Diet Soup Recipes
Eating soup regularly as part of a balanced meal is a great way to start off a healthy
diet plan. If prepared healthily using low-fat, high-fiber and preferably organic
ingredients, it can even take the place of an entire meal! In fact, a diet was invented
that revolves around the consumption of cabbage soup every day for seven days.
Each day would call for the consumption of a certain food group plus as much cabbage
soup as you wish. This became quite popular as it promised the dieter ten pounds
shed in just one week.




If cabbage is not your favorite and you want more variety, take your favorite chowder,
goulash and sukiyaki and transform it to healthier dishes. Consider using leaner cuts
of meat; opting for low-sodium broth (or better yet make it yourself); not using
monosodium glutamate and adding organic vegetables, fresh herbs and spices.
French onion soup uses a very flavorful beef broth base with a crusty cheese topping.
Asian hot and sour soup though containing a lot of vegetables also has a considerable

these dishes can go overboard with the fat, sodium and cholesterol content. Consider
this every time you make your own at home.

Unless you are vegetarian or vegan, by all means incorporate reasonable amounts of
meat, poultry, fish, seafood, eggs and dairy to your soup to increase protein as well as
provide substance, flavor and texture. Go for low-fat, low-cholesterol, low-carb, high-
fiber, high-protein ingredients.

Incorporate complex carbohydrates from vegetables to provide natural roughage
promoting gastro-intestinal health. Do not overcook your vegetables and add them
last just before serving to preserve nutrients and texture.

Feeling adventurous? Try preparing raw vegan soups using dark leafy greens, root
crops and other wholesome ingredients. Make sure you use organic ingredients as
you will not be cooking them. Raw soups are full of vitamins, minerals, antioxidants
not to mention live enzymes which are key elements to good health.
Lastly, consider some simple replacements: using low fat milk, soy or nutmilks instead
of cream; lean meat cuts or vegemeat instead of processed, high sodium meat
products like sausages; sea salt instead of iodized.

Ingredients:
3/4 lbs. celeriac, 2 shallots,1 teaspoon chopped parsley, 1 black truffle, 1 garlic clove,
juice from 1 lemon, 2 tablespoons whipped cream, 1 2/3 cups bouillon, 1/2 cup white
wine, 1 spoon truffle oil Stuffing: 2/3 lb. fatted chicken breast, 3 ½ tablespoons yellow
and red pepper, 2 tablespoons shallots, 2 garlic cloves, 1 tablespoon chopped
coriander, salt, pepper, allspice, 1 egg,

Preparation Instructions:
Peel the celery and cut into small pieces. Place cut celery, garlic, shallots, some sugar,
salt, pepper, lemon juice, chicken bouillon, white wine, and cream in a pan. Allow it to
simmer. Chop the chicken breast and season with garlic, shallots, egg, coriander,
allspice, salt, pepper, chopped parsley, and yellow and red pepper. Use this to prepare
the boulettes (meat balls). You may cook it with the coriander leaves. Mix the soup
and add a spoon of whipped cream. Place the small chicken boulettes in a concave
dish. Pour foam off the soup, add the truffle, and, for the garnish, add some fresh
parsley leaves.


Citrus Fruit Soup and Orange Crisps




These ultra-thin, crisp cookies are a snap to make and have a fortune cookie-inspired
flavor. Serve alongside a homemade fruit soup to increase your fruit servings for the
day while still satisfying your sweet tooth.

Servings: 4
Preparation Time: 15 minutes
Cooking Time: 15 minutes
Recommended Wine: Rivesaltes blanc

Ingredients:
3 oranges, 3 clementines, 1 bunch fresh mint, pear syrup, Grand Marnier, butter,
flour, sugar, almonds, orange juice

Preparation Instructions:
Peel the oranges and the clementines. Separate the segments and keep them in n air
tight container. Add the syrup and Grand Marnier. Cool for 2 to 3 hours. To prepare
the orange crisps, mix all the ingredients. Refrigerate. Place little piles of this mixture
on a Silpat plate to obtain little biscuits after cooking. Bake for 5 to 6 minutes. Place
the citrus fruits on a serving dish, along with the cooked biscuits and the mint. Serve
very cold.
Carrot and Pea Soup Recipe




Carrot and pea soup is a quick and easy to make recipe and very economical at the
same time. Carrots are very rich is anti-oxidants and peas are good source of vitamin C
so this soup is all set you make you feel warm this winters.

Preparation Time: 10 minutes
Cooking Time: 35 minutes
Difficulty Level: Average

Ingredients:
250gms green peas, shelled and mashed, 2 medium carrots, washed and sliced, 5 cups
water, 1 cup milk, scalded, 2 tablespoons butter, Seasonings to taste

Preparation Instructions:
In a large bowl add the ingredients in given order and allow it to boil. Once it starts
boiling simmer the gas and let it cook for about 30 minutes and cover it. Allow it to
cool and serve warm in a soup bowl.
