
5-7 minutes until the cauliflower is tender.
8. Remove from heat and garnish with chopped green onions if desired.
Serve your keto cauliflower fried rice as a main dish or as a side with your favorite
