Foreword

Once again I am very pleased to be asked to write a forward for the Research Bulletin. The
last year has seen an exponential growth in publications, representing some 200% increase
from 2007/2008. A number of elements were significant to last semester’s research output.
The UNCTAD forum in China highlighted the importance of research in stabilising the
monetary difficulties currently being experienced in global markets. Interestingly, sustainable
development was seen as a major element in global finance and certainly tourism will play a
key role in both of these areas.

The official launch of STAR at the World Travel
Market in London’s Excel Centre was an
important event.      The reception from the
Industry was extremely positive and once again
the emphasis seemed to focus on the notion of
sustainability.   We received many research
enquires on this subject. It was also pleasing to
see STAR profiled on the international tourism

platform.

In addition, there were some very notable accolades received by LRG staff; possibly one of
the most important was that awarded to Dr Ruth Rios-Morales who was presented with
EMRBI Contributor Award of the Year at the EuroMed Conference in Cyprus, in
November, at which a number of LRG staff also made research presentations .

Wishing you a successful start to the New Year and hoping that 2011 will be as productive as
2010, for research publications and projects.

                                The Launch of STAR

On November 8-10, 2010, Les Roches–Gruyère, University of Applied Sciences (LRG-UAS)
launched its first research unit: The Swiss Tourism Applied Research (STAR). The
inauguration took place at the World Travel Market (WTM) in London. The WTM is an
annual event that brings together tourism and travel industry professionals from around the
world. It is one of the largest business to business exhibitions; the number of participants
reaches the amount of around 15,000 affiliates. By launching STAR at the World Travel
Market our Research Unit gained direct access to the Tourism and Travel industry and
attained competitive advantage in developing networks with the suppliers of tourism and
travel, tour operators, hotels, airlines and online travel services.

Latest News




The Research Centre has been working together with the Centre of Marketing Excellence in
branding the image of research at LRG-UAS. The name of our research unit (STAR) has been
verified by the Swiss registration office. Marketing and logo material has been approved by LRG
UAS management team. It is expected that the Swiss Hospitality Applied Research (SHARE), our
other research unit based in Bluche will be launched in 2011.

Best Dissertation Awards
Each semester our university recognizes research conducted by undergraduate
students, awarding the top undergraduate dissertations with the Best Dissertation
Awards.

               MKG Innovation in Hospitality Education Award

       Glion Institute of Higher Education has been listed among the top three best
       hospitality management school educational innovation. The awards where announced
       at the XIth Editon of the Worldwide Hospitality Awards taken place in Paris, 17th of
       November 2010. Glion’s competitive participation was based on the Glion Masters
       Applied Research Project that Mr Peter Juskiw has been piloting for a number of
       years in collaboration with the Kempinski Hotel in Geneva.

       The Glion Masters Applied Research Project is a capstone project where the student
       has the opportunity to display the learning outcomes required by the GIHE MBA.
       Students work together with industry professionals to suggest solutions to real life, real
       time issues following both qualitative and quantitative investigation.




            Social Sustainability within the Hospitality Industry
Robert Lewis has successfully submitted his article "Social Sustainability and the Quality of Life"
that will be published in a forthcoming issue of The International Journal of Environmental,
Cultural, Economic and Social Sustainability.

The study argues that work-life balance affects social sustainability. This is based on the assumption
that workers accept employment based on working conditions which can positively and negatively
affect their personal lives. A group of 20 line managers in a Swiss hotel replied to questionnaires,
using Likert scales and open-ended questions. Variables identified in the findings which positively
affect work-life balance include schedule flexibility and trusting relationships at work. Negative
variables include fatigue, invasive working hours, the sacrifice of personal life and stress.
Implications for social sustainability include decreased employee well-being, social participation and
the ability to create healthy communities.

To present and further develop his study, Robert A. Lewis will present his work at the 7th
International Conference on Environmental, Cultural, Economic and Social Sustainability to be
held at the University of Waikato, Hamilton, New Zealand, 5 – 7 January 2011.

              EMRBI Contributor Award of the Year 2010

On November 5, 2010, Ruth Rios-Morales received the EMRBI Contributor Award of the Year 2010.
The EMRBI (European-Mediterranean Research Business Institute) is one of the largest research
institutes in Europe, aiming to contribute and share the understanding of different business
environments and trends in the region through research, teaching and consulting. EMRBI undertakes
research and scholarly activities, while offering also a range of business-related professional services,
both through its own resources and/or through associated organisations and individuals.

Ruth Rios-Morales is Deputy Director of Research at Les Roches–Gruyère, University of Applied Sciences,
Switzerland. Ruth is also Country Director for Switzerland of the EMRBI. Ruth holds a BSc in
Economics, MSc in International Economics and a PhD in Politics of International Business from the
University of Ulster, UK. Before joining Les Roches–Gruyere, Ruth taught international business at the
School of Business Studies, Trinity College Dublin. Ruth has also taught international business and
finance in Universidad de Zaragoza, Spain. Ruth has conducted advanced research in international
business and finance, her research has been acknowledged by UNCTAD and the World Bank.

Research Events
                                         Colloquium
As part of the research program development, the Research Centre had organised a series of colloquiums
for 2010. The following colloquium was presented during semester 2010.2:

                                            Our third guest speaker of 2010 was Professor John C.
                                            Crotts from the Hospitality and Tourism Management in the
                                            School of Business at the College of Charleston was our third
                                            guest speaker. Professor’s Crotts colloquium was entitled
                                            “Refining the Method of Marketing Mix Optimization
                                            Modeling: a Best Practices Approach”. The presentation took
                                            place on October 12th, 2010. Prof. Crotts’ research
                                            encompasses the areas of economic psychology, tourism
                                            marketing and sales strategy, and management of cooperative
                                            alliances. In 2000 the Travel and Tourism Research
                                            Association recognized him as one of five stars in tourism
                                            research worldwide. Twice in 2007, John was ranked in the
                                            top 20 scholars worldwide for his published research
                                            productivity in the field’s leading (4) research journals. In
                                            2010 Pearce recognized him as one of the 12 most influential
                                            scholars in tourism, marketing and psychology.

In addition to serving as the founding editor of the International Journal of Culture, Tourism &
Hospitality Research and the International Journal of Hospitality and Tourism Administration, he also
serves on the editorial board of the Journal of Travel Research, Journal of Business Research, Journal of
Travel and Tourism Marketing, Journal of Hospitality and Tourism (India), Journal of Teaching Travel and
Tourism, Scandinavian Journal of Hospitality and Tourism Management (Norway), and the Journal of
Global Academy of Marketing Science (South Korea).

                  The World Investment Forum 2010
                      Investing in Sustainable Development

LRG’s Research Centre was invited to participate at the World Investment Forum 2010 taken
place in Xiamen – China, September 2010. More than 1,800 participants from 120 countries and
16 international organizations participated at this event. Among the participants were 9 heads of
State, 4 heads of international organizations, 79 ministerial-level officials, 116 senior business
executives, more than 250 other senior representatives from the public and private sector and
selected academic institutions.
“The Forum brought together stakeholders from all angles of the investment community,
including policy-makers, investors, negotiators, practitioners, investment promotion officials,
solicitors, senior counsels, academic experts and representatives of civil society, as well as stock
exchange executives and regulators, portfolio investors and sovereign debt managers.
The Forum received extensive press coverage, with more than 250 accredited journalists. The
Forum reached out to millions of people, as its opening ceremony and World Leaders’ Investment
Summit were broadcast live worldwide by CCTV and CCTV International. The Ministerial
Roundtable, the High-level Tripartite Conference and the 2010 IIA Conference were webcasted.”

Collaboration with the Industry


Thyon 2000 Ski resort

In April 2010, Les Roches was contacted by Mr. Fabrice Haenni (Director Imalp Thyon SA) and
Mr. Laurent Vaucher (Director Télé-Thyon) to develop a feasibility study for further improving
the attractiveness of the Thyon 2000 ski resort in Valais, Switzerland.
With the support of the faculty, MBA students engaged in this task during the autumn semester
2010 and started with a first visit to the resort located at an altitude of 2000 meters. The visit led
to the definition of specific objectives for the students to fulfill. Creative solutions were
proposed to enhance the existing infrastructures as well as well as the range of activities offers
to guests. Moreover, F&B operations were also analyzed in order to improve their effectiveness.
Finally, the current marketing strategy was evaluated and recommendations were made to
improve it in relation with the solutions highlighted within the project.
A presentation was made to the management of the ski resort on November 30 2010 who was
impressed by the in-depth analysis offered by the MBA students and their level of
professionalism.

Collaboration with the Industry



Beau-Rivage Palace, Lausanne, Switzerland

During the spring semester 2010, Les Roches MBA students initiated an applied research project
on behalf of the Beau-Rivage Palace in Lausanne, Switzerland. The aim of the project was to
evaluate the quality insurance system in use at the Beau-Rivage, as well as exploring ways to
further develop it. The study was also focusing on how information about the quality of the stay
was collected from the guests.
MBA faculty and students were involved in the project and were also offered great support from
the Beau-Rivage and its Hotel Manager Les Roches Alumnus Lucas Johansson.
This project culminated in a presentation on the 21st of May with the presence of the Beau-
Rivage management who were very pleased with the work done by the students and their faculty.

Research Projects


       Perceptions of Innovativeness Among Swiss Hotel
                          Managers

 Despite the undisputed importance of organizational innovation, and despite decades of
 academic research on the subject, there is surprisingly little agreement on what innovativeness
 really is and how to enhance it. Furthermore, exploration of the differences between the theory
 and practice of innovation, as interpreted by managerial experience rather than philosophical
 speculation, is undeveloped. This research aims to explore perceptions of innovativeness within
 a sample of seven deluxe hotels (4- and 5-star) located in Switzerland. It describes the views
 and opinions of innovativeness as interpreted by senior managers. A stratified purposeful
 sampling method will be employed, in which in-depth interviews with top managers and owners
 will be carried out over a five-month period. Meaning units (MUs) will be extracted and will be
 compared and discussed with the interviewees until a basic agreement of terms can be made.
 The emerging findings highlight how top managers and owners perceive an innovativeness
 concept to gain a competitive advantage, the role of local and national culture in developing
 that advantage, and the implication that a strong relationship between all major stakeholders in
 the hotel industry could hold the key to both local and destination innovation.

                 Quality Assurance and Governance

The Research Steering Committee
The Research Steering Committee (RSC) is the decision-making body of LRG-UAS at research
level. The Committee works in coordination with the Dean of Academic Affairs and meets
twice during each semester and have one extraordinary virtual meeting. The RSC meets every
quarter to decide on support for research projects and funds to go to conferences. During
semester 2010.1, the RSC agreed to have an extraordinary virtual meeting (via Skype) in order to
accommodate deadlines and submissions of faculty members’ conference participation.
Meetings for 2010 were scheduled as follow:
        •February 26th
        •April 16th (extraordinary virtual meeting)
        •May 21nd
        •August 27th
        •September 27th (extraordinary virtual meeting)
        •November 19th

 The Research Ethics Committee

 At the beginning of semester 2009.2, the Research Ethics Committee (REC) was established
 in an effort to strengthen the research ethics policy launched in 2004. The purpose of the
 ethics policy is to establish principles, practices and procedures for the ethical conduct of
 research and scholarship carried out within the remit of LRG-UAS.
 Students and faculty are expected to observe the highest ethical standards when undertaking
 research. Before work starts on research, applications within the mandate of the Research
 Steering Committee (RSC) and carried-out under the auspices of LRG-UAS are reviewed by
 the REC. The endeavour of the REC is to ensure that all research activities conform to basic
 standards of ethics, human rights and courtesy. These are envisaged as respect for: human
 dignity, free and informed consent, vulnerable persons, privacy and confidentiality of
 organisations and individuals, and justice and inclusiveness.

  • 3. Foreword Once again I am very pleased to be asked to write a forward for the Research Bulletin. The last year has seen an exponential growth in publications, representing some 200% increase from 2007/2008. A number of elements were significant to last semester’s research output. The UNCTAD forum in China highlighted the importance of research in stabilising the monetary difficulties currently being experienced in global markets. Interestingly, sustainable development was seen as a major element in global finance and certainly tourism will play a key role in both of these areas. The official launch of STAR at the World Travel Market in London’s Excel Centre was an important event. The reception from the Industry was extremely positive and once again the emphasis seemed to focus on the notion of sustainability. We received many research enquires on this subject. It was also pleasing to see STAR profiled on the international tourism Dr Ian Jenkins, Director of Research platform. In addition, there were some very notable accolades received by LRG staff; possibly one of the most important was that awarded to Dr Ruth Rios-Morales who was presented with EMRBI Contributor Award of the Year at the EuroMed Conference in Cyprus, in November, at which a number of LRG staff also made research presentations . Wishing you a successful start to the New Year and hoping that 2011 will be as productive as 2010, for research publications and projects. 3
  • 4. Latest News The Launch of STAR On November 8-10, 2010, Les Roches–Gruyère, University of Applied Sciences (LRG-UAS) launched its first research unit: The Swiss Tourism Applied Research (STAR). The inauguration took place at the World Travel Market (WTM) in London. The WTM is an annual event that brings together tourism and travel industry professionals from around the world. It is one of the largest business to business exhibitions; the number of participants reaches the amount of around 15,000 affiliates. By launching STAR at the World Travel Market our Research Unit gained direct access to the Tourism and Travel industry and attained competitive advantage in developing networks with the suppliers of tourism and travel, tour operators, hotels, airlines and online travel services.   • 5. Latest News The Research Centre has been working together with the Centre of Marketing Excellence in branding the image of research at LRG-UAS. The name of our research unit (STAR) has been verified by the Swiss registration office. Marketing and logo material has been approved by LRG UAS management team. It is expected that the Swiss Hospitality Applied Research (SHARE), our other research unit based in Bluche will be launched in 2011. 5

Latest News Best Dissertation Awards Each semester our university recognizes research conducted by undergraduate students, awarding the top undergraduate dissertations with the Best Dissertation Awards. The student with the best BBAII dissertation semester 2010.2 at Bluche campus is Roseann Yeo Zihui. Roseann’s dissertation is entitled "An Exploratory Study: Impact of Gastronomic Ranking on Generation Y's Expectation and Perception". The price was given by our educational counselor Sally Mayor. Sandra’s dissertation is entitled “Investigating the influence of individual investors Risk Tolerance and Risk Perception on the tendency of their investment decisions exhibiting Herding and Positive Feedback Trading” Sandra Buchmann 6
  • 7. Latest News MKG Innovation in Hospitality Education Award Glion Institute of Higher Education has been listed among the top three best hospitality management school educational innovation. The awards where announced at the XIth Editon of the Worldwide Hospitality Awards taken place in Paris, 17th of November 2010. Glion’s competitive participation was based on the Glion Masters Applied Research Project that Mr Peter Juskiw has been piloting for a number of years in collaboration with the Kempinski Hotel in Geneva. The Glion Masters Applied Research Project is a capstone project where the student has the opportunity to display the learning outcomes required by the GIHE MBA. Students work together with industry professionals to suggest solutions to real life, real time issues following both qualitative and quantitative investigation. Social Sustainability within the Hospitality Industry Robert Lewis has successfully submitted his article "Social Sustainability and the Quality of Life" that will be published in a forthcoming issue of The International Journal of Environmental, Cultural, Economic and Social Sustainability. The study argues that work-life balance affects social sustainability. This is based on the assumption that workers accept employment based on working conditions which can positively and negatively affect their personal lives. A group of 20 line managers in a Swiss hotel replied to questionnaires, using Likert scales and open-ended questions. Variables identified in the findings which positively affect work-life balance include schedule flexibility and trusting relationships at work. Negative variables include fatigue, invasive working hours, the sacrifice of personal life and stress. Implications for social sustainability include decreased employee well-being, social participation and the ability to create healthy communities. To present and further develop his study, Robert A. Lewis will present his work at the 7th International Conference on Environmental, Cultural, Economic and Social Sustainability to be held at the University of Waikato, Hamilton, New Zealand, 5 – 7 January 2011. 7
  • 8. Latest News EMRBI Contributor Award of the Year 2010 On November 5, 2010, Ruth Rios-Morales received the EMRBI Contributor Award of the Year 2010. The EMRBI (European-Mediterranean Research Business Institute) is one of the largest research institutes in Europe, aiming to contribute and share the understanding of different business environments and trends in the region through research, teaching and consulting. EMRBI undertakes research and scholarly activities, while offering also a range of business-related professional services, both through its own resources and/or through associated organisations and individuals. Professor D. Vrontis, President of the EMRBI presenting the award to R. Rios-Morales Ruth Rios-Morales is Deputy Director of Research at Les Roches–Gruyère, University of Applied Sciences, Switzerland. Ruth is also Country Director for Switzerland of the EMRBI. Ruth holds a BSc in Economics, MSc in International Economics and a PhD in Politics of International Business from the University of Ulster, UK. Before joining Les Roches–Gruyere, Ruth taught international business at the School of Business Studies, Trinity College Dublin. Ruth has also taught international business and finance in Universidad de Zaragoza, Spain. Ruth has conducted advanced research in international business and finance, her research has been acknowledged by UNCTAD and the World Bank. 8
  • 9. Research Events Colloquium As part of the research program development, the Research Centre had organised a series of colloquiums for 2010. The following colloquium was presented during semester 2010.2: Our third guest speaker of 2010 was Professor John C. Crotts from the Hospitality and Tourism Management in the School of Business at the College of Charleston was our third guest speaker. Professor’s Crotts colloquium was entitled “Refining the Method of Marketing Mix Optimization Modeling: a Best Practices Approach”. The presentation took place on October 12th, 2010. Prof. Crotts’ research encompasses the areas of economic psychology, tourism marketing and sales strategy, and management of cooperative alliances. In 2000 the Travel and Tourism Research Association recognized him as one of five stars in tourism research worldwide. Twice in 2007, John was ranked in the top 20 scholars worldwide for his published research productivity in the field’s leading (4) research journals. In 2010 Pearce recognized him as one of the 12 most influential scholars in tourism, marketing and psychology. In addition to serving as the founding editor of the International Journal of Culture, Tourism & Hospitality Research and the International Journal of Hospitality and Tourism Administration, he also serves on the editorial board of the Journal of Travel Research, Journal of Business Research, Journal of Travel and Tourism Marketing, Journal of Hospitality and Tourism (India), Journal of Teaching Travel and Tourism, Scandinavian Journal of Hospitality and Tourism Management (Norway), and the Journal of Global Academy of Marketing Science (South Korea). 9

Research Events The World Investment Forum 2010 Investing in Sustainable Development LRG’s Research Centre was invited to participate at the World Investment Forum 2010 taken place in Xiamen – China, September 2010. More than 1,800 participants from 120 countries and 16 international organizations participated at this event. Among the participants were 9 heads of State, 4 heads of international organizations, 79 ministerial-level officials, 116 senior business executives, more than 250 other senior representatives from the public and private sector and selected academic institutions. “The Forum brought together stakeholders from all angles of the investment community, including policy-makers, investors, negotiators, practitioners, investment promotion officials, solicitors, senior counsels, academic experts and representatives of civil society, as well as stock exchange executives and regulators, portfolio investors and sovereign debt managers. The Forum received extensive press coverage, with more than 250 accredited journalists. The Forum reached out to millions of people, as its opening ceremony and World Leaders’ Investment Summit were broadcast live worldwide by CCTV and CCTV International. Collaboration with the Industry Thyon 2000 Ski resort In April 2010, Les Roches was contacted by Mr. Fabrice Haenni (Director Imalp Thyon SA) and Mr. Laurent Vaucher (Director Télé-Thyon) to develop a feasibility study for further improving the attractiveness of the Thyon 2000 ski resort in Valais, Switzerland. With the support of the faculty, MBA students engaged in this task during the autumn semester 2010 and started with a first visit to the resort located at an altitude of 2000 meters. The visit led to the definition of specific objectives for the students to fulfill. Creative solutions were proposed to enhance the existing infrastructures as well as well as the range of activities offers to guests. Moreover, F&B operations were also analyzed in order to improve their effectiveness. Finally, the current marketing strategy was evaluated and recommendations were made to improve it in relation with the solutions highlighted within the project. A presentation was made to the management of the ski resort on November 30 2010 who was impressed by the in-depth analysis offered by the MBA students and their level of professionalism. 11

Collaboration with the Industry Beau-Rivage Palace, Lausanne, Switzerland During the spring semester 2010, Les Roches MBA students initiated an applied research project on behalf of the Beau-Rivage Palace in Lausanne, Switzerland. The aim of the project was to evaluate the quality insurance system in use at the Beau-Rivage, as well as exploring ways to further develop it. The study was also focusing on how information about the quality of the stay was collected from the guests. MBA faculty and students were involved in the project and were also offered great support from the Beau-Rivage and its Hotel Manager Les Roches Alumnus Lucas Johansson. This project culminated in a presentation on the 21st of May with the presence of the Beau- Rivage management who were very pleased with the work done by the students and their faculty. 12

Research Projects Perceptions of Innovativeness Among Swiss Hotel Managers By Dr Marshall, Mr Pardo and Dr Tajeddini Despite the undisputed importance of organizational innovation, and despite decades of academic research on the subject, there is surprisingly little agreement on what innovativeness really is and how to enhance it. Furthermore, exploration of the differences between the theory and practice of innovation, as interpreted by managerial experience rather than philosophical speculation, is undeveloped. This research aims to explore perceptions of innovativeness within a sample of seven deluxe hotels (4- and 5-star) located in Switzerland. It describes the views and opinions of innovativeness as interpreted by senior managers. A stratified purposeful sampling method will be employed, in which in-depth interviews with top managers and owners will be carried out over a five-month period. Meaning units (MUs) will be extracted and will be compared and discussed with the interviewees until a basic agreement of terms can be made. The emerging findings highlight how top managers and owners perceive an innovativeness concept to gain a competitive advantage, the role of local and national culture in developing that advantage, and the implication that a strong relationship between all major stakeholders in the hotel industry could hold the key to both local and destination innovation.   • 14. Other Research Activities Quality Assurance and Governance The Research Steering Committee The Research Steering Committee (RSC) is the decision-making body of LRG-UAS at research level. The Committee works in coordination with the Dean of Academic Affairs and meets twice during each semester and have one extraordinary virtual meeting. The RSC meets every quarter to decide on support for research projects and funds to go to conferences. During semester 2010.1, the RSC agreed to have an extraordinary virtual meeting (via Skype) in order to accommodate deadlines and submissions of faculty members’ conference participation. Meetings for 2010 were scheduled as follow: •February 26th •April 16th (extraordinary virtual meeting) •May 21nd •August 27th •September 27th (extraordinary virtual meeting) •November 19th The Research Ethics Committee At the beginning of semester 2009.2, the Research Ethics Committee (REC) was established in an effort to strengthen the research ethics policy launched in 2004. The purpose of the ethics policy is to establish principles, practices and procedures for the ethical conduct of research and scholarship carried out within the remit of LRG-UAS. Students and faculty are expected to observe the highest ethical standards when undertaking research. Before work starts on research, applications within the mandate of the Research Steering Committee (RSC) and carried-out under the auspices of LRG-UAS are reviewed by the REC. The endeavour of the REC is to ensure that all research activities conform to basic standards of ethics, human rights and courtesy. These are envisaged as respect for: human dignity, free and informed consent, vulnerable persons, privacy and confidentiality of organisations and individuals, and justice and inclusiveness.
