each practical to compile the Project. If you do a little bit every week, you will be able
to finish each project in time. For each Practical, you will be marked and then your
Project will be marked as a whole. There is a list of tasks that you should complete in order to
finish your project. Mark your work accordingly (Practicals, chapters, tests etc). Everything in Italics
is for your information only, do not copy it. Do not copy the text out of the textbook. Read the
information and put it in your own words. Always do extra research as you will be marked on it. At
the end of your practical or project, write the source down – website address or book name and
page.


Project One: SAA:
You are the Training Consultant at SAA. You have 20 new recruits that you need to train on
everything possible in the Airline business and SAA as a company. Add a test and memorandum
for the test at the end of your training manual. You will hand this out to the new employees at the
end of your training session.


                                      Science of Tourism:
Chapter One: Wholesale and retail tourism, incorporating air travel

What you will be rated on: Demonstrate knowledge and understanding of airline and custom services and
procedures applicable to assist customers using domestic and international air travel.

Practical One:
   1. Describe special airport or airline services that are available to customers if required, according to the IATA
       format.
   2. Explain the basic procedures followed when a passenger checks in, including but not restricted to weighing of
       baggage, departure, control, seating arrangements, etc.
   4. List the procedures in sequence, in written format, that a prospective traveler has to follow on his/her way to an
       international destination, with (given) special requirements and goods to declare.

What you will be rated on: Demonstrate the ability to adapt performance when faced with unexpected changes in
official air travel procedures.

Practical Two:
   1. Describe how changes in airport procedures would require an adaptation in performance.

Chapter 2: Tourism Legislation

What you will be rated on: Act in awareness of legally established customer relationship.

Practical Three:
   1. Describe the customer protection framework in the E.U. and and U.S.
   2. Explain the basic content of general conditions pertaining to changes and cancellations.

What you will be rated on:Subject Outcome 5: Demonstrate knowledge and understanding about visas and
passports.

Practical Four:
   1. Describe the current South African legislation on visas and passports.
   5.       Explain how to estimate the time it takes to issue various visas and passports and the cost involved.
6.     Determine the costs and validity of South African passports for adults and children.
    7. Explain in a tabular form the difference between tourist visas, business visas, student visas, transit visas and
       re-entry visas.
    8.     Describe the value of a passport and the consequences of losing or damaging it.
    9. Explain specific requirements for passports and visa applications regarding accompanying information and
       documents.

What you will be rated on: Demonstrate the ability to make decisions and give advice, when assisting a client with
visa and passport applications.

Practical Five:
   1. Identify ways of recognising valid documents and steps to be taken on finding counterfeit documents.


                                          Life Orientation:
Topic 1: Personal development

What you will be rated on: Explain factors which influence personal development in terms of their impact on
relationships.
Practical 1:
     1. Identify and explain different types of behaviors that impact on personal development and relationships.
     2. Explain how the above impacts on relationships.
     3. Discuss the link between personal relationships and personal development.

What you will be rated on: Explain and distinguish between morally acceptable and unacceptable behavior.
Practical 2:
   1. Define morally acceptable within the context of cultural relativity.
   2. Define morally unacceptable within the context of cultural relativity.
   3. Differentiate between the above.

What you will be rated on: Explain the value of work and work ethics and give examples.
Practical 3:
   1. Explain work ethics.
   2. Identify and explain with relevant examples the value of work and work ethics in terms of their contribution to
       personal development.

What you will be rated on: Demonstrate an understanding of positive and negative attitudes. Describe the impact of
the above on individuals and relationships
Practical 4:
    1. Demonstrate an understanding of positive attitudes through the provision of relevant examples.
    2. Demonstrate an understanding of negative attitudes through the provision of relevant examples.
    3. Describe, using relevant examples, how each of the above impacts on individual and social relationships

Project Two: BUSINESS
PLAN:
You are starting your own business as a Travel Agency. Do research on different companies and their business plans.
Draw up your own business plan where you incorporate the below practicals. Research the internet for free business
plans. Do not copy it completely.


                                      Science of Tourism:
Chapter 1: Wholesale and retail tourism, incorporating air travel

What you will be rated on: Demonstrate knowledge and understanding about the wholesale travel sector.

Practical Six:
   1. Describe the roles and functions of the inbound and outbound wholesaler and distinguish these from retail
       travel.
   2. Describe the various associations that impact on the wholesale travel industry.
   3. Define the term ‘General Sales Agent’ (GSA) and list their functions.
   4. Identify the types of products that GSAs offer on behalf of foreign tour operators and principals.
   6.       Describe a typical wholesale organisation and identify its functions, with reasons.
   7.       Describe the different roles that staff play in a wholesale travel organization.


Chapter 2: Tourism Legislation

What you will be rated on: Act according to health and safety regulations.
Practical Seven:
   1. Identify safety regulations in the national parks and nature reserves and explain reasons for their existence.
   2. Identify special procedures and regulations pertaining to adventure activities and explain reasons for their
       existence.

What you will be rated on: Demonstrate knowledge and understanding about selecting principals.

Practical Eight:
   1. Identify research resources for information on the wholesale industry.
   2. Describe how the information obtained can be of value.
   3. Collect information on different principals and decide which one offers the best service at the most competitive.

What you will be rated on: Be attentive of contractual obligations.

Practical Nine:
   1. Explain why a visit or tour itinerary represents a legal binding contract.
   2. Explain why a confirmed reservation implies an obligation by the service provider.
   3. Explain why itineraries may not be changed without concrete and justifiable reasons.
   4. Explain the importance of delivering at least the minimum service sold to the customer.

What you will be rated on: Respect South African legal restrictions.

Practical Ten:
   1. Explain legal restrictions and requirements with regard to

EPassenger road transport.

   3. Explain how the above impacts on personal and work situations.

What you will be rated on: Identify and explain factors which contribute to stress in terms of their impact on personal
and work situations.
Practical 6:
   1. Identify and explain factors that contribute to the development of stress.
   2. Explain how this impact on personal and work situations.
   3. Identify and explain coping strategies that can be used for the above.

Topic 3: Research skills
What you will be rated on: Develop a questionnaire in relation to a specific research topic.
Practical 7:
   1. Identify and explain, with relevant examples, how to compile a questionnaire.
   2. Discuss the uses of a questionnaire.
   3. Compile a questionnaire within the context of the identified community project.

What you will be rated on: Compile a concise report based on research findings in response to research questions.
Practical 8:
   1. Define a research report.
   2. Identify the elements of a research report.
   3. Compile a research report based on the findings within the identified community project.

What you will be rated on: Present the result of the research using computer technology.
Practical 9:
   1. Identify the computer topic to be researched and the sources to be used here.
   2. Ensure that the presentation communicates summarized research data and conclusions to the targeted
       audience.
   3. Make the presentation on the topic using the relevant presentation software.

Topic 5: Utilise business computing skills
What you will be rated on: Create and edit graphs and charts.
Practical 10:
   1. Explain, define and demonstrate types of graphs and charts in terms of their purposes.
   2. Explain and demonstrate how the graph or chart is created from a given data source.
   3. Explain and demonstrate how the graph or chart type is changed, copied, moved, resized and deleted.

What you will be rated on: Plan a database to provide a solution to a given problem.
Practical 11::
   1. Explain and demonstrate how to develop a working plan to meet the requirements of a supplied brief.
   2. Identify and develop the plan for the database.
   3. Explain what the plan is comprised of including specifications and features.

Project Three: EVENTS:
A.       You are the events manager at an events company called DO IT productions. You have a new client: Peter
         Stuyvesant. They sponsor sports events and get international bands to play in South Africa but they also have
         company functions. You need to compile a proposal for them on all their possible events.

B.       Your manager also informs you that you have to organise the year-end function for CJC level 4 students.
         Starting with smaller functions during the year (for testing purposes) organise the event for December.


                                       Science of Tourism:

What you will be rated on: Demonstrate an understanding of the national and international events industry.

Practical Twelve:

     1. (B) Explain the complexity, intricacies and dynamic nature of an event with regards to the role players.

Practical Thirteen:
   1. (B) Identify the quality requirements to ensure success.
   3.       (A) Describe two latest big international events that took place in South Africa.

What you will be rated on: Demonstrate a basic understanding of the capacity constraints and requirements of each
context as it relates to a specific event.

Practical Fourteen:
   1. (A) (B) Identify the facilities required for a given specific event and identify various venues accordingly,
       comparing them in a tabular format determining the best choice in terms of costs and facilities and where they
       are situated.

What you will be rated on: Access sources of information in order to provide a service to clients and keep knowledge
up to date.

Practical Fifteen:
   1. (B) Compile a detailed list of local venues stipulating facilities and services on offer.
   2. (B) Identify local service providers and draw up a list of providers with the services available.
What you will be rated on: Use understanding of the events industry to enhance own performance.

Practical Sixteen:
   1. (A) Identify regulations and legislation appropriate to health and safety and the required permits and describe
       their importance.
   2. (B) Explain the local grading system of venues, facilities and service providers.
   3. (A) Explain the international grading system of event managers and coordinators.

Practical Seventeen:
1. (A) Explain legal restrictions and requirements with regard to
 Criminal law (prostitution, drugs.)

    3. Explain how monitoring and review can be used to identify potential problems.
    4. Identify and explain how contingency planning can be used to deal with problems.

Topic 3: Research skills

What you will be rated on: Conduct a needs analysis in relation to personal and community issues.
Practical 13:
   1. Define a needs analysis.
   2. Identify and explain how a needs analysis is conducted.
   3. Provide relevant examples of the above.
   4. Conduct a needs analysis within the context of a community project.

What you will be rated on: Develop a research process using current media and tools.
Practical 14:
   1. Define research process.
   2. Identify the key elements of the research process.
   3. Explain how a research process is developed.
   4. Develop the research process in the context of the identified community project.

Topic 4: Creative problem solving

What you will be rated on: Distinguish between problems and challenges and provide relevant examples.
Practical 15:
   1. Define the problem.
   2. Define the challenge.
   3. Use the above definitions to distinguish between the concepts.
   4. Provide examples to illustrate the above.

What you will be rated on: Explain the different problem solving methods and identify different contexts of usage
Practical 16:
   1. Review the different problem solving methods.
   2. Explain them with the use of relevant examples.

  • 1. Please note that each Project consists of different practicals and that you have to do each practical to compile the Project. If you do a little bit every week, you will be able to finish each project in time. For each Practical, you will be marked and then your Project will be marked as a whole. There is a list of tasks that you should complete in order to finish your project. Mark your work accordingly (Practicals, chapters, tests etc). Everything in Italics is for your information only, do not copy it. Do not copy the text out of the textbook. Read the information and put it in your own words. Always do extra research as you will be marked on it. At the end of your practical or project, write the source down – website address or book name and page. Project One: SAA: You are the Training Consultant at SAA. You have 20 new recruits that you need to train on everything possible in the Airline business and SAA as a company. Add a test and memorandum for the test at the end of your training manual. You will hand this out to the new employees at the end of your training session. Science of Tourism: Chapter One: Wholesale and retail tourism, incorporating air travel What you will be rated on: Demonstrate knowledge and understanding of airline and custom services and procedures applicable to assist customers using domestic and international air travel. Practical One: 1. Describe special airport or airline services that are available to customers if required, according to the IATA format. 2. Explain the basic procedures followed when a passenger checks in, including but not restricted to weighing of baggage, departure, control, seating arrangements, etc. 4. List the procedures in sequence, in written format, that a prospective traveler has to follow on his/her way to an international destination, with (given) special requirements and goods to declare. What you will be rated on: Demonstrate the ability to adapt performance when faced with unexpected changes in official air travel procedures. Practical Two: 1. Describe how changes in airport procedures would require an adaptation in performance. Chapter 2: Tourism Legislation What you will be rated on: Act in awareness of legally established customer relationship. Practical Three: 1. Describe the customer protection framework in the E.U. and and U.S. 2. Explain the basic content of general conditions pertaining to changes and cancellations. What you will be rated on:Subject Outcome 5: Demonstrate knowledge and understanding about visas and passports. Practical Four: 1. Describe the current South African legislation on visas and passports. 5. Explain how to estimate the time it takes to issue various visas and passports and the cost involved.

Explain in a tabular form the difference between tourist visas, business visas, student visas, transit visas and re-entry visas. 8. What you will be rated on: Demonstrate the ability to make decisions and give advice, when assisting a client with visa and passport applications. Practical Five: 1. Identify ways of recognising valid documents and steps to be taken on finding counterfeit documents. Life Orientation: Topic 1: Personal development What you will be rated on: Explain factors which influence personal development in terms of their impact on relationships. Practical 1: 1. Identify and explain different types of behaviors that impact on personal development and relationships. 2. Explain how the above impacts on relationships. 3. Discuss the link between personal relationships and personal development. What you will be rated on: Explain and distinguish between morally acceptable and unacceptable behavior. Practical 2: 1. Define morally acceptable within the context of cultural relativity. 2. Define morally unacceptable within the context of cultural relativity. 3. Differentiate between the above. What you will be rated on: Explain the value of work and work ethics and give examples. Practical 3: 1. Explain work ethics. 2. Identify and explain with relevant examples the value of work and work ethics in terms of their contribution to personal development. What you will be rated on: Demonstrate an understanding of positive and negative attitudes. Describe the impact of the above on individuals and relationships Practical 4: 1. Demonstrate an understanding of positive attitudes through the provision of relevant examples. 2. Demonstrate an understanding of negative attitudes through the provision of relevant examples. 3.   • 3. You are starting your own business as a Travel Agency. Do research on different companies and their business plans. Draw up your own business plan where you incorporate the below practicals. Research the internet for free business plans. Do not copy it completely. Science of Tourism: Chapter 1: Wholesale and retail tourism, incorporating air travel What you will be rated on: Demonstrate knowledge and understanding about the wholesale travel sector. Practical Six: 1. Describe the roles and functions of the inbound and outbound wholesaler and distinguish these from retail travel. 2. Describe the various associations that impact on the wholesale travel industry. 3. Define the term ‘General Sales Agent’ (GSA) and list their functions. 4. Identify the types of products that GSAs offer on behalf of foreign tour operators and principals. 6. Describe a typical wholesale organisation and identify its functions, with reasons. 7. Describe the different roles that staff play in a wholesale travel organization. Chapter 2: Tourism Legislation What you will be rated on: Act according to health and safety regulations. Practical Seven: 1. Identify safety regulations in the national parks and nature reserves and explain reasons for their existence. 2. Identify special procedures and regulations pertaining to adventure activities and explain reasons for their existence. What you will be rated on: Demonstrate knowledge and understanding about selecting principals. Practical Eight: 1. Identify research resources for information on the wholesale industry. 2. Describe how the information obtained can be of value. 3. Collect information on different principals and decide which one offers the best service at the most competitive. What you will be rated on: Be attentive of contractual obligations. Practical Nine: 1. Explain why a visit or tour itinerary represents a legal binding contract. 2. Explain why a confirmed reservation implies an obligation by the service provider. 3. Explain why itineraries may not be changed without concrete and justifiable reasons. 4. Explain the importance of delivering at least the minimum service sold to the customer. What you will be rated on: Respect South African legal restrictions. Practical Ten: 1. Explain legal restrictions and requirements with regard to EPassenger road transport. PIndemnity forms. What you will be rated on: Demonstrate the ability to make decisions and give advice, when assisting a client with visa and passport applications. Practical Eleven: 1. Describe legal implications of signing forms on behalf of customers.
  • 4. Life Orientation: Topic 2: Healthy and positive living What you will be rated on: Explain types of stress in terms of their impact on personal and work situations. Practical 5: 1. Define stress. 2. Identify the different types of stress and their causes. 3. Explain how the above impacts on personal and work situations. What you will be rated on: Identify and explain factors which contribute to stress in terms of their impact on personal and work situations. Practical 6: 1. Identify and explain factors that contribute to the development of stress. 2. Explain how this impact on personal and work situations. 3. Identify and explain coping strategies that can be used for the above. Topic 3: Research skills What you will be rated on: Develop a questionnaire in relation to a specific research topic. Practical 7: 1. Identify and explain, with relevant examples, how to compile a questionnaire. 2. Discuss the uses of a questionnaire. 3. Compile a questionnaire within the context of the identified community project. What you will be rated on: Compile a concise report based on research findings in response to research questions. Practical 8: 1. Define a research report. 2. Identify the elements of a research report. 3. Compile a research report based on the findings within the identified community project. What you will be rated on: Present the result of the research using computer technology. Practical 9: 1. Identify the computer topic to be researched and the sources to be used here. 2. Ensure that the presentation communicates summarized research data and conclusions to the targeted audience. 3. Make the presentation on the topic using the relevant presentation software. Topic 5: Utilise business computing skills What you will be rated on: Create and edit graphs and charts. Practical 10: 1. Explain, define and demonstrate types of graphs and charts in terms of their purposes. 2. Explain and demonstrate how the graph or chart is created from a given data source. 3. Explain and demonstrate how the graph or chart type is changed, copied, moved, resized and deleted. What you will be rated on: Plan a database to provide a solution to a given problem. Practical 11:: 1. Explain and demonstrate how to develop a working plan to meet the requirements of a supplied brief. 2. Identify and develop the plan for the database. 3. Explain what the plan is comprised of including specifications and features. DUE: 23 April 2010.
  • 5. Project Three: EVENTS: A. You are the events manager at an events company called DO IT productions. You have a new client: Peter Stuyvesant. They sponsor sports events and get international bands to play in South Africa but they also have company functions. You need to compile a proposal for them on all their possible events. B. Your manager also informs you that you have to organise the year-end function for CJC level 4 students. Starting with smaller functions during the year (for testing purposes) organise the event for December. (A) (B) Identify the facilities required for a given specific event and identify various venues accordingly, comparing them in a tabular format determining the best choice in terms of costs and facilities and where they are situated. What you will be rated on: Access sources of information in order to provide a service to clients and keep knowledge up to date. Practical Fifteen: 1. (B) Compile a detailed list of local venues stipulating facilities and services on offer. 2. (B) Identify local service providers and draw up a list of providers with the services available. What you will be rated on: Use understanding of the events industry to enhance own performance. Practical Sixteen: 1. (A) Identify regulations and legislation appropriate to health and safety and the required permits and describe their importance. 2. (B) Explain the local grading system of venues, facilities and service providers. 3. (A) Explain the international grading system of event managers and coordinators. Chapter 2: Tourism Legislation What you will be rated on: Respect South African legal restrictions. Practical Seventeen: 1. (A) Explain legal restrictions and requirements with regard to

C estricted areas access. R Life Orientation: Topic 1: Personal development What you will be rated on: Anticipate, monitor and review factors which may influence or prevent achievement of plans and develop contingencies for these where necessary. Practical 12: 1. Identify attitudes, values and skills that impact positively on the achievement of plans. 2. Identify attitudes, values and skills that impact negatively on the achievement of plans. 3. Explain how monitoring and review can be used to identify potential problems. 4. Identify and explain how contingency planning can be used to deal with problems. Topic 3: Research skills What you will be rated on: Conduct a needs analysis in relation to personal and community issues. Practical 13: 1. Define a needs analysis. 2. Identify and explain how a needs analysis is conducted. 3. Provide relevant examples of the above. 4. Conduct a needs analysis within the context of a community project. What you will be rated on: Develop a research process using current media and tools. Practical 14: 1. Define research process. 2. Identify the key elements of the research process. 3. Explain how a research process is developed. 4. Develop the research process in the context of the identified community project. Topic 4: Creative problem solving What you will be rated on: Distinguish between problems and challenges and provide relevant examples. Practical 15: 1. Define the problem. 2. Define the challenge. 3. Use the above definitions to distinguish between the concepts. 4. Provide examples to illustrate the above. What you will be rated on: Explain the different problem solving methods and identify different contexts of usage Practical 16: 1. Review the different problem solving methods. 2.
