In the broiling process, the temperature is measured by a thermocouple that sends the information to a controller with the purpose of controlling the natural gas valve to the burners. Some automated broilers also have a conveyor for toasting the hamburger buns: in this case, the controller must provide a relay output to control the electric heating element.

GEFRAN SOLUTIONS FOR AUTOMATIC BROILERS TEMPERATURE CONTROL
Automatic conveyor broilers are specifically designed to cook hamburgers as well as buns and other
types of meat on a large scale. They are designed to optimize the broiling process, making it as fast
as possible, reducing the energy consumption, keeping the meat hot and minimizing the loss of
moisture at the same time.
They are usually installed in large fast food chains, in sports arenas, amusement parks and
independent restaurants all over the globe.
Broiling process can use different technologies: one of the most advanced solution is a combination
of broiling and convection that recycles energy to improve broiler performance, adds flexibility, and
saves a large amount of energy.

In the selection of the proper controller, it’s important to consider several factors.
Temperature controllers often have to run on low voltage AC power. UL certification is requested for
the US market and not all the controllers for use in this AC voltage are UL approved.
From the performance point of view, the temperature controller must provide a PID algorithm
suitable for controlling a burger meat broiler as the process goes exothermic when the grease
comes off the burgers.
Gefran 600 series temperature controllers offer all the above key features and even more.
The main input for process variable is universal, and many types of signals can be controlled:
thermocouples, resistance thermometers and thermistors. The type of input is selected by using the
front buttons: no external shunts are required.
Up to 4 outputs are available: relay (3A, 250V) or logic (12Vdc, 20mA) outputs can be selected by
choosing the proper configuration.
A PC programming kit is available for even simpler configuration: this allows to save time during the
programming process because the configuration can be saved in the PC and easily uploaded to the
new controllers.
Last, but not less important, Gefran controllers front pad can be easily customized by the factory to
show the customers logo and match their machine’s look.
