This document provides recipes for several dishes for a Christmas menu including:
- A spinach salad with strawberries, almonds, vinegar and honey.
- A tomato soup made with tomatoes, onion, carrot, celery, butter, chicken stock and seasonings.
- A stuffed turkey made with ground lamb or beef, chestnuts, rice and tomatoes.
- A fruit bread made with orange juice, brandy, nuts and dried fruit.
- Sugar cookies with optional icing and sprinkles.
- Additional recipes for vasilopita, small almond cakes, and a honey sweet are also included.
2. TOMATO SOUP
INGREDIENTS
1/2 kg tomatoes (or 1 large tin
preserved tomatoes) 1 onion, finely
chopped 1 carrot, chopped 1/4 cup
butter 1 celery leaf, finely choppped 1
tspn corn flour 1 cube chicken stock
(for extra taste) Salt Pepper 1 tspn
sugar
METHOD
Heat the butter in a saucepan and
roast the onions. Add some water,
the corn flour and stir in order to
dissolve the corn flour. Add 5 cups of
water, the rest of the ingredients and
simmer until the vegetables are
tender. Remove from heat. Sieve
soup if you desire. Serve hot.
3. STUFFED TURKEY
Ingredients:
•8-9 pound turkey or capon
(approximately) with giblets
•2/3 cup of olive oil
•1/3 pound of ground lamb (or
ground beef)
•10-12 chestnuts, boiled, shelled,
and cut into small chunks
•2 medium onions, chopped
•1 bay leaf
•1/4 cup of rosé or white wine
•2 tablespoons of ground pine nuts
•1/2 cup of boiled rice (white or
brown)
•1 cup of water
•3 tablespoons of canned chopped
tomatoes
•salt
•pepper
4. BREAD
Ingredients:
•8 cups of all-purpose flour
•1 teaspoon of salt
•1 1/2 tablespoons of dry yeast
•1 cup of warm water (105F, 40C)
•1 cup of warm red wine
•1/2 cup of olive oil
•1/4 cup of orange juice
•1/4 cup of brandy
•grated peel of 2 oranges
•1 cup of sugar
•1 1/2 cups of raisins
•1 1/2 cups of walnuts, coarsely
chopped
•1/3 cup of pine nuts
•1 tablespoon of grated gum mastic
or 1 tablespoon of crushed anise seed
•1 teaspoon ground cinnamon
•1 teaspoon ground cloves
•1/4 teaspoon ground nutmeg
5. Sugar Cookies
Christmas menu
Ingredients
3 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1 cup (2 sticks) unsalted butter or
margarine (at room temperature)
1 cup granulated sugar
2 large eggs
2 teaspoons vanilla extract

•milk
•2 whole walnuts in shells
•sesame seeds
2 teaspoons grated lemon rind
multicolored sugar sprinkles
(optional) For icing:
2 1/2 cups sifted confectioners sugar
1/2 teaspoon vanilla extract
3 to 4 tablespoons cold water
assorted food colors
7. VASILOPITA
INGREDIENTS :
1 cup fresh milk
2 teaspoons yeast
4 eggs, separated
1 cup milk-butter, melted
1 ½ cup sugar
1 envelope mahlepi, crushed
Zest of 1 lemon
1 level teaspoon salt
1 kilo flour
Handful of blanched almonds
8. SMALL ALMOND CAKES
700g (1lb 9oz) butter 300g (1 1/4
cups) olive oil 1/2 cup sugar 3 yolks
and 1 egg white 1 teaspoon baking
soda 3 tbsp cognac 1 tbsp cinnamon
powder 700g (1lb 9oz) blanched and
ground 1200g (nearly 10 cups) flour
4 cups of icing sugar (caster sugar) in
a bowl for coating.
9. CHRISTMAS HONEY SWEET
48 servings
7 cup of All-purpose unbleached flour Extra
flour for kneading 1 1/2 teaspoon of Baking
soda 1/4 teaspoon of Salt 1 3/4 cup of Mild
olive oil 1 1/4 cup of Sugar 1/2 cup of
Cognac -OR- mavrothaphne wine -OR- ruby
port 3 oranges; zested and juiced 4 teaspoon
of Freshly ground cinnamon 1 1/2 teaspoon of
Freshly ground clove 3/4 teaspoon of Freshly
grated nutmeg SYRUP
1 pound of Honey; (1 lb = about 2 cups) 1 cup
of Sugar 1 1-inch piece of cinnamon 1 Clove 1
lemon; zested and juiced 1 cup of Water
TOPPING
1/2 cup of Shelled almonds 1 tablespoon of
Sugar 1 teaspoon of Freshly ground cinnamon
