MAINTENANCE TIPS
When equipment is maintained throughout the year, it lasts longer.
Condenser and evaporator coils on refrigeration units will buildup dust and grease, and if the mess isn’t cleaned up on a weekly
basis (for most food service businesses), you’ll likely end up with
broken equipment much sooner than you desired. And it’s not just
the equipment you need to worry about. Of course, that’s where
you’ll see the majority of savings coming back to you, but there are
plenty of other areas throughout your business that can save you
money. Let’s take the chairs and tables throughout the dining room
for example, when’s the last time you made sure the screws and
hardware were secure? What do you think a fall from a customer
would cost you if a chair wasn’t thoroughly checked over at least
once a quarter?
These lists of routine restaurant maintenance tips aren’t necessarily
a go-to-resource for every business, because every business,
like every piece of equipment, has needs specific to the way they
operate. However, what you can count on every time, is the owner/
operator manual that came with each piece of equipment. It is this
information that will speak directly to the model you are caring for.
Can’t find the manual? Most equipment manufacturers have digital
copies on their websites for new and discontinued models. Should
you need help finding the right manual, give our team a call, we will
get you and your equipment taken care of!

DAILY
All kitchen equipment should be wiped down including the inside, outside
and underneath the appliance. This includes all stainless steel surfaces.
Moisture is rusts best friend so it is important to wipe sinks & faucets dry with a soft rag.
Beverage machine faucets need to be unassembled and soaked to prevent sugar build-up.
Wash down floor mats in kitchen and bar areas to prevent grease build-up.

WEEKLY
Dust the condenser coils on your refrigeration systems.
Clean air-intake openings on convection ovens.
Clean shelving panels using a mild detergent and soft cloth.
Have a professional cleaning company do a top to bottom cleaning of your restrooms.

MONTHLY
Change or clean the filter in your air conditioning units.
Clean combustion fans on fryers.
Wipe down the ceiling, floor and walls of your walk-in to avoid mold and bacteria growth.
Clean dishwasher including washing and rinsing arms.
Clean out and wash down prep table units entirely.
Inspect gaskets on every piece of equipment, wipe down and replace as needed.
Check grease filters for build-up.
Check gas hoses for leaks – soapy water works best; where there are bubbles, there
are issues.
Change glue boards in pest control traps.
Re-stock your First Aid kits.

QUARTERLY
Tighten all hardware on dining room furniture.
Tighten all stall hardware in restrooms.
Inspect ventilation and exhaust hoods for loose belts.

SEMI-ANNUALLY
Change water filters on beverage and ice machines, combi ovens, coffee brewers…etc.
Have AC and heating unit checked by a professional.
Calibrate thermostats in appliances, i.e. oven, fryer, refrigerator.
Clean and inspect ventilation system hood, duct and exhaust fan.

ANNUALLY
Replace your ventilation system exhaust fan belt and makeup air belt.
Make it part of the culture of your kitchen to educate your employees! An educated
staff can help spot the signs and address any issues before they turn into bigger,
more costly problems.

BOILING OUT COMMERCIAL FRYERS
Unplug fryer. Wait for oil to cool before draining.
Once empty, scrape walls of fryer with scraper, removing as much build-up possible.
Fill fryer pot with water to just under the “full” mark.
Add Fryer Puck® concentrated fryer cleaner tablet(s) according to size of fryer. 1
Bring water to a boil (220°F) for 15 minutes.
Turn the fryer off and let the water cool down to touch.
If the fryer drains into a grease vat, do not drain the water out.
Bail it out with a bucket and then clean the sides and the bottom with clean towels.
Once empty, rinse tank thoroughly with vinegar/water solution (1 cup vinegar: 1 gal. water).
Wipe down fryer surfaces with dry cloth.
Refill the oil- We suggest using a Smart Spout to help avoid spilling any oil. 2
Reconnect unit to power source.

DIY TIP A good technique to practice in your restaurant is to load the fryer basket away from the vat
and give it a few good shakes to allow any free particles to fall away before your product takes the plunge.

FRYERS

CLEANING THE ICE MACHINE
Open ice machine door to access internal components.
Ensure ice machine is turned off and clear evaporator grid of any remaining ice.
Turn on ice machine clean mode.
Add nickel-safe ice machine cleaner to trough as it fills with water.
Let machine run through clean cycle.
To sanitize ice machine, repeat clean cycle with sanitizer instead of cleaner.
Once cleaning cycle is complete, turn machine from CLEAN to OFF mode.
Remove internal components (water curtain, water trough, & water distribution tube); clean with a mild detergent.
Clean inside of ice machine with cloth, water, and mild detergent while internal components are removed.
Replace internal components. Turn ice machine back on.

ADDING/REPLACING THE WATER FILTER
If you’re not filtering the water in your ice machine, you’re letting all kinds of minerals affect the quality of the ice.
Be sure the filter you use has a scale inhibitor to help eliminate scale build-up.
Replace the water filter of your ice machine every 3-6 months.
Replacing a filter is as easy as removing the old one and attaching the new one.

MACHINES

CLEANING THE CONDENSER COILS
Disconnect your reach-in refrigerator or freezer.
Locate the condenser on your unit (On new units, the coils can be found behind the front, bottom grill plate. If
you’re working with an older model, check the rear panel.)
On newer units, remove the grill plate by simply unscrewing the corner bolts.
Locate the condenser coils, usually black in color, with a fan behind it.
Carefully vacuum the dirt and dust from the coils and fan.
If necessary, utilize a coil brush to rid of stubborn particles. 3
Finally, screw grill plate back onto unit (if applicable), move into place and connect to power supply.

REPLACING DOOR GASKETS
A good indication your door gaskets need replacing is the constant presence of frost on shelves and food products.
Soak gasket in 140°F water to remove twists and kinks before installing.
While gasket soaks, remove the old gasket and clean the door where the gasket attaches.
Begin new gasket installation by snapping in a top corner first.
Using a mallet or a block of wood and hammer, tap the top of the gasket into place.
Continue by installing the sides from top to bottom, and finally the bottom.
Install the gasket in the evening and tape the door shut overnight.
Note: Different gasket styles call for different installation tools. i.e Screw in gaskets require a gasket retainer to
install and push in style gaskets may require vinyl cement.

BAFFLED BY HOOD FILTERS?

A BUYING AND MAINTENANCE GUIDE FOR RESTAURANT HOOD FILTERS
through the dishwasher. Make sure you don’t use any bleach when you clean
hood filters as this will cause rapid corrosion! If your dishwasher uses any kind of
chemical, do not use it to clean hood filters. Instead, clean the grease out of your
hood filters with hot soapy water and dry them immediately after.

The hood filter is a metal square or rectangle that fits into the opening on
your hood ventilation system. Its purpose is to filter out grease from the
smoke rising off your cooking equipment. If this smoke were left unfiltered, it
would build up over time in the ventilation system and become a major fire
risk. For this reason, maintaining and replacing these filters is an important
task. Some things you should know about commercial hood filters:

WHEN TO REPLACE
Conduct regular visual inspections of your restaurant’s hood filters. If corrosion,
dents, or wear has created holes or disfiguration in the baffles, then it’s time to
replace them. It’s important to replace worn hood filters as quickly as possible.
Otherwise, grease will build up in the ducting of your ventilation system.

TYPES OF HOOD FILTERS
Unless your cooking equipment is burning mesquite or some other sort of solid fuel,
your hood ventilation system is using a baffle filter. Baffle filters are most commonly
made out of one of three types of metal:
GALVANIZED – these filters are the least expensive option. They are rarely used
in open kitchens where customers can see them because they have a dull
appearance.

SIZING & REPLACING
Hood filters are typically sized ½ inch smaller in vertical and horizontal dimensions
than the nominal sizes listed for your hood ventilation system. In other words,
if the hood opening is 20” x 20”, the correct sized hood filter for that system is
19½“H x 19½“ W.
To determine the vertical height of the filter, measure parallel to the baffles from
edge to edge. The horizontal width is the distance from edge to edge perpendicular
to the direction of the baffles.

ALUMINUM – these hood filters have an appealing sheen to them, making them
usable in open kitchens, but they are prone to corrosion after repeated cleanings.
STAINLESS STEEL – these filters are by far the most durable. They are also
appealing to look at and can be used in an open kitchen. They are less prone
to corrosion than aluminum as long as they are not cleaned using bleach or
other chemicals.

To replace your hood filter, lift the old filter out of the slot rail in which it rests and
slide it out. Slide the new filter all the way into the slot opening and then drop the
end into the rail. Make sure you insert the hood filter with the baffles in a vertical
position! This means the lines in the filter are running up and down and not side to
side. Installing hood filters the wrong way means the grease will not drain properly
and cause clogging.

CLEANING HOOD FILTERS
Hood filters should be cleaned every day to keep them free of grease and maximize
their filtering capability. If you have a high temp dishwasher, run your hood filters

CONNECTION
Determining what connection style will work best for you is based
on your particular product. If you are mobilizing a production in a
commercial kitchen you will, more than likely, need an expanding stem,
threaded stem or plate mount caster. While plate mount casters can
be mounted on a variety of products where there is adequate space
(equipment) work tables and shelving units usually work best with stem

The weight that a caster can support is known as the load capacity
and is assigned per caster. To determine the load capacity, divide the
overall product weight by the number of casters. For example: If a
shelving unit needs to support 1000 lbs and will use (4) casters, 1000
divided by 4 equals a 250 lb. load capacity per caster.

When adding a set of casters, consider the weight and size of the
product as well as your floor conditions. A heavy piece of equipment
should have large wheels to hold the weight and provide ease of mobility.
Floors that are rough can cause rubber caster wheels to wear quickly.
Floors that are exposed to grease, oil, or heavy detergents can also cause
deterioration. In both cases, a caster with a polyurethane wheel will last
longer than a caster that has a rubber wheel. Polyurethane wheels are
virtually indestructible and shock resistant to sudden impacts. In addition
these wheels are resistant to water, acids, oil and common chemicals.
