7. CAYM US
F olks often forget that there was a time when Napa Valley wasn’t
“Napa Valley.” Prunes and walnuts paid the bills and farmers made
things work. Proper dirt farmers. Get up early, roll up your sleeves,
and take care of business farmers. “To hell with you” farmers. Life
in a Napa vineyard (or field) was a lot closer to the lyrics of a Hank
Williams song than a lifestyle feature on the Food Network. Chuck
Wagner and the Caymus clan don’t need any reminders. They’ve been
doing it in Napa for more than 100 years.
The late Charlie Wagner, Chuck’s dad, was a pretty clear example of
the Caymus work ethic. The man was riddled by seven .22 caliber
bullets at the hands of a disgruntled former employee and recovered.
He was crushed under the weight of a falling eucalyptus tree in the field
and recovered. He beat colon cancer and recovered. All in a day’s work. Caymus Vineyards
Yet the fiercely independent Charlie left the decision to go whole hog into the
wine business in the hands of his (then) 18-year old son over a conversation at the kitchen table. Sell it all and move
abroad, or get in the game with a purpose. Chuck went all in.
The fundamentals that laid the groundwork for Caymus still steer the ship. It is first and foremost a family business,
and each release is treated as part of a greater legacy. When the goal is quality with a long view and the ship
captains aren’t beholden to outside investors, they can sail on the tack that has always landed them safely ashore.
There’s every reason to stick to a winning formula.
The fact that Caymus makes world class wine is the result of dedication, determination and old-fashioned
values. Family comes first and farming is a close second. Throw in their longstanding reputation, winemaking talent
and eye for great vineyards and it’s no wonder they’ve come out on top. Their success speaks for itself.

N apa insiders have been paying attention to what the Kapcsándy (Kop-shon-dee)
family has been doing since the day they purchased State Lane in 2000. For years,
the Yountville property was the backbone of Beringer’s “Private Reserve” Cabernet,
and it was a rocket waiting to be launched as a stand-alone estate. The Kapcsándys
used their decades of experience importing Bordeaux to fine-tune the varietal selections
when they replanted, and staked their claim to a very special patch of dirt. The fruit
is now in the winemaking hands of Denis Malbec (he was literally born at Château
Latour) and it’s no surprise that Robert Parker has called the winery’s efforts “a
fabulous success story, and one of the reasons why the wine world can be so
exciting.” (Along with a couple of 100-point scores we might add). As always, with
wines of this magnitude and scarcity, there is never enough to share.

This lineup is the result of countless hours of tasting, blending, haggling and arm wrestling… in that order. We
have delivered what we know to be substantial “taste-per-dollar” by aggressively chasing select lots from
growers and producers whose track records are beyond reproach. You don’t have to pay major league money to
play with this set. The wines just taste really expensive.
Our core values include life, liberty and the pursuit of great wine. Proof’s in the bottle… if you don’t love it,
we want it back.

O ver the last few years, this winery has stepped up its game in a serious way, and the
press is starting to figure it out. They’ve always had great fruit – the Silverado Trail
isn’t a bad place to grow Cabernet – and now they’ve added the prodigious talents of
consultant Luc Morlet to lend a hand. In accessing the skill set of a guy who has run the
cellar at places like Newton, Peter Michael and Staglin, it’s clear that Signorello is
aiming towards a new level of quality. We’ve been keeping an eye on this estate for
awhile and can tell you with absolute certainty that their wines have never been better.

P erched at the top of Napa’s acclaimed Spring Mountain, Vineyard 7 and 8 is a property that must be
experienced firsthand to get a sense of its grandeur. The recently completed winery and caves were designed
with a singular purpose: to maximize the utmost control over the winery’s opulent expressions of Spring Mountain
fruit. It’s a winemaker’s toy store, and the puppet master is none other than Luc Morlet whose work with Peter
Michael (and his own Morlet project) has become highly regarded in wine circles. Assistant winemaker Wesley
Steffens, whose family happens to own the place, has four years of cellar experience at Harlan Estate under his belt
and kitchen scars from a culinary stint at the French Laundry. These are people who are well-versed in quality
control standards. Their production is tiny, and they’re relatively new to the market, so you may not have heard
of them yet. With wines like these, that will change in the near future…

T he Nickel & Nickel project has captivated us since its inception by its scope and
ambition. Producing more than 25 single-vineyard, single-varietal releases that are
grown, fermented and aged as separate and individual wines is a daunting logistical
challenge. It starts with the right fruit, of course, which explains the wide net they’ve
cast in enlisting the best sources. From plots of Russian River Chardonnay to tiny parcels
of Napa Valley Cabernet, it’s clear the winemaking team does plenty of homework
before putting a vineyard name on a Nickel & Nickel label. As a sister winery to the
renowned Far Niente, they have the resources to do things on their own terms.

R obert Parker has praised this estate for its “consistently brilliant wines,”
and, as the founders of the estate have said, “PlumpJack is about
demystifying the wine buying experience and removing the intimidation

we figured we had a pretty good fit with their overall vibe. The
momentum around this project has been building for several years, and it

15. WAYPOINT
A waypoint is the cross section of two coordinates on a GPS, a precise and
unambiguous place. A fingerprint on the earth, if you will. In the scope of
the wine world, one’s waypoint is everything. As any winemaker will tell you,
it is impossible to make great wine without great fruit, or, to be more precise, the
adage that “it all starts in the vineyard” exists for a reason. Yet not all vineyards are
created equal.
For our single vineyard Waypoint program, we have partnered with sites and
growers whose skill we can trust to deliver the goods in high style. Their names
are on the bottle too, so there’s no hiding from responsibility and quality in the vineyard. It’s truly a “we’re
in this together” approach. Join us in raising a glass to a lineup of very different personalities as determined by their
growing conditions and location.

ARDBEG... ISLAY ATTITUDE
W ithout question, Ardbeg is the most important
emerging Islay distillery. Claiming the peatiest
whisky in the region, there is an unmistakable
hedonism at the heart of its production. In the
glass, these whiskys are as nuanced as they
are powerful with a strong emphasis on sense
of place and unique individual expression.
Perhaps it’s the use of an old school Boby mill,
water piped in from the local loch or the recent
addition of ex-sherry and new French oak casks, but
there’s something about the Ardbeg malts that takes Islay whisky to a highly elevated level.
