for gardening, fishing, hiking, boating, bicycling, and other great

THE ROOT OF THE
PROBLEM
o you suffer from seasonal allergies? Have
you always had allergies, or does this seem
like a new phenomenon? How many
people – younger and older – do you know who
suffer from allergies? Let’s talk about what allergies
are, why they are so prevalent these days, and what
you can do to prevent the misery they bring.
Before we begin to answer these questions, we
need to know our enemy if we are to form an
effective battle plan to combat allergies. We
speak of allergies by the tissues they attack. For
instance, most allergies are airborne and attack
the mucous membranes of the upper respiratory
system. The most common medical diagnostic
term is Allergic Rhinitis, also called “hay fever.”
This term describes the allergies that affect the
eyes, ears, nose, and throat. Allergic rhinitis
includes symptoms such as a runny or itchy nose,
watery eyes, and sneezing. These symptoms are
caused by irritation to the mucous membranes in
the head. At first, these symptoms may just seem
like an annoyance. However, over time this irri-
tation may turn to infection. People that suffer
from allergies increase their tendency to have ear
infections, sinus infections, frequent sore throats,
lung infections, and bronchitis. Additionally,
people with allergies suffer from increased
headaches, fatigue and irritability. Allergies
occur when a plant or animal protein contacts
your mucous membrane and your immune
system reacts to reject this irritant. These irri-
tants may be mold, pollen, dust, animal dander,
or other irritants. A normal, healthy immune
system may react very little when these irritants
are inhaled. There are small hair-like structures
called cilia which line the membrane of your

respiratory system and move the irritant away
from the contact area. Imagine tall stalks of
wheat blowing in the wind. This gives you a
mental picture of the gentle way your body
should deal with irritants. Allergy problems
begin when this ciliary action fails; now the
irritant requires a more persuasive approach to
leave the area.
A poor immune system
overreacts to irritants
Why do some people get symptoms of allergies
and some do not? We all breathe the same
irritants, right? That’s true! The reason some
people have symptoms and some seem to have no
problems – even during the worst months for
pollen – has little to do with what is in the air.
Allergic reactions are caused by your immune
system, not by the proteins that trigger allergies.
We all breathe the same proteins. If your
immune system is working correctly, the cilia in
your respiratory system will remove the proteins
(from pets, pollen, etc.), and you will never have
a symptom. If your immune system is imbal-
anced, the cilia will fail to remove the irritants
and your body will fall back on a secondary reac-
tion that is really quite excessive – histamines.
Allergens are specific proteins. Ragweed is one
kind of protein, cat dander is another, and
Aspergillus mold is another type of protein. Your
cilia are designed to remove these proteins. If
they are not removed, your immune system will
be alerted. When your immune system senses
one of these proteins, it creates a protein anti-
body to identify this invader as a health threat.
This is the case with these “normal” proteins
even though they are not unhealthy for you under
normal circumstances. The antibody protein is
rushed to the site of irritation by your blood
stream and lymph system. It immediately “pops”
a balloon-like cell in the region of this irritation.
That cell is called a mast cell. Mast cells contain
histamines that cause your body to flood the
area with liquid. This excessive liquid, caused by
histamine, attempts to wash the irritant from the
area in a way that the cilia could not. This is why
you get watery eyes and a runny nose: your body
is attempting to wash away an irritant. The
problem is, your immune system has completely
over-reacted to the situation when it triggers mast
cells to relieve an allergy.
Now, your mast cells have a clear warning label
that says, “Emergency use only!” Yet your
immune system (if it is not healthy and bal-
anced) reacts all out of proportion to the irrita-
tion caused by the allergen when it activates the
mast cell. When histamines are released, they
cause the symptoms that you feel locally (eyes,
ears, nose, and throat), but they also cause symp-
toms in other areas as well. For instance, when a
mast cell activates in your nose, the reaction
causes histamine release in your lungs, your skin,
your joints, and your intestines. This may trigger
further immune reactions in your liver, kidneys,
heart, and circulatory system – and even your
brain! Histamines are very powerful.
Many medications exist to block histamines and
the irritation, discomfort, and damage they
cause. But think about this: Is it the histamines
that need to be corrected or your immune
system? Put another way, the histamines are
like poisonous berries on a bush or tree. You
will never get rid of the tree by simply picking
the berries. You must attack the tree at the
roots if you are to rid yourself of the fruit. In the
same way, you must address allergies at the level
of the immune system if you are to be successful
in resolving the problem of seasonal allergies.

SAN DIEGO – According to a report published recently in the American Journal of Public Health, correcting Vitamin
D deficiencies can lower the risk of some types of cancer. A process called angiogenesis, in which new blood vessels
grow and allow cancer to thrive, is curtailed by proper amounts of Vitamin D. The cancers studied included colon
cancer, breast cancer, prostate cancer, and ovarian cancer. Researchers concluded with a recommendation of

FOLATE LEVEL PREDICTS RISK OF FRACTURE IN ELDERLY
BOLOGNA, Italy – A study published in the Journal of Gerontology reports that levels of folate (Folic Acid), rather
than levels of homocysteine (HCY), are what predicts the risk of fractures arising from osteoporosis in elderly
people. The researchers concluded that “Low serum folate is responsible for the association between homocysteine
and risk of osteoporotic fracture in elderly persons.” In other words, when it comes to osteoporosis and fractures in
the elderly, the link between HCY and osteoporosis is determined by the level of Folic Acid in the blood. Higher
levels of Folic Acid can lower dangerous levels of HCY, thus lowering the risk of fractures. Source: The Journals of

FATTY ACID DHA MAY PROTECT AGAINST ALZHEIMER’S
NEW ORLEANS – Docosahexaenoic acid, or DHA, may offer protection against Alzheimer’s Disease and
cognitive decline, according to a number of recent reports collected and reported on by researchers in the Journal
of Clinical Investigation. DHA is a fatty acid that is converted from other fatty acids that must be ingested because
the body cannot manufacture them. Linoleic acid and alpha-linolenic acid can both be turned into DHA, but
both must be consumed in diet or supplementation. The mechanics of how DHA protects against cognitive
decline is still being investigated, but it may be associated with DHA’s ability to maintain the health of cell
membranes; or perhaps because fatty acids are needed for fat-soluble Vitamins A, D, E, and K to be absorbed.

WEIGHT GAIN COMES WITH AGE
PHILADELPHIA – Results of a 30-year study show that 9 out of 10 men and 7 out of 10 women in the U.S. are
likely to be or become overweight as they age. The study, published recently in the Annals of Internal Medicine
followed more than 4,000 white adults and used Body Mass Index (weight relative to height) to determine which
were overweight. Many men and women, aged 30 to 59 when the study began, went from a healthy BMI to
unhealthy BMI in just four years. Being overweight or obese increases risks of diabetes, heart disease, stroke, and

HCY LINKED TO STIFF ARTERIES
PILSEN, Czech Republic – Researchers at Charles University (Department of Internal Medicine, Centre of
Preventive Cardiology) have reported a strong, independent relationship between total homocysteine (tHCY)
and stiffness of central arteries. It was noted that the association remained high even after refiguring the data to
allow for other cardiovascular risk factors, including age, gender, smoking, overweight, hypertension, and impaired
glucose metabolism. In other words, HCY was at least partly responsible for aortic stiffness even in people with
no pre-existing heart risks. tHCY was identified by researchers as “a strong and independent predictor of cardio-

OMEGA-3 WITH STATINS CAN REDUCE TRIGLYCERIDES
PHILADELPHIA – A recent study concluded that the use of Omega-3 fatty acids, niacin, and fibrates can
reduce triglycerides, increase high-density lipoprotein (HDL, or “good”) cholesterol, and reduce non-HDL choles-
terol when combined with statin therapy. Benefits were greater in combined use than in statin therapy alone.
All drug therapy must be cleared by a physican, especially before changing medications or supplements.

VITAMIN B
In January 1998, a Food and Drug Administration
(FDA) mandate went into effect. This mandate
required that all cereal-grain products in the
United States become fortified with folate, a type
of B vitamin (known as folic acid when in
vitamin supplement form). This fortification was
intended to help reduce the number of neural
tube birth defects in the U.S., as most women of
childbearing age were not getting enough folate
to prevent these defects, which commonly lead to
diseases including spina bifida.
Since that FDA mandate, folate and the other B
vitamins have been researched extensively. All
the current research points to B vitamins as being
critical in the prevention of many diseases
beyond birth defects, as the B’s are able to reduce
the level of dangerous homocysteine (HCY) in
your body. High levels of HCY can lead to such
illnesses as Alzheimer’s Disease, osteoporosis,
certain cancers, and more. So how has folate
fortification been working?
Sadly, fortification has not been as successful as
doctors hoped. The news is a mixed bag:
• Folate fortification has indeed raised the level
of folate in the blood for most Americans,
regardless of gender or age; folate measured
in the study increased two-fold in the study
population – a remarkable amount.
• However, the amount of folate measured in
the blood has not been enough to mitigate
health risks, including both neural tube
defects and homocysteine-related “aging”
diseases.
Despite fortification, Americans are still putting
their future mental and cognitive health at risk by
not getting enough folic acid. One
recent study published in the American
Journal of Clinical Nutrition found:
1) a direct link between folate level,
and scores on mental health and
delayed recall tests; and
2) the risks of cognitive impairment
and dementia went down as folate
levels increased.
It’s a great thing that the FDA is still
enforcing the fortification of grains
with folate. But to truly reap the bene-
fits that B vitamins offer, a supplement
of some form is needed. As a physician, I recom-

The first studies regarding the effect of humor on
the body were conducted in the United States

Saturday Review editor Norman Cousins fought a

Three Stooges. Although his doctors gave him
little chance of recovery, in a little over a week, he
returned to work.
Cousins’ experience spawned a wealth of humor
research. Some of the most intriguing findings
involve studies conducted at Loma Linda
University School of Medicine in California.
Researchers found that laughter stimulates the
immune system. Students who watched funny
videos had a significant increase in T cells and
natural killer cells – both fight off diseases.
They also had lower levels of the stress hormone
cortisol in their blood.
A year-long study conducted at the Oakhurst
Health Research Institute found that heart

In an increasingly chaotic world, cultivating
inner peace has become more important than ever.

Picking up a newspaper, or turning on the radio or television, reminds us that we live in troubled
times. Tragedy, war, and catastrophe abound. Thousands grieve the loss of life, and fear the
uncertainty of coming days.
In today’s world, it is easy to feel out of control – to feel that there
is little we can do to take control of our lives and experience
inner peace. Ultimately, however, we are the only ones that can
determine what we will do and how we will feel.
As Dr. Viktor Frankl, noted psychiatrist and World War II
concentration camp survivor, reminds us: “The last of the
human freedoms. . . (is) to choose one’s attitude in any given set
of circumstances, to choose one’s own way.” But knowing we
control our attitude – that we determine our level of inner peace –
isn’t enough. Realizing we are in control and taking control are
two very different things.
Peace – a feeling of serenity, the calm reassurance of hope and love – requires dedicated, energetic
action to achieve. Where can we turn for peace? To ourselves, to others, and to God. How do we
achieve inner peace? Through dedicated daily action. Study these 10 techniques for bringing peace
into your daily life, and see if your mind, body, and heart can feel the difference.
1. be mindful
Perspective is all-important when it comes to establishing
or strengthening inner peace. Be mindful of what is
really important in your life – family, friends, God –
and then set your priorities. When you let your prior-
ities rule your life, rather than letting your life deter-
mine your priorities, you build inner peace.
3. be wise
Cultivate the ability to act instead of react. Practice
wisdom by thinking before speaking or acting.
Determine now how you will choose to respond to the
challenges in your life. Temper your responses to others
with the wisdom of one who looks beyond what is said
or done to find the reason for the words or actions.
Seek peace in the knowledge that you have taken the
right action; that you’ve done the right thing.
4. be content
“Contentment” is a quality you don’t hear
much about in today’s world. But finding joy
and satisfaction in what you have and what
you are, rather than constantly dwelling on
what you don’t have, is an unending source
of inner peace. True contentment brings the
peaceful recognition that you already have
what is most important.
2. be prepared
Be prepared for challenges to your inner peace by consistently building
your Physical, Emotional, and Spiritual health. A strong body, mind, and
spirit can withstand the anxiety, fear, and tragedy of the present, and
even look forward, with hope, to the future.

5. be loving
When inner peace seems lost – when anxiety, fear,
and discouragement invade – you can be left feeling
like you have little to give and little comfort to offer
others. But one of the grand purposes of your life is
to comfort and strengthen others. In this reaching
out – this selfless act of service – you can and will
discover lasting peace.
9. be prayerful
When confronted with heart-breaking tragedy, surrounded by fear and
anxiety, prayerful pleas for self control and the faith to live in hope can
bring assurance, peace, and strength. There is com-
fort and power in the words of holy scripture, “The
Lord will give strength unto his people; the Lord will bless
his people with peace.” Psalm 29:11. True peace is a
God-given gift – one He wants to give you. We are
sons and daughters of God. He loves us, He wants
us to be happy, and He will speak peace to our souls.
6. be still
Webster’s dictionary defines peace as an
undisturbed state of mind; as serenity.
All too often, you may let the noise and
confusion of the outside world rob you
of precious quiet hours. An hour or two
of silent reflection, of study and prayer,
can bring peace to a troubled spirit and
perspective to a troubled mind. When
inner peace is threatened, guard your
quiet time. Cherish it – you need it.
10. be peaceful
Easy enough to say, right? But being peaceful – following
the previous nine steps and now this one – really is as
simple and difficult as making a choice. Your mind is
a powerful tool. Use it to determine your reaction to
circumstances outside your control by telling yourself
to be at peace. Doing this with a few minutes of deep
breathing virtually guarantees it will be true.
7. be grateful
True gratitude is more than a recognition of
your blessings, it is a celebration of those
blessings – the spontaneous outpouring of a
heart too full to keep its joy inside. Seek
opportunities to express gratitude to others
and to God. This one habit alone can
build huge stores of inner peace as you
come to see how loved and blessed you are.
8. be accepting
You may sometimes wonder what it would
be like to be in total control of your world.
In reality, many things that happen to you
are out of your control. Recognizing this
fact is the first step in acceptance. Learning
to differentiate between what you can and
cannot change is the second. By accepting
what you cannot change, and enthusiasti-
cally working to change what you can, you
preserve inner peace.

Your hands are clammy and your stomach is turning flip-flops. Your heart is
racing, your mouth is dry. Your limbs are shaking and you’re lightheaded. What
is it? There’s a chance you’re experiencing acute anxiety. Medically speaking,
anxiety is a state of fear or apprehension about a future event – real or perceived
– that can impair physical and psychological function. In its basic form,
anxiety can lead to poor sleep and frowning; or it can grow out of control,
leading to hospitalization and even cardiovascular disease.

faster, better, or cheaper; should have begun a project yesterday; and so on.
Perfectionists are often never happy with themselves or their work, and generate a
lot of useless anxiety for themselves.
2. True. Stimulants like caffeine and sugar can overload your system. Caffeine stimulates
regions of your body’s systems that are linked to stress-related responses, leaving
you in a state of chronic tension that can lead to anxiety and panic. Salt raises
your blood pressure and lowers your potassium level, a key component in your
nervous system.
3. True. If you are generally kind to yourself, your anxiety level is probably low. If you are
hard on yourself – using negative words and phrases in your self-talk – you almost
surely have a heightened level of anxiety. You do listen to what you tell yourself, so
watch your language!
4. False. Absolutely not! Long, slow, deep breathing patterns will reduce stress and anxiety,
but short and shallow breaths will only create more stress on your body.
5. False. A study by the University of Missouri-Columbia showed that intense, high-
energy exercise lowers stress and anxiety, and therefore lowers the risk of heart
disease as well.
6. True. A study from Case Western Reserve University recently showed that anxiety is on
the rise. Is this due to terror attacks and the threat of the same? Of course, such
events do raise anxiety levels; however, anxiety has been on the rise since the
1950s. The study covered the years 1950 to 1993, ending almost a decade before
the terrorist attacks in 2001.

What Can I Do Now To
Relieve Anxiety?
The good news is that like most ailments,
excessive anxiety can be prevented through
your lifestyle choices. Try these suggestions to
lower or prevent dangerous levels of anxiety:
Get your vitamins. Vitamin B-1 (thi-
amine) and the other B vitamins are often
called the “anti-stress vitamins.” You need
to have regulated levels of B vitamins
in your blood. Try eating foods high in
B vitamins, such as fruits, veggies, and
whole grain breads. Supplements such as

control; then remind yourself frequently
that you are a special person with unique
abilities, and that you are loved!
Learn to relax. Relaxation helps negate
the cumulative stress that gathers in your
body every day, week, and so on. Taking sev-
eral slow, deep breaths several times a day will
help clear your mind and relax your body, and
reduce the likelihood of anxiety. It also keeps
your body healthy by feeding oxygen to all
your internal systems, thereby reducing the
stress on your body. Reduce stress and you
reduce anxiety.
Exercise. You should already be getting a
minimum of 30 minutes of moderate
exercise every day, such as walking. With your
physician’s help, design a higher-intensity
workout to combat stress and anxiety.
Exercise pumps you full of endorphins that
elevate your mood and give you a sense of
well-being; and of course, having an active
lifestyle also keeps your body in tune, which
again will reduce your level of stress.

Her name is Susan. She is about 50 years old,
employed full-time and has two wonderful,
grown children. Susan appears to be a happy
woman, although is known to be depressed. In
her average day, Susan eats fast food – burgers
and fries mostly – at least once, smokes between
half a pack and a pack of cigarettes (depending
on her “stress level”), and watches four to five
hours of television each night in her favorite
easy chair while snacking on cookies and
coffee. She is currently 50 pounds overweight,
has high blood pressure, and gets no exercise
other than walking from her car to her front
door. Despite warnings from her doctor, Susan is
sure all that “health stuff” is for the birds.
Susan is just an example, but there are millions
of men and women across North America just
like her. Add to her lifestyle any other medical
conditions – heart attack, stroke, diabetes, etc. –
and the result is a shortened, difficult life. And
like Susan, most of these people have family. . .
family that are concerned about Susan’s health
and for how much longer she’ll be around.
Those of you who have already made a choice to
live a healthy, well-balanced life may know
someone who fits Susan’s description. You may
have even spoken to her about her lifestyle
choices and urged her to lead a more healthy
lifestyle, but without effect. What do you do now?
The short answer is simple: Keep trying! If you
love someone enough to help them make
changes to their health, then persistence is key.
Here are a few ideas to help you along the way;
but remember, the choice is ultimately up to
them. As difficult as it may be, no one can make
another person choose health. At the same time,

Intervention
An intervention is normally used to confront
drug or alcohol addicts, but its function is the
same when confronting someone about their
health choices: to lovingly but firmly confront
a loved one about their detrimental behavior.
Leading a sedentary lifestyle is in many ways
equally as addicting as having a chemical
dependency. Exercising and making dietary
changes isn’t easy at the outset, and can
be intimidating. An intervention involves
gathering like-minded family and friends,
people closest to the person whose choices are
harming their health, and having everyone
express their concerns in turn. This approach
can have more impact because of strength in
numbers. It will get the attention of the loved
one where one person may be more easily
dismissed. In using this suggestion, be sure
everyone understands that the confrontation is
supposed to be loving in nature, not aggressive –
but to be firm nevertheless.

Have you ever thought about why some people look older
than others? Our estimate of someone’s age really has
much to do with the health and appearance of their skin.
But, in spite of the saying, beauty is not only skin deep.
Healthy skin is a good sign that your internal health is
good. Wrinkled, spotted, and fragile skin is a sign that
you are aging too quickly. Yes, healthy skin is a reflection
of how healthy you are on the inside! Would you like to
know more about how to keep your skin – as well as your
entire body – young and healthy? Let’s start with a
discussion of why skin ages in the first place.
The substances collagen and elastin give skin its firmness
and elasticity. With age, though, the collagen and elastin
content of the skin gradually decreases. As a result, the
skin becomes looser, weaker, less elastic, and drier. In
addition, the fat pads under the skin begin to disappear.
Wrinkles form, and the skin begins to sag. As bad as this
is, remember that collagen is the foundation for all of your
organs – even your bones! So, when collagen loss is making
your skin look bad, it is also aging your entire body.
This gradual loss of structure has several causes:
• Disease, trauma, and scars that cause poor circulation,
inflammation, and infection;
• Genetic programming (a built-in “clock” that triggers
aging);
• Cumulative radiation and sun damage (photoaging);
• Direct chemical effects from toxins such as cigarette
smoking, air pollution, water pollution and/or abrasive
chemicals.
A poor diet can cause collagen loss when you don’t have
enough nutrients to repair and rejuvenate every day. Sun
damage additionally causes fine wrinkles that disappear
on stretching the skin; surface roughness; mottled
pigmentation (liver spots); and skin cancer. Finally, stress
triggers collagen loss and causes a person to age too quickly.
Trauma, toxins, deficiency, and stress (as well as the ultra-
violet light from the sun) creates free radicals. These are
naturally occurring substances that can overwhelm and
harm many tissues of the body, including your skin. In
people who already have signs of aging skin and wish to
reverse it, a number of treatments are available. These
usually involve quenching the fire from free radicals with
antioxidants. Antioxidants are substances that neutralize
free radicals. On this basis, various antioxidants have
been investigated for their potential usefulness in treating
or preventing premature aging.
Antioxidant vitamins, such as Vitamin A, Vitamin C,
and Vitamin E have been shown effective for reversing
fine wrinkles, splotchy pigmentation, rough skin, and sun
damage. Also, hormone balance helps restore normal
skin tone in menopausal women. More aggressive treat-
ments for aging skin include injections of botulin toxin,
dermabrasion, chemical peels, soft tissue augmentation,
laser resurfacing, and GORE-TEX®
threads. (For detailed
information on the relative merits and demerits of these
methods, consult a dermatologist or plastic surgeon). Of
course, these treatments only help the outside, not the
inside of your body, so they are of limited benefit.

ing article that suggests a
link between food and skin
wrinkles. In an abstract,
researchers noted, “In par-
ticular, a high intake of
vegetables, legumes and
olive oil appeared to be
protective against [sun-
based skin damage] . . . a
high intake of meat, dairy,
and butter appeared to be
adverse” to the skin.

specify what amounts of

treatment of aging skin. These substances,
closely related to bioflavonoids, have strong
antioxidant properties. They also appear to pro-
tect and strengthen collagen and elastin. These
effects provide theoretical reasons to believe
that OPCs might be helpful for the treatment of
aging skin.
Antioxidant substances have also been studied
as aids to preventing sun damage. Studies on
laboratory animals found that Vitamin C and
Vitamin E helped prevent burning on exposure
to ultraviolet light. One small study found that
2 grams of Vitamin C and 1,000 IU of Vitamin
E taken orally for eight days resulted in a
decrease of “sunburn” induced by ultraviolet
light. In addition, a 50-day, placebo-controlled
study of 40 people found that higher doses of
these vitamins provided a sun protection factor
of about 2. (Compare this to the sun protection
factor of 15 or higher in many sunscreens.) It
appears that these vitamins must be taken
together for best effect. How do they work?
Apparently, antioxidant vitamins quench free
radical inflammation and help build a strong
network of collagen fibers.
Green tea contains antioxidant substances
called polyphenols (including the widely
acclaimed epicatechin gallate). Preliminary
studies suggest that green tea constituents might
help protect the skin from sun damage and
sunburn. Additionally, green tea concentrates
protect and repair DNA damage from toxic
levels of radiation and other toxins. Our DNA
determines how healthy we are – not just our
skin. Healthy DNA means that our whole body
is healthy. Other substances with antioxidant
actions that have shown some promise for
aging skin include milk thistle, selenium, soy
isoflavones, and zinc.
The substance glucosamine is widely used for
osteoarthritis in part because it helps collagen
regenerate. For this reason, it has been advocated
as a treatment for aging skin. In one trial, 72
women with symptoms of aging skin were divided
into two unequal groups: a small group that
received no treatment, and a much larger one
that received a mixture of glucosamine, amino
acids, and minerals. The results indicated greater
improvement in the treated group as compared to
the untreated group.
Because these antioxidants work in an entirely
different manner from standard sunscreen, it
appears reasonable to believe that they might
offer a synergistic effect if taken with sunscreen.

North America is a culture made up of many
other cultures, each with its own customs,
clothing, and traditions. And fortunately
for everyone, they each have their own
healthy, unique cuisine as well! Most of the
recipes featured here are based on traditional
European, Asian, African or other conti-
nental delights imported to North America
and changed gradually to accommodate
native North American foods. So what we
now call North American cuisine is actually
a blend of several different traditions from
all over the world.
In this second of a six-part series, VitaJournal

Southern Food
There are many wonderful qualities about Southern
cooking that should appeal to wellness-seeking
North Americans, one of which is the common
absence of meat. Many traditional and
modern Southern dishes are flavored with meat,
but do not use meat as an ingredient. Southern barbeque has
become a delectable export, with several barbeque contests held
throughout the area all year long. One good thing about barbequing
meats – apart from the mouth-watering taste – is that it’s healthier
than frying. And there are other alternatives to keep your BBQ
healthier, such as using onion and garlic powders
rather than onion and garlic salts; using other spices in place of
salt, like oregano, basil, bay leaf, curry, or chili; trimming all
fat from beef before cooking; choosing BBQ chicken or fish
instead of red meat; and using wine, fruit juice, or fat-free
products for basting.
Many traditional Southern recipes call for frying, a technique used
by African descendents for cooking. This method of food prepa-
ration was initially avoided by European descendents, but in just
a few short generations, frying had become popular across
cultural lines. Frying has since lost favor in the modern
nutritional community, with most nutritionists advocating
broiling, poaching, roasting, or barbequing.
Traditional Southern foods include grits (maize porridge),
biscuits and gravy, catfish, fritters (baked pastry similar to dough-
nuts with filling), chicken-fried steak and fried chicken, cornbread,
and okra.

Recipes
Much of Southern-style cooking can be made healthier
than their original recipes by making careful selections
and making small substitutions. For example, if you are
going to eat red meat, choose lean or extra-lean cuts. A
better choice is cold-water fish or white meat, such as
chicken or turkey breast. If you choose poultry, go with
a skinless cut or remove the skin before cooking. If you
use a canned fish, opt for fish packed in water rather
than in oil.
Building a base for Southern cooking is easy to do, and
you may in fact already have the makings for a Southern
meal in your pantry or freezer. Rice, corn, beans, carrots,
chicken, and fish are all popular in Southern cuisine.
Beans and Rice
Many people outside of Louisiana believe
red beans and rice are thoroughly Cajun.
Traditional Cajun chefs might disagree.
We won’t pick sides here – just enjoy a
vegetarian take on this delicious recipe.
1 sweet onion, chopped
2 bell peppers, chopped (red and/or green)
4 cups vegetable stock
14 oz. chopped tomatoes (or 14.5 oz. can)
1/2 tsp. cumin
1 bay leaf
1/4 cup fresh parsley, chopped
2 cloves garlic, minced
15 oz. red beans (drained & washed if
canned)
1 sprig thyme
Kosher salt or substitute
1 tsp. Creole seasoning
hot pepper sauce (to taste)
ground black pepper (to taste)
brown rice, steamed
Directions
In Dutch oven, combine onion, garlic,
bell pepper, and stock. Braise vegetables
until soft. Add beans, tomatoes, seasoning,
cumin, ground pepper, hot sauce, thyme
and bay leaf. Simmer for 15-20 minutes.
Add more stock if beans become dry.
After beans have simmered, season to
taste with salt and add chopped parsley.
Serve with fresh steamed brown rice and
hot sauce. Serves 2-3.
Stuffed Bell Pepper
There are as many variations on the
stuffed bell pepper as there are people
living in the south. Here’s just one among
many.
1 to 1 1/2 lb. ground turkey
2 oz. pimentos (jar)
1/8 cup Parmesan cheese
1 to 2 stalks celery, chopped
1/4 tsp. salt or substitute
1/8 tsp. cayenne
1/2 tsp. garlic powder
1 bunch green onions
1/3 cup mushroom sauce
1/2 bell pepper, chopped
1/8 tsp. black pepper
1/2 cup uncooked rice (for cooking later)
1 tbsp oil
4 large bell peppers (to be stuffed)
Directions
Cook rice according to directions. Brown
turkey in non-stick pan, Set aside. Sauté
onion, celery, and bell pepper. Combine
mixture with turkey, then add remaining
ingredients except Parmesan cheese. Mix
well and cook for five minutes. Add rice,
mix well. Cut the tops off the four bell
peppers to form “cups.” Parboil peppers
for 10 minutes. Remove from water and
stuff peppers with turkey mix. Top with
Parmesan cheese. Preheat oven to 350
degrees. Put stuffed peppers into casserole
dish and add 1/4 inch water to dish. Cook
15 minutes, then serve. Serves 4.
Salt Substitutes
Salt and sodium are frequently near the top
of doctor’s complaints about their patients’
diets. But salt, whether as table salt in a
shaker or as seasoning during cooking, isn’t
your only seasoning option. To reduce your
salt intake, try substituting any recipes
calling for it with one of these spices:
• Ground black pepper
• Ground red pepper
• Garlic or onion powder
• Basil
• Bay leaf
• Chili powder
• Cumin
• Curry powder
• Dry mustard
• Oregano
• Paprika
• Parsley
• Thyme

They’re always telling you what to do. Do this, don’t do that; eat this, don’t eat
that. But have you ever wondered what your doctor does when he or she isn’t
treating patients? Is he getting the same daily exercise he’s telling you to get? Is
she eating all the fresh fruits and vegetables she’s telling you to? Or is there some
other “fountain of youth” that doctors keep all to themselves?
move from walking into something that gets my heart
rate up a bit more so I can stay fit. Vigorous exercise
is not the easiest thing for me. Sometime in the next
six months I hope to begin something a bit more
active. See how vague I sound now? Ask me again in
six months what I ended up choosing! I’ve written it
down in public, so now I have to do it. Maybe I’ll take
up racquetball or salsa dancing. When I walk,
sometimes I break into a run for a while. Maybe that
will take off. I’m working with a TriVita Health and

action when I’m ready.
Dr. Janet Maccaro: I am medically satisfied with
my current weight. I fall within the ranges that are
considered normal; however, like most women . . . I
am always thinking about losing an extra 10 pounds!
VJ: It sounds like you’re all happy with your weight
but have goals to continue toning your bodies. Why is
a healthy weight important to your health – or the
health of our readers?
Minshew: Diabetes and pre-diabetes are
surfacing as the greatest threat to our health and
longevity. I want to be vibrant and active during my
entire life. Science has proven beyond any doubt that
our longevity and vitality are linked to a normal
weight – with disease, disability and early death directly
linked to obesity.
Conard: I don’t think weight is important; I think
body fat percentage is. The human body, like a car, is
only meant to carry a limited load. Just as I would not
go fill my trunk with bricks, so too will I avoid carry-
ing around extra weight on my body. In a car it ruins
gas mileage, strains the engine and drive train, and
leads to premature wearing out of the shocks and other
supports. In people, extra weight bogs us down and
makes us feel lethargic, strains our heart and blood
vessels, and destroys our back, knees, and ankles,
among other things. I view our bodies as a gift; I show
my appreciation by caring for it well.
Huning: Being overweight just wouldn’t be good
for me. My body wouldn’t be able to function the way
it needs to for me to be free from disease, and happy.
VitaJournal rounded up our panel of doctors and
professionals to find out the truth! How do these
doctors stay healthy? Their answers may surprise –
and even entertain – you, but one thing is clear: if it’s
good enough for your doctor, it’s good enough for you!
In the last issue of VitaJournal, our panel answered
questions about peaceful sleep and stress. In this
edition, our medical experts discuss weight, gratitude,
and more.
VitaJournal: Thank you again for taking the time
to answer another round of questions. Let’s get started
by asking about a sensitive issue – weight control. Are
you satisfied with your current weight? If not, are you
attempting to lose weight and how are you planning to
do so?
Dr. Brazos Minshew: Medically, yes, I am
satisfied. But I have the desire to compete in an
Olympic Triathlon in the Spring of this year. This will
require me to lose an additional 10 pounds. My
favorite technique for rapid fat loss (not muscle or
water loss) is to balance my blood sugar through the
day with multiple small meals. During weight loss I
will eat 100 calories per hour. Even though my daily
calories are about the same, the 100 calorie per hour
routine balances my blood sugar and helps me lose fat.
I’d like to add that I learned this technique from my

Dr. Scott Conard: I am pretty much satisfied.
Controlling weight is a part of life just like stress man-
agement. Diets are not as productive as lifestyle and
good habits are. I weigh myself on a Tanita scale each
day and try to keep my body fat percentage below
15%. I am a couple of points above that right now. As
I work out and become more muscular, my weight has
gone up while my body fat percentage has gone down.
So to me, the real question is: am I satisfied with my
current body fat percentage – and if I am not, how am
I changing my lifestyle to correct this issue?
Barbara Huning: I am lucky to be congenitally
lean, although I know part of that comes from healthy
eating habits learned in my family. During the past
couple of years, though, my metabolism started slow-
ing down, and I’m a few pounds more than I used to

Maccaro: Maintaining a healthy
weight is very important to my health

diet with an emphasis on whole grains,
beans, fresh vegetables and fruits, nuts,
and seeds. I go easy on dairy, although

or almond milks. On the whole it’s a
pretty low-fat diet. I avoid trans-fats. I
also feel free to eat almost anything on
occasion, so I don’t fall into the “depri-
vation-grasping” routine with foods
that are tasty but not as healthy. It
works pretty well. My cholesterol level
is about 140. Walking for an hour a day
also helps. When I get caught up with
work, sometimes I end up going out for
fast food – it’s a comfort thing, even
though I regret it later. I’m working on
that with my Health Coach, too –
scheduling in time to plan and make
healthy lunches to bring to work.
Maccaro: I take many steps to
protect my heart health. Some are
easy, while others are a challenge. I
take CoQ-10, Alpha Lipoic Acid,
Magnesium, Sytrinol, EFAs, and
Chromium Picolinate, as far as heart
support goes. I try to walk for an hour
every night if possible. And, of course,
managing stress and monitoring my
emotional reactions to things I cannot
change is something I constantly have

Dear Friends,
A few years ago I was part of a team which provided an enrichment program in which families,
teachers, and school counselors spent an evening of fun and fellowship each week. For half an hour
of that time, the parents spent a little quiet time in conversation with each other. There was only
one rule to these conversations: Avoid asking “why.”
We included this rule because “why” is too often the beginning of a complaint instead of a search for
understanding. It tends to close down our feeling of warmth toward each other rather than opening
it up, and it tends to “lock us in” to things we don’t want in our relationships. This rule offered the
parents a “vacation” from questions like, “Why can’t we have more time together?” “Why am I
having such a hard time with this situation?” “Why don’t you do that more often?”
Asking why things are not as we wish sends our mind, and theirs, on a mission to find the reasons
why our hopes will not be fulfilled. Imagine that! How often do we undermine the fulfillment of
our hopes by asking problem-focused questions?
“Why” is a perfectly good question, though – and it can be used to create more of what we want. We
can make “Why” work for us instead of against us, by pointing it toward our hopes rather than our
frustrations.
When we point “Why” toward our hopes, we find ourselves asking questions like, “Why do I enjoy
spending time with you?” “Why do I think that we really can make things better?” “Why do I love
you so much?”
When we ask questions which point us toward our hopes and dreams, we protect ourselves from the
discouragement of problem-focused thinking. We nurture what we love in our relationships. We
notice the very good reasons for our hopes.
When we focus on asking why our hopes are possible, and why we already have what we want – even
a little bit of it – we send our mind, and theirs, on a mission to find the reasons why our hopes can
be fulfilled. We highlight and amplify what we love, helping us to protect, nurture, and increase
what is most precious to us – the love between us.
I invite you to take a few minutes to think about someone you care about. Make a list of what you
have loved about that person and your relationship with them. Include in your list the hopes you
have for your relationship as time goes on. Then, turn each item on your list into a solution-focused
“Why” question. Build confidence and faith into the questions you create, assuming that your hopes
have been fulfilled, and you are asking why things are now as wonderful as they are.
When your list of questions is complete, set it down for a while, and then come back and read your
questions again. Notice how the questions awaken and expand your inspiration, your confidence,
and your love for this person.
It’s amazing how the words we use are the building blocks of our future. The direction we face is in
fact where we are going. When we turn to face the promise of love, we find ourselves fulfilling it.
What a blessing this is for all of us!

It used to be that fast food restaurants would ask,
“Would you like fries with that?” Now, it’s
assumed that fries go with an order. The new
question is, “Super-size it?” and more often than
not, the answer is yes!
Despite such cautionary tales as Morgan

Me documentary (2004), Americans are getting
bigger and bigger, and with that expansion comes
a host of health problems such as diabetes, heart
disease, and risk of stroke. Fad diets never seem
to take the weight off for good. What can people
do to cut back all this extra weight?
Perhaps the most overlooked skill in weight
management is portion control. Eating a fad
diet that restricts all fats or all carbs (or whatever
the current fad is) won’t help if portions of your
“allowed” foods remain high or go even higher.
Your stomach is a pliable little organ. And yes,
it is little. Your stomach, unfilled, is only about
the size of your fist. Your stomach is flexible, too
. . . so flexible that it can hold up to a full gallon
of food at one time! The stomach can expand
to about 50 times its normal size – and will if you
force it. Doing so will quickly lead to obesity,
which in turn leads to multiple health risks,
including heart disease.
Neither the Department of Agriculture nor food
manufacturers have made portion control any
easier for you to figure out. For example, on
your pasta box at home, a serving is probably
listed as one cup. But the Food Guide Pyramid
lists a serving of pasta as only half a cup. Then
down the street at your local Italian eatery, a
plate of pasta might easily have two or more
cups of noodles.
There is no one set measure of what a serving is,
so you have to take your portion control into your
own hands – and mouth. For packaged products
that you will cook (such as pasta), use the serving
size listed on the package. For all other foods, use
the Food Pyramid to determine a serving.
Estimating, or “eyeballing,” portion sizes is a
valuable skill that is integral to controlling your
portions. Learn to eyeball your portions to
reduce your intake.
• A serving of meat, fish, or poultry is about
three ounces. That’s about the size of a
deck of playing cards.
• A cup-sized serving is about the size of a
tennis ball.
• An ounce of cheese is about the size of
your thumb.
• Half a cup of fruit or vegetables is about the
size of a small fist.
To reduce your portions at home, avoid eating
out of the bag or carton. Take time some after-
noon to measure out your favorite foods according
to serving size, and put them in their usual dishes;
use that measurement to eyeball approximate
serving sizes from now on.
At restaurants, eyeball your portions first, separate
the food, and doggy-bag the remainder right away
so it doesn’t tempt you. Try ordering an appetizer
as your main dish instead of an entrée. If nothing
else, ask the server for a small portion when ordering.
Remember, your empty stomach is only the size
of your fist. There is simply no need to extend
your stomach any further, and the best way to
control that over eating is to serve yourself
smaller portions.
One final note to remember about portion con-
trol has to do with your brain’s wiring. It takes
the stomach 10 to 20 minutes to let your brain
know it is full. A lot of primavera, pizza, and
plum cake can be eaten in 10 minutes.
Remember to eat slow and give your stomach
time to tell your brain it’s finished. And the
next time you’re asked if you want to super-size
your meal, just say “Pass!”

a blessing in my life. I would have never thought
that I could encourage people to develop a rela-
tionship with God at work and not get in trouble!

main mealFor as common as celery is in various dishes, it sometimes gets a bad reputation as being
“rabbit food” and the like. But it’s a bad idea to go dismissing this crisp vegetable altogether.
In fact, it may be time to promote celery from garnish to main course!
Celery is packed with nutrients that are good for you.
Vitamin C. Your body can’t manufacture Vitamin C, you
must get it from food and supplements. Celery is a great
source of this potent antioxidant. The leaves of celery have
higher concentrations of Vitamin C than the stalks.
Pthalides. These active compounds may help lower choles-
terol by relaxing arterial muscles.
Coumarins. These compounds are antioxidants, fighting free
radicals and reducing cellular mutations caused by them.
Celery as you know it today came from wild celery, which
was originally used exclusively as a medicinal plant that
grew in the Mediterranean and the Himalayas. The first
mention of celery as a medicinal plant dates to the 9th
Century B.C.! Ancient Greeks used the leaves as laurels for
their athletic crowns, while the Romans used it as a spice.
The raw vegetable being used as a food didn’t become
popular until the 18th Century, and wasn’t introduced to
the United States until the 19th Century.
Select celery that seems crisp, and that is in a tight bunch.
Leaves ought to be bright green, with no brown or yellow
spotting. Check for dark discoloration on the stalks (a
condition called “blackheart,” caused by insects). Finally,
celery should have small, tender stalks in the center of the
bunch rather than a round stem (called a seedstem). The
presence of seedstems can mean a bitter tasting celery stalk.
Celery should be stored in a refrigerator in a sealed container
or perforated bag. Avoid freezing celery, as it will likely wilt.

Of course, Ants On A Log (celery with peanut butter and
topped with raisins) is always a refreshing and healthy treat,
but there are other options for these crispy stalks. You can
always add celery leaves and/or sliced celery stalks to stews,
soups, casseroles, and stir fries for an added crunch. Or, try
our tasty vegetarian recipe.

TriVita Celery Sweet Potato Soup
Ingredients:
2 tbsp sunflower oil
2 onions (sliced thin)
1 tbsp mustard seeds
1 tsp ground turmeric
1 tsp ground coriander
1 lb. sweet potatoes
(peeled and chunked)
1 bunch (6 sticks) celery (sliced)
8 oz. carrots (peeled and sliced)
1 green pepper (chopped)
1 pint vegetable stock
14 oz. butterbeans
Directions
Fry onion in oil until lightly
browned. Add mustard seeds,
turmeric, and coriander and fry one
more minute. Add celery, sweet
potatoes, green pepper, and
carrots, cover and cook five more
minutes. Add vegetable stock and
butterbeans. Bring to boil, cover,
and cook 30 minutes, or until
vegetables are tender. Serves 4.
This recipe goes well with wild rice.

1. False. Unsolicited e-mails – otherwise known as junk
mail – serve one purpose, and that is to sell you some-
thing. Daily, weekly, or monthly e-mails you sign up for
are generally more reliable and safer.

is illegal, there are still loopholes for con artists to jump
through. Furthermore, it’s virtually impossible to police
the millions of websites on the Internet. Reliable health
websites tend to police themselves, such as those who
adhere to “Health On the Net Foundation” guidelines.

Institutes of Health (NIH), Food and Drug Administration
(FDA), or Centers for Disease Control and Prevention

something like, “What doctors don’t want you to know!”
or “The secret to long life the media keeps quiet!” and
similar tripe, it’s because these companies are working
without any oversight. Be careful.
5. True. Always check for a physical address, phone
number, and names of people running the company, and
check these out before making any purchase. If you can’t
locate any of these things, take your business elsewhere.
Remember: ANYTHING that asks for
personal information via e-mail is a scam!

  • 4. allergies:ATTACKING THE ROOT OF THE PROBLEM o you suffer from seasonal allergies? Have you always had allergies, or does this seem like a new phenomenon? How many people – younger and older – do you know who suffer from allergies? Let’s talk about what allergies are, why they are so prevalent these days, and what you can do to prevent the misery they bring. Before we begin to answer these questions, we need to know our enemy if we are to form an effective battle plan to combat allergies. We speak of allergies by the tissues they attack. For instance, most allergies are airborne and attack the mucous membranes of the upper respiratory system. The most common medical diagnostic term is Allergic Rhinitis, also called “hay fever.” This term describes the allergies that affect the eyes, ears, nose, and throat. Allergic rhinitis includes symptoms such as a runny or itchy nose, watery eyes, and sneezing. These symptoms are caused by irritation to the mucous membranes in the head. At first, these symptoms may just seem like an annoyance. However, over time this irri- tation may turn to infection. People that suffer from allergies increase their tendency to have ear infections, sinus infections, frequent sore throats, lung infections, and bronchitis. Additionally, people with allergies suffer from increased headaches, fatigue and irritability. Allergies occur when a plant or animal protein contacts your mucous membrane and your immune system reacts to reject this irritant. These irri- tants may be mold, pollen, dust, animal dander, or other irritants. A normal, healthy immune system may react very little when these irritants are inhaled.   • 5. VITAJOURNAL I 5 respiratory system and move the irritant away from the contact area. Imagine tall stalks of wheat blowing in the wind. This gives you a mental picture of the gentle way your body should deal with irritants. Allergy problems begin when this ciliary action fails; now the irritant requires a more persuasive approach to leave the area. A poor immune system overreacts to irritants Why do some people get symptoms of allergies and some do not? We all breathe the same irritants, right? That’s true! The reason some people have symptoms and some seem to have no problems – even during the worst months for pollen – has little to do with what is in the air. Allergic reactions are caused by your immune system, not by the proteins that trigger allergies. We all breathe the same proteins. If your immune system is working correctly, the cilia in your respiratory system will remove the proteins (from pets, pollen, etc.), and you will never have a symptom. If your immune system is imbal- anced, the cilia will fail to remove the irritants and your body will fall back on a secondary reac- tion that is really quite excessive – histamines. Allergens are specific proteins. Ragweed is one kind of protein, cat dander is another, and Aspergillus mold is another type of protein. Your cilia are designed to remove these proteins. If they are not removed, your immune system will be alerted. When your immune system senses one of these proteins, it creates a protein anti- body to identify this invader as a health threat. This is the case with these “normal” proteins even though they are not unhealthy for you under normal circumstances. The antibody protein is rushed to the site of irritation by your blood stream and lymph system. It immediately “pops” a balloon-like cell in the region of this irritation. That cell is called a mast cell. Mast cells contain histamines that cause your body to flood the area with liquid. This excessive liquid, caused by histamine, attempts to wash the irritant from the area in a way that the cilia could not. This is why you get watery eyes and a runny nose: your body is attempting to wash away an irritant. The problem is, your immune system has completely over-reacted to the situation when it triggers mast cells to relieve an allergy. Now, your mast cells have a clear warning label that says, “Emergency use only!” Yet your immune system (if it is not healthy and bal- anced) reacts all out of proportion to the irrita- tion caused by the allergen when it activates the mast cell. When histamines are released, they cause the symptoms that you feel locally (eyes, ears, nose, and throat), but they also cause symp- toms in other areas as well. For instance, when a mast cell activates in your nose, the reaction causes histamine release in your lungs, your skin, your joints, and your intestines. This may trigger further immune reactions in your liver, kidneys, heart, and circulatory system – and even your brain! Histamines are very powerful. Many medications exist to block histamines and the irritation, discomfort, and damage they cause. But think about this: Is it the histamines that need to be corrected or your immune system? Put another way, the histamines are like poisonous berries on a bush or tree. You will never get rid of the tree by simply picking the berries. VITAMIN D DEFICIENCY INCREASES CANCER RISK SAN DIEGO – According to a report published recently in the American Journal of Public Health, correcting Vitamin D deficiencies can lower the risk of some types of cancer. A process called angiogenesis, in which new blood vessels grow and allow cancer to thrive, is curtailed by proper amounts of Vitamin D. The cancers studied included colon cancer, breast cancer, prostate cancer, and ovarian cancer. Researchers concluded with a recommendation of supplementing diets with 800 to 1000 IU per day. FOLATE LEVEL PREDICTS RISK OF FRACTURE IN ELDERLY BOLOGNA, Italy – A study published in the Journal of Gerontology reports that levels of folate (Folic Acid), rather than levels of homocysteine (HCY), are what predicts the risk of fractures arising from osteoporosis in elderly people. The researchers concluded that “Low serum folate is responsible for the association between homocysteine and risk of osteoporotic fracture in elderly persons.” In other words, when it comes to osteoporosis and fractures in the elderly, the link between HCY and osteoporosis is determined by the level of Folic Acid in the blood. FATTY ACID DHA MAY PROTECT AGAINST ALZHEIMER’S NEW ORLEANS – Docosahexaenoic acid, or DHA, may offer protection against Alzheimer’s Disease and cognitive decline, according to a number of recent reports collected and reported on by researchers in the Journal of Clinical Investigation. DHA is a fatty acid that is converted from other fatty acids that must be ingested because the body cannot manufacture them. Linoleic acid and alpha-linolenic acid can both be turned into DHA, but both must be consumed in diet or supplementation. The study, published recently in the Annals of Internal Medicine followed more than 4,000 white adults and used Body Mass Index (weight relative to height) to determine which were overweight. Many men and women, aged 30 to 59 when the study began, went from a healthy BMI to unhealthy BMI in just four years. HCY LINKED TO STIFF ARTERIES PILSEN, Czech Republic – Researchers at Charles University (Department of Internal Medicine, Centre of Preventive Cardiology) have reported a strong, independent relationship between total homocysteine (tHCY) and stiffness of central arteries. It was noted that the association remained high even after refiguring the data to allow for other cardiovascular risk factors, including age, gender, smoking, overweight, hypertension, and impaired glucose metabolism. In other words, HCY was at least partly responsible for aortic stiffness even in people with no pre-existing heart risks. tHCY was identified by researchers as “a strong and independent predictor of cardio- vascular events.” Source: Journal of Human Hypertension, January 26, 2006.   • 8. 8 I March/April 2006 update on VITAMIN B In January 1998, a Food and Drug Administration (FDA) mandate went into effect. This mandate required that all cereal-grain products in the United States become fortified with folate, a type of B vitamin (known as folic acid when in vitamin supplement form). This fortification was intended to help reduce the number of neural tube birth defects in the U.S., as most women of childbearing age were not getting enough folate to prevent these defects, which commonly lead to diseases including spina bifida. Since that FDA mandate, folate and the other B vitamins have been researched extensively. All the current research points to B vitamins as being critical in the prevention of many diseases beyond birth defects, as the B’s are able to reduce the level of dangerous homocysteine (HCY) in your body. High levels of HCY can lead to such illnesses as Alzheimer’s Disease, osteoporosis, certain cancers, and more. So how has folate fortification been working? Sadly, fortification has not been as successful as doctors hoped. The news is a mixed bag: • Folate fortification has indeed raised the level of folate in the blood for most Americans, regardless of gender or age; folate measured in the study increased two-fold in the study population – a remarkable amount. • However, the amount of folate measured in the blood has not been enough to mitigate health risks, including both neural tube defects and homocysteine-related “aging” diseases. In another study, 67 college students were made to give speeches to their peers. Those who watched an episode of Seinfeld before they went on stage had lower heart rates during their per- formances.   • 10. 10 I March/April 2006 peace? how can I find In an increasingly chaotic world, cultivating inner peace has become more important than ever. by Barbara Huning, M.A., L.S.A.C. Picking up a newspaper, or turning on the radio or television, reminds us that we live in troubled times. Tragedy, war, and catastrophe abound. Thousands grieve the loss of life, and fear the uncertainty of coming days. In today’s world, it is easy to feel out of control – to feel that there is little we can do to take control of our lives and experience inner peace. Ultimately, however, we are the only ones that can determine what we will do and how we will feel. As Dr. Viktor Frankl, noted psychiatrist and World War II concentration camp survivor, reminds us: “The last of the human freedoms. . . (is) to choose one’s attitude in any given set of circumstances, to choose one’s own way.” But knowing we control our attitude – that we determine our level of inner peace – isn’t enough. Realizing we are in control and taking control are two very different things. Peace – a feeling of serenity, the calm reassurance of hope and love – requires dedicated, energetic action to achieve. Where can we turn for peace? To ourselves, to others, and to God. How do we achieve inner peace? Through dedicated daily action. Study these 10 techniques for bringing peace into your daily life, and see if your mind, body, and heart can feel the difference. 1. be mindful Perspective is all-important when it comes to establishing or strengthening inner peace. Be mindful of what is really important in your life – family, friends, God – and then set your priorities. When you let your prior- ities rule your life, rather than letting your life deter- mine your priorities, you build inner peace. 3. be wise Cultivate the ability to act instead of react. Practice wisdom by thinking before speaking or acting. Determine now how you will choose to respond to the challenges in your life. Temper your responses to others with the wisdom of one who looks beyond what is said or done to find the reason for the words or actions. Seek peace in the knowledge that you have taken the right action; that you’ve done the right thing. 4. be content “Contentment” is a quality you don’t hear much about in today’s world. But finding joy and satisfaction in what you have and what you are, rather than constantly dwelling on what you don’t have, is an unending source of inner peace. True contentment brings the peaceful recognition that you already have what is most important. 2. be prepared Be prepared for challenges to your inner peace by consistently building your Physical, Emotional, and Spiritual health. A strong body, mind, and spirit can withstand the anxiety, fear, and tragedy of the present, and even look forward, with hope, to the future. 10 ways to peace Have courage for the great sorrows of life and patience for the small ones; and when you have labo- riously accomplished your daily task, go to sleep in peace. VITAJOURNAL I 11 5. be loving When inner peace seems lost – when anxiety, fear, and discouragement invade – you can be left feeling like you have little to give and little comfort to offer others. But one of the grand purposes of your life is to comfort and strengthen others. In this reaching out – this selfless act of service – you can and will discover lasting peace. 9. be prayerful When confronted with heart-breaking tragedy, surrounded by fear and anxiety, prayerful pleas for self control and the faith to live in hope can bring assurance, peace, and strength. There is com- fort and power in the words of holy scripture, “The Lord will give strength unto his people; the Lord will bless his people with peace.” Psalm 29:11. True peace is a God-given gift – one He wants to give you. We are sons and daughters of God. He loves us, He wants us to be happy, and He will speak peace to our souls. 6. be still Webster’s dictionary defines peace as an undisturbed state of mind; as serenity. All too often, you may let the noise and confusion of the outside world rob you of precious quiet hours. An hour or two of silent reflection, of study and prayer, can bring peace to a troubled spirit and perspective to a troubled mind. When inner peace is threatened, guard your quiet time. Cherish it – you need it. 10. be peaceful Easy enough to say, right? But being peaceful – following the previous nine steps and now this one – really is as simple and difficult as making a choice. Your mind is a powerful tool. Use it to determine your reaction to circumstances outside your control by telling yourself to be at peace. Doing this with a few minutes of deep breathing virtually guarantees it will be true. 7. be grateful True gratitude is more than a recognition of your blessings, it is a celebration of those blessings – the spontaneous outpouring of a heart too full to keep its joy inside. Seek opportunities to express gratitude to others and to God. This one habit alone can build huge stores of inner peace as you come to see how loved and blessed you are. 8. be accepting You may sometimes wonder what it would be like to be in total control of your world. In reality, many things that happen to you are out of your control. Recognizing this fact is the first step in acceptance. Learning to differentiate between what you can and cannot change is the second. By accepting what you cannot change, and enthusiasti- cally working to change what you can, you preserve inner peace. What is it? There’s a chance you’re experiencing acute anxiety. Medically speaking, anxiety is a state of fear or apprehension about a future event – real or perceived – that can impair physical and psychological function. In its basic form, anxiety can lead to poor sleep and frowning; or it can grow out of control, leading to hospitalization and even cardiovascular disease. How much do you know about anxiety, whether it’s in your life or the life of a loved one? Salt raises your blood pressure and lowers your potassium level, a key component in your nervous system. 3. True. If you are generally kind to yourself, your anxiety level is probably low. If you are hard on yourself – using negative words and phrases in your self-talk – you almost surely have a heightened level of anxiety. You do listen to what you tell yourself, so watch your language! 4. False. Absolutely not! Long, slow, deep breathing patterns will reduce stress and anxiety, but short and shallow breaths will only create more stress on your body. 5. False. A study by the University of Missouri-Columbia showed that intense, high- energy exercise lowers stress and anxiety, and therefore lowers the risk of heart disease as well. 6. True. A study from Case Western Reserve University recently showed that anxiety is on the rise. Is this due to terror attacks and the threat of the same? Of course, such events do raise anxiety levels; however, anxiety has been on the rise since the 1950s. The study covered the years 1950 to 1993, ending almost a decade before the terrorist attacks in 2001. In her average day, Susan eats fast food – burgers and fries mostly – at least once, smokes between half a pack and a pack of cigarettes (depending on her “stress level”), and watches four to five hours of television each night in her favorite easy chair while snacking on cookies and coffee. She is currently 50 pounds overweight, has high blood pressure, and gets no exercise other than walking from her car to her front door. Despite warnings from her doctor, Susan is sure all that “health stuff” is for the birds. Susan is just an example, but there are millions of men and women across North America just like her. Add to her lifestyle any other medical conditions – heart attack, stroke, diabetes, etc. – and the result is a shortened, difficult life. An intervention involves gathering like-minded family and friends, people closest to the person whose choices are harming their health, and having everyone express their concerns in turn. This approach can have more impact because of strength in numbers. It will get the attention of the loved one where one person may be more easily dismissed.   • 16. 16 I March/April 2006 Have you ever thought about why some people look older than others? Our estimate of someone’s age really has much to do with the health and appearance of their skin. But, in spite of the saying, beauty is not only skin deep. Healthy skin is a good sign that your internal health is good. Wrinkled, spotted, and fragile skin is a sign that you are aging too quickly. Yes, healthy skin is a reflection of how healthy you are on the inside! Would you like to know more about how to keep your skin – as well as your entire body – young and healthy? Let’s start with a discussion of why skin ages in the first place. The substances collagen and elastin give skin its firmness and elasticity. With age, though, the collagen and elastin content of the skin gradually decreases. As a result, the skin becomes looser, weaker, less elastic, and drier. In addition, the fat pads under the skin begin to disappear. Wrinkles form, and the skin begins to sag. As bad as this is, remember that collagen is the foundation for all of your organs – even your bones! So, when collagen loss is making your skin look bad, it is also aging your entire body. This gradual loss of structure has several causes: • Disease, trauma, and scars that cause poor circulation, inflammation, and infection; • Genetic programming (a built-in “clock” that triggers aging); • Cumulative radiation and sun damage (photoaging); • Direct chemical effects from toxins such as cigarette smoking, air pollution, water pollution and/or abrasive chemicals. A poor diet can cause collagen loss when you don’t have enough nutrients to repair and rejuvenate every day. Sun damage additionally causes fine wrinkles that disappear on stretching the skin; surface roughness; mottled pigmentation (liver spots); and skin cancer. Finally, stress triggers collagen loss and causes a person to age too quickly. Trauma, toxins, deficiency, and stress (as well as the ultra- violet light from the sun) creates free radicals. These are naturally occurring substances that can overwhelm and harm many tissues of the body, including your skin. In people who already have signs of aging skin and wish to reverse it, a number of treatments are available. These usually involve quenching the fire from free radicals with antioxidants. Antioxidants are substances that neutralize free radicals. On this basis, various antioxidants have been investigated for their potential usefulness in treating or preventing premature aging. Antioxidant vitamins, such as Vitamin A, Vitamin C, and Vitamin E have been shown effective for reversing fine wrinkles, splotchy pigmentation, rough skin, and sun damage. Also, hormone balance helps restore normal skin tone in menopausal women. More aggressive treat- ments for aging skin include injections of botulin toxin, dermabrasion, chemical peels, soft tissue augmentation, laser resurfacing, and GORE-TEX® threads. (For detailed information on the relative merits and demerits of these methods, consult a dermatologist or plastic surgeon). Of course, these treatments only help the outside, not the inside of your body, so they are of limited benefit. The Journal of American College of Nutrition (February 2001) published an intrigu- ing article that suggests a link between food and skin wrinkles. In an abstract, researchers noted, “In par- ticular, a high intake of vegetables, legumes and olive oil appeared to be protective against [sun- based skin damage] . . . a high intake of meat, dairy, and butter appeared to be adverse” to the skin. Skin-smoothing foods include: • Green leafy vegetables • Prunes • Apples • Tea • Olive oil • Nuts • Fish • Beans While the study did not specify what amounts of food needed to be taken to experience a benefit, meet- ing the daily guideline of five to nine servings of fruit and vegetables, and a weekly serving of fish would be a great start.
  • 17. VITAJOURNAL I 17 treatment of aging skin. These substances, closely related to bioflavonoids, have strong antioxidant properties. They also appear to pro- tect and strengthen collagen and elastin. These effects provide theoretical reasons to believe that OPCs might be helpful for the treatment of aging skin. Antioxidant substances have also been studied as aids to preventing sun damage. Studies on laboratory animals found that Vitamin C and Vitamin E helped prevent burning on exposure to ultraviolet light. One small study found that 2 grams of Vitamin C and 1,000 IU of Vitamin E taken orally for eight days resulted in a decrease of “sunburn” induced by ultraviolet light. In addition, a 50-day, placebo-controlled study of 40 people found that higher doses of these vitamins provided a sun protection factor of about 2. (Compare this to the sun protection factor of 15 or higher in many sunscreens.) It appears that these vitamins must be taken together for best effect. How do they work? Apparently, antioxidant vitamins quench free radical inflammation and help build a strong network of collagen fibers. Green tea contains antioxidant substances called polyphenols (including the widely acclaimed epicatechin gallate). Preliminary studies suggest that green tea constituents might help protect the skin from sun damage and sunburn. Additionally, green tea concentrates protect and repair DNA damage from toxic levels of radiation and other toxins. Our DNA determines how healthy we are – not just our skin. Healthy DNA means that our whole body is healthy. Other substances with antioxidant actions that have shown some promise for aging skin include milk thistle, selenium, soy isoflavones, and zinc. The substance glucosamine is widely used for osteoarthritis in part because it helps collagen regenerate. For this reason, it has been advocated as a treatment for aging skin. In one trial, 72 women with symptoms of aging skin were divided into two unequal groups: a small group that received no treatment, and a much larger one that received a mixture of glucosamine, amino acids, and minerals. The results indicated greater improvement in the treated group as compared to the untreated group. Because these antioxidants work in an entirely different manner from standard sunscreen, it appears reasonable to believe that they might offer a synergistic effect if taken with sunscreen. Attractive skin is really a reflection of inner health. Good health comes only from healthy habits. This is a Natural Law.   • 18. 18 I March/April 2006 North America is a culture made up of many other cultures, each with its own customs, clothing, and traditions. And fortunately for everyone, they each have their own healthy, unique cuisine as well! Most of the recipes featured here are based on traditional European, Asian, African or other conti- nental delights imported to North America and changed gradually to accommodate native North American foods. So what we now call North American cuisine is actually a blend of several different traditions from all over the world. In this second of a six-part series, VitaJournal takes a look at the various cuisines enjoyed by the southern United States. Influenced by African, French, Irish, Native American, and Spanish cuisine, southern cooking has developed a taste all its own over the last two centuries. Unique spice flavors and creative use of indigenous plants and animals have become associated across the continent with words like Soul, Creole, Cajun, and Tex-Mex. Enjoy your journey through the south. Southern Food There are many wonderful qualities about Southern cooking that should appeal to wellness-seeking North Americans, one of which is the common absence of meat. Many traditional and modern Southern dishes are flavored with meat, but do not use meat as an ingredient. Southern barbeque has become a delectable export, with several barbeque contests held throughout the area all year long. One good thing about barbequing meats – apart from the mouth-watering taste – is that it’s healthier than frying. And there are other alternatives to keep your BBQ healthier, such as using onion and garlic powders rather than onion and garlic salts; using other spices in place of salt, like oregano, basil, bay leaf, curry, or chili; trimming all fat from beef before cooking; choosing BBQ chicken or fish instead of red meat; and using wine, fruit juice, or fat-free products for basting. Many traditional Southern recipes call for frying, a technique used by African descendents for cooking. This method of food prepa- ration was initially avoided by European descendents, but in just a few short generations, frying had become popular across cultural lines. Frying has since lost favor in the modern nutritional community, with most nutritionists advocating broiling, poaching, roasting, or barbequing. Traditional Southern foods include grits (maize porridge), biscuits and gravy, catfish, fritters (baked pastry similar to dough- nuts with filling), chicken-fried steak and fried chicken, cornbread, and okra. part II: Southern Food eating across North America
  • 19. VITAJOURNAL I 19 Recipes Much of Southern-style cooking can be made healthier than their original recipes by making careful selections and making small substitutions. For example, if you are going to eat red meat, choose lean or extra-lean cuts. A better choice is cold-water fish or white meat, such as chicken or turkey breast. If you choose poultry, go with a skinless cut or remove the skin before cooking. If you use a canned fish, opt for fish packed in water rather than in oil. Building a base for Southern cooking is easy to do, and you may in fact already have the makings for a Southern meal in your pantry or freezer. Rice, corn, beans, carrots, chicken, and fish are all popular in Southern cuisine. Beans and Rice Many people outside of Louisiana believe red beans and rice are thoroughly Cajun. Traditional Cajun chefs might disagree. We won’t pick sides here – just enjoy a vegetarian take on this delicious recipe. 1 sweet onion, chopped 2 bell peppers, chopped (red and/or green) 4 cups vegetable stock 14 oz. chopped tomatoes (or 14.5 oz. can) 1/2 tsp. cumin 1 bay leaf 1/4 cup fresh parsley, chopped 2 cloves garlic, minced 15 oz. red beans (drained & washed if canned) 1 sprig thyme Kosher salt or substitute 1 tsp. Creole seasoning hot pepper sauce (to taste) ground black pepper (to taste) brown rice, steamed Directions In Dutch oven, combine onion, garlic, bell pepper, and stock. Braise vegetables until soft. Add beans, tomatoes, seasoning, cumin, ground pepper, hot sauce, thyme and bay leaf. Simmer for 15-20 minutes. Add more stock if beans become dry. After beans have simmered, season to taste with salt and add chopped parsley. Serve with fresh steamed brown rice and hot sauce. Serves 2-3. Stuffed Bell Pepper There are as many variations on the stuffed bell pepper as there are people living in the south. Here’s just one among many. 1 to 1 1/2 lb. ground turkey 2 oz. pimentos (jar) 1/8 cup Parmesan cheese 1 to 2 stalks celery, chopped 1/4 tsp. salt or substitute 1/8 tsp. cayenne 1/2 tsp. garlic powder 1 bunch green onions 1/3 cup mushroom sauce 1/2 bell pepper, chopped 1/8 tsp. black pepper 1/2 cup uncooked rice (for cooking later) 1 tbsp oil 4 large bell peppers (to be stuffed) Directions Cook rice according to directions. Brown turkey in non-stick pan, Set aside. Sauté onion, celery, and bell pepper. Combine mixture with turkey, then add remaining ingredients except Parmesan cheese. Mix well and cook for five minutes. Add rice, mix well. Cut the tops off the four bell peppers to form “cups.” Parboil peppers for 10 minutes. Remove from water and stuff peppers with turkey mix. Top with Parmesan cheese. Preheat oven to 350 degrees. Put stuffed peppers into casserole dish and add 1/4 inch water to dish. Cook 15 minutes, then serve. Serves 4. Salt Substitutes Salt and sodium are frequently near the top of doctor’s complaints about their patients’ diets. But salt, whether as table salt in a shaker or as seasoning during cooking, isn’t your only seasoning option. To reduce your salt intake, try substituting any recipes calling for it with one of these spices: • Ground black pepper • Ground red pepper • Garlic or onion powder • Basil • Bay leaf • Chili powder • Cumin • Curry powder • Dry mustard • Oregano • Paprika • Parsley • Thyme Next stop: The Midwest VitaJournal May/June 2006

Or is there some other “fountain of youth” that doctors keep all to themselves? move from walking into something that gets my heart rate up a bit more so I can stay fit. Vigorous exercise is not the easiest thing for me. Sometime in the next six months I hope to begin something a bit more active. See how vague I sound now? Ask me again in six months what I ended up choosing! I’ve written it down in public, so now I have to do it. Maybe I’ll take up racquetball or salsa dancing. I am always thinking about losing an extra 10 pounds! VJ: It sounds like you’re all happy with your weight but have goals to continue toning your bodies. Why is a healthy weight important to your health – or the health of our readers? Minshew: Diabetes and pre-diabetes are surfacing as the greatest threat to our health and longevity. I want to be vibrant and active during my entire life. Science has proven beyond any doubt that our longevity and vitality are linked to a normal weight – with disease, disability and early death directly linked to obesity. Conard: I don’t think weight is important; I think body fat percentage is. The human body, like a car, is only meant to carry a limited load. Just as I would not go fill my trunk with bricks, so too will I avoid carry- ing around extra weight on my body. In a car it ruins gas mileage, strains the engine and drive train, and leads to premature wearing out of the shocks and other supports. In people, extra weight bogs us down and makes us feel lethargic, strains our heart and blood vessels, and destroys our back, knees, and ankles, among other things. I view our bodies as a gift; I show my appreciation by caring for it well. Huning: Being overweight just wouldn’t be good for me. My body wouldn’t be able to function the way it needs to for me to be free from disease, and happy. VitaJournal rounded up our panel of doctors and professionals to find out the truth! How do these doctors stay healthy? Their answers may surprise – and even entertain – you, but one thing is clear: if it’s good enough for your doctor, it’s good enough for you! VitaJournal: Thank you again for taking the time to answer another round of questions. Let’s get started by asking about a sensitive issue – weight control. Are you satisfied with your current weight? If not, are you attempting to lose weight and how are you planning to do so? Dr. Brazos Minshew: Medically, yes, I am satisfied. But I have the desire to compete in an Olympic Triathlon in the Spring of this year. This will require me to lose an additional 10 pounds. My favorite technique for rapid fat loss (not muscle or water loss) is to balance my blood sugar through the day with multiple small meals. During weight loss I will eat 100 calories per hour. Even though my daily calories are about the same, the 100 calorie per hour routine balances my blood sugar and helps me lose fat. I’d like to add that I learned this technique from my TriVita Health and Wellness Coach! Dr. Scott Conard: I am pretty much satisfied. Controlling weight is a part of life just like stress man- agement. Diets are not as productive as lifestyle and good habits are. I weigh myself on a Tanita scale each day and try to keep my body fat percentage below 15%. I am a couple of points above that right now. As I work out and become more muscular, my weight has gone up while my body fat percentage has gone down. So to me, the real question is: am I satisfied with my current body fat percentage – and if I am not, how am I changing my lifestyle to correct this issue? When I get caught up with work, sometimes I end up going out for fast food – it’s a comfort thing, even though I regret it later. I’m working on that with my Health Coach, too – scheduling in time to plan and make healthy lunches to bring to work. Maccaro: I take many steps to protect my heart health.   • 22. Dear Friends, A few years ago I was part of a team which provided an enrichment program in which families, teachers, and school counselors spent an evening of fun and fellowship each week. For half an hour of that time, the parents spent a little quiet time in conversation with each other. There was only one rule to these conversations: Avoid asking “why.” We included this rule because “why” is too often the beginning of a complaint instead of a search for understanding. It tends to close down our feeling of warmth toward each other rather than opening it up, and it tends to “lock us in” to things we don’t want in our relationships. This rule offered the parents a “vacation” from questions like, “Why can’t we have more time together?” “Why am I having such a hard time with this situation?” “Why don’t you do that more often?” Asking why things are not as we wish sends our mind, and theirs, on a mission to find the reasons why our hopes will not be fulfilled. Imagine that! How often do we undermine the fulfillment of our hopes by asking problem-focused questions? “Why” is a perfectly good question, though – and it can be used to create more of what we want. We can make “Why” work for us instead of against us, by pointing it toward our hopes rather than our frustrations. When we point “Why” toward our hopes, we find ourselves asking questions like, “Why do I enjoy spending time with you?” “Why do I think that we really can make things better?” “Why do I love you so much?” When we ask questions which point us toward our hopes and dreams, we protect ourselves from the discouragement of problem-focused thinking. We nurture what we love in our relationships. We notice the very good reasons for our hopes. When we focus on asking why our hopes are possible, and why we already have what we want – even a little bit of it – we send our mind, and theirs, on a mission to find the reasons why our hopes can be fulfilled. We highlight and amplify what we love, helping us to protect, nurture, and increase what is most precious to us – the love between us. I invite you to take a few minutes to think about someone you care about. Make a list of what you have loved about that person and your relationship with them. Include in your list the hopes you have for your relationship as time goes on. Then, turn each item on your list into a solution-focused “Why” question. Build confidence and faith into the questions you create, assuming that your hopes have been fulfilled, and you are asking why things are now as wonderful as they are. When your list of questions is complete, set it down for a while, and then come back and read your questions again. Notice how the questions awaken and expand your inspiration, your confidence, and your love for this person. It’s amazing how the words we use are the building blocks of our future. The new question is, “Super-size it?” and more often than not, the answer is yes! Despite such cautionary tales as Morgan Spurlock’s Academy Award® -nominated Super Size Me documentary (2004), Americans are getting bigger and bigger, and with that expansion comes a host of health problems such as diabetes, heart disease, and risk of stroke. Fad diets never seem to take the weight off for good. What can people do to cut back all this extra weight? Perhaps the most overlooked skill in weight management is portion control. Eating a fad diet that restricts all fats or all carbs (or whatever the current fad is) won’t help if portions of your “allowed” foods remain high or go even higher. Your stomach is a pliable little organ. And yes, it is little. Your stomach, unfilled, is only about the size of your fist. Your stomach is flexible, too . . . so flexible that it can hold up to a full gallon of food at one time! The stomach can expand to about 50 times its normal size – and will if you force it. Doing so will quickly lead to obesity, which in turn leads to multiple health risks, including heart disease. Neither the Department of Agriculture nor food manufacturers have made portion control any easier for you to figure out. For example, on your pasta box at home, a serving is probably listed as one cup. But the Food Guide Pyramid lists a serving of pasta as only half a cup. Then down the street at your local Italian eatery, a plate of pasta might easily have two or more cups of noodles. There is no one set measure of what a serving is, so you have to take your portion control into your own hands – and mouth. For packaged products that you will cook (such as pasta), use the serving size listed on the package. For all other foods, use the Food Pyramid to determine a serving. Estimating, or “eyeballing,” portion sizes is a valuable skill that is integral to controlling your portions. Learn to eyeball your portions to reduce your intake. • A serving of meat, fish, or poultry is about three ounces. That’s about the size of a deck of playing cards. • A cup-sized serving is about the size of a tennis ball. • An ounce of cheese is about the size of your thumb. • Half a cup of fruit or vegetables is about the size of a small fist. To reduce your portions at home, avoid eating out of the bag or carton. Take time some after- noon to measure out your favorite foods according to serving size, and put them in their usual dishes; use that measurement to eyeball approximate serving sizes from now on. At restaurants, eyeball your portions first, separate the food, and doggy-bag the remainder right away so it doesn’t tempt you. Try ordering an appetizer as your main dish instead of an entrée. If nothing else, ask the server for a small portion when ordering. Remember, your empty stomach is only the size of your fist. There is simply no need to extend your stomach any further, and the best way to control that over eating is to serve yourself smaller portions. One final note to remember about portion con- trol has to do with your brain’s wiring. It takes the stomach 10 to 20 minutes to let your brain know it is full. A lot of primavera, pizza, and plum cake can be eaten in 10 minutes. Remember to eat slow and give your stomach time to tell your brain it’s finished. And the next time you’re asked if you want to super-size your meal, just say “Pass!” Your stomach can stretch to hold a gallon of food.   • 25. I moved to Arizona with my beautiful wife Mary in November 2005 from Pennsylvania. I remember praying with my wife in our apart- ment and asking God for direction, because my new commute was terribly long. But it’s a bad idea to go dismissing this crisp vegetable altogether. In fact, it may be time to promote celery from garnish to main course! Celery is packed with nutrients that are good for you. Vitamin C. Your body can’t manufacture Vitamin C, you must get it from food and supplements. Celery is a great source of this potent antioxidant. The leaves of celery have higher concentrations of Vitamin C than the stalks. Pthalides. These active compounds may help lower choles- terol by relaxing arterial muscles. Coumarins. These compounds are antioxidants, fighting free radicals and reducing cellular mutations caused by them. Celery as you know it today came from wild celery, which was originally used exclusively as a medicinal plant that grew in the Mediterranean and the Himalayas. The first mention of celery as a medicinal plant dates to the 9th Century B.C.! Ancient Greeks used the leaves as laurels for their athletic crowns, while the Romans used it as a spice. The raw vegetable being used as a food didn’t become popular until the 18th Century, and wasn’t introduced to the United States until the 19th Century. Select celery that seems crisp, and that is in a tight bunch. Leaves ought to be bright green, with no brown or yellow spotting. Check for dark discoloration on the stalks (a condition called “blackheart,” caused by insects). Finally, celery should have small, tender stalks in the center of the bunch rather than a round stem (called a seedstem). The presence of seedstems can mean a bitter tasting celery stalk. Celery should be stored in a refrigerator in a sealed container or perforated bag. Avoid freezing celery, as it will likely wilt. recipes Of course, Ants On A Log (celery with peanut butter and topped with raisins) is always a refreshing and healthy treat, but there are other options for these crispy stalks. You can always add celery leaves and/or sliced celery stalks to stews, soups, casseroles, and stir fries for an added crunch. Add mustard seeds, turmeric, and coriander and fry one more minute. Add celery, sweet potatoes, green pepper, and carrots, cover and cook five more minutes. Add vegetable stock and butterbeans. Bring to boil, cover, and cook 30 minutes, or until vegetables are tender. Serves 4. This recipe goes well with wild rice.
