                     Roasted New Potatoes with Herbs
                                          makes 8 servings

             In this side dish, new red potatoes are perfectly offset by a delicate
             combination of garlic, rosemary, and thyme. Serve with roasted chicken, turkey
             or pork.

             3 lbs new red potatoes, quartered
             6 Tbsp olive oil or canola oil
             3 cloves garlic, minced
             1 Tbsp each dried rosemary and thyme
             1 tsp dried oregano
                   Salt and pepper

             In a large bowl, combine the potatoes, oil, and garlic; toss to coat. Add the herbs,
             and toss again. Season with salt and pepper to taste. Divide the potatoes
             between 2 large, heavy baking sheets. Bake at 500 degrees F for about 30
             minutes, or until brown and crisp, stirring occasionally.
