Construction of commercial potato chips

Commercial potato chips machine is made from heavy
duty stainless steel fabricated body. Adjustable stainless steel blades are fitted on aluminum die.
Chips slicing die is rotated by suitable electric motor. Base of chips machine is made from mild steel
angle and covered with stainless steel sheet. Stainless steel easily detachable hopper is supplied

Operations of commercial potato chips making machines
The potatoes selected for chips should be large oval shape free from disease & fully matured. They
should have the minimum numbers of eyes to cut down the losses by trimming. They are washed
thoroughly in water & peeled manually with stainless steel knife or by means of techno abrasive
potato peeling machine. The peelings are washed away with sprays of water. They are sliced 0.4 to
0.5 mm thick in a slicing machine. The potato slices are again placed in cold water whenever there is

2. considerable delay subsequent operation of blanching. Then slice are kept in water containing
0.05% Potassium metabisulfite to avid oxidation. The slice are blanched for 3 to 5 minutes in boiling
water and spread on trays at the rate of 4.88 kg to 7.30 kg per square meter tray surface, the
blanched chips are then subject to hydro extracting machine (centrifugal) to remove excess of water
and fried in edible oil at 180-240c, for 3-4 minutes. The fried potato chips are then kept on sieve to
remove excess of oil. The fried chips are then subject to hydro extracting machine (centrifugal) to
remove excess of oil. These chips and other ingredients like salts; spicy mixture is sprayed as per
required taste. Now these potato chips are then packed in the bags and sealed.
