2. DIFFERENT RECIPES OF
MUSHROOM AND PREPARATION OF
MUSHROOM SOUP

4. METHI MUSHROOM
Firstly the mushrooms are marinated in
yogurt…..
and then cooked in the aromatic masala… the
methi leaves gives a beautiful aroma to the dish…
This methi mushroom dish goes very well with
some rotis or naans.
12. MUSHROOM MATAR
Stir and saute for 2 to 3
mins.
Then add 2 cups water and
salt as required. cover the
pan with a lid and cook till
the peas are softened.
14. MUSHROOM PULAO
Clean, wash and soak the rice
for 20 to 30 mins. When the
rice is getting soaked, chop all
the veggies. Rinse and chop
the mushrooms too.
Take all the whole garam
masala and keep it aside.
In a pressure cooker, heat oil.
Add the whole garam masala
including cumin, and fry till
they become fragrant. about
few seconds.
16. MUSHROOM PULAO
Add the onions and fry them till translucent.
Add the ginger-garlic paste and saute till the raw
smell of the paste disappears.
Now add the chopped tomatoes, potatoes and
mushrooms. Saute for 8-10 minutes till the
mushrooms are half cooked. Keep on stirring in
between.
Add the soaked rice and the chopped green chili.
Saute the rice for 1-2 minutes stirring in between on
a low flame.
18. MUSHROOM PULAO
Add the coconut milk and water. Stir and season
with salt.
Pressure cook the rice for 2 to 3 whistles.
When the pressure settles down on its own,
remove the lid and gently fluff the rice.
Garnish with coriander leaves or mint leaves and
serve mushroom pulao with sliced onions and
lime. You could also have Mushroom Pulao
with onion-tomato raita.
23. CHICKEN CORN MUSHROOM SOUP
In a cooking pan add chicken
bones and garlic cloves and
as required water. Boil for
3-4 hours. When chicken
stock is ready discard the
ingredients.
Add sweet corn and chicken
in chicken stock and cook
10-15 minutes.
Add black pepper, salt,
mushroom and Chinese salt.
Mix it well.
24. CHICKEN CORN MUSHROOM SOUP
Reduce the flame and add slowly beaten eggs while
stirring.
When eggs are properly mixed and soup becomes frothy,
add corn flour paste slowly in the soup, when the soup is
thicken, remove it.
Now dish out the soup in some bowl and garnish with
some chicken.
Serve it with hot sauce, white vinegar, soya sauce and
chillies.
