FOR BREAKFAST

Patties with"cheese"
Ingredients:
200g soy cheese / tofu /
1 cupful soy yogurt, 1/2 tsp baking soda,
1 packet of vanilla,
1 package of pie pastry,
cooking oil

2 cupfuls of flour, maybe whole-meal
1 cupful of yogurt,
1/2 tsp soda
1/2 tsp cooking oil
1/2 cupful crumbled cheese / optional /

BULGARIAN YOGHURT
Yogurt is a great source of
calcium. People with an
intolerance to the protein in
cow's milk can use sheep or
goat yogurt. Yogurt contains
pro-biotics and is useful for
the nervous and digestive
system, bones, heart and so on.

12. YELLOW CHEESE
MADE OF MILK
kashkaval kashkaval pane
is a type of yellow cheese made of sheep’s milk.
The taste of the kashkaval is sometimes compared
to that of the United Kingdom's cheddar cheese.
13. FIRST COURSE - SALADS
Red Beet Salad
Ingredients
3 small heads of beetroot, 2 carrots,
3 potatoes, 5 pickles, 1 red onion,
salt, lemon, olive oil
Salad of tomatoes and
cucumbers
Preparation:
Chop the tomatoes, cucumbers and
onions in rings in a bowl.
Prepare a dressing of olive oil,
lemon juice, salt, pepper, chopped
parsley and basil leaves.
Pour salad dressing. Cover with
grated cheese, olive oil, lemon
14. SHOPSKA SALAD
Most commonly prepared
The same as the salad of tomatoes and cucumber
but with some grated cheese on top
15. TRADITIONAL
BULGARIAN SOUPS
TARATOR
A traditional Bulgarian dish.
It is a cold soup, made of
yoghurt, cucumber, garlic,
walnuts, dill, vegetable oil
and water and is served
chilled or even with ice.
16. BEAN STEW
TRADITIONAL BULGARIAN DISH
YOU CAN’T MISS IT
Ingredients:
Beans - 200 - 300 g, 1 large onion,1
head of garlic, red peppers, tomato
sauce - 200 ml, 1 teaspoon mint,
lovage - 1 tsp, paprika - 1 tsp, 50 ml
oil , salt
Preparation:
Soak the beans in cold water for 3-4
hours and drain. Pour fresh water and
boil all the ingredients /without the
salt/ in an earthenware pot. When the
beans turn tender salt and boil for
another 15-20 minutes.
17. SPINACH WITH RICE
SPRING ECO-DISH
Easy to make
Ingredients:
1 carrot, 3-4 cloves of garlic, 1 tomato,
1 cupful of rice, 400g cleaned spinach,
salt to taste, pepper to taste, cooking
oil
Preparation:
Peel and grate the carrot. Stew with
some water and oil on the bottom of a
pan. After a few minutes, put the
spinach Add the rice and pour 1-2
cupfuls of water. When the rice is
almost ready add the crushed garlic,
chopped tomatoes and spices.
18. STUFFED PEPPERS
very tasty
Ingredients:
6 peppers, 1 cupful rice, 1 carrot,
1 onion, vegetation, savory
Preparation:
Stew the onion, finely chopped with a
little oil and water. Add the carrot,
grated and stifle for another 2-3
minutes. Put the rice, a little water
and other spices. Stew until the rice is
almost ready. Stuff the peppers with
this mixture and bake in a moderately
hot oven for 20-25 minutes.
19. OTHER VEGETARIAN DISHES
Rice with mushrooms and zucchini
Ingredients:
1 carrot, 1 tomato, 2 zucchini, 250-300g
mushrooms, 1 bunch of green onions,
1 bell, black pepper, red pepper, oil, salt
Green bean stew
Ingredients:
0,5 kg green beans, 1 onion, 1 carrot, red
pepper, 2 tablespoons flour, vegetation, oil,
2-3 cloves of garlic and dill

Bulgaria is rich of fruit and vegetables. We eat them fresh or
use them for preparing plenty of desserts.
