Bread in Minutes
People go on diets all the time, mostly for health reasons. Obesity is one of the nightmares of our
modern era, so a gluten-free or Paleo diet look like attractive alternatives to those who seek a
different way of life as well. The transition is not always smooth though. People tend to miss this
or that food, this or that drink. What most people miss though is bread and its distinct aroma.
For those people I have good news, they don’t have to live without bread anymore. I have written
this book to teach them how to bake their own bread using alternative ingredients. I know how
important simple pleasures are for most of us, so by passing on to you my knowledge and
experience, I hope to make your life a little bit better.

It’s fair to say that bread is considered a mainstay component of many daily diets around
the world. In the U.S. alone, the average person consumes around their own body-weight in
bread each year and according to Great Food Almanac statistics, the average American
student will consume around 1,500 peanut butter and jelly sandwiches before graduating
from high school! Whether it’s bagels for breakfast, sandwiches for lunch or bread on the
side with soup or with our evening meal, most of us eat bread at some point in our day.

- 8. Chapter One: Gluten-Free Diet
Celiac disease affects only a small percentage of the global population but it’s believed
that many sufferers go undiagnosed. According to National Institutes of Health
statistics, around one in every 133 Americans has the disease but with an estimated
30 percent of the U.S. population thought to carry the genes that predispose them to
celiac disease, the number of undiagnosed cases could be as high as 97 percent.
Celiac disease affects the small intestine of sufferers. The condition is essentially a
complete gluten intolerance which causes an auto-immune response resulting in
irreparable damage to the lining of the small intestine. The on-going damage makes it
impossible to absorb an adequate amount of nutrients from the foods being
eaten, and this eventually leads to malnutrition which can be life-threatening.

To effectively remove all sources of gluten from your diet, you would need to remove
all forms of processed food and all forms of food containing additives or preservatives.
This means that the majority of canned, jarred and boxed foods are out as anything
that has been "processed" beyond its natural state is more than likely to be a source of
hidden gluten. But, there is life beyond packaged foods!

There are two approaches to making your own bread at home:
1. By hand
2. By bread machine
Both methods result in beautifully home baked breads and the deciding factor may
simply be the amount of time you have available to enjoy the process. Many people
choose to start out with simple hand-made bread recipes or "quick breads" in order to
experiment and hone their skills, but then progress to purchasing a bread machine as
they discover just how deliciously satisfying it is to bake their own bread at home.

This recipe comes from Elana’s Pantry (www.elanaspantry.com) and is tried-and-tested
to give good results every time, even for newcomers to gluten-free bread making.

2 ½ cups blanched almond flour
½ teaspoon Celtic sea salt
½ teaspoon baking soda
3 eggs
1 tablespoon agave nectar
½ teaspoon apple cider vinegar

The above gluten-free bread recipe can be adapted slightly to fit perfectly with the
Paleo diet principle of eating only natural foods that would have been available in
Paleolithic times. By simply substituting honey in the place of agave nectar, you can
create a delicious Paleo-approved bread to satisfy your craving for "doughy" foodstuffs
from time-to-time. It’s also a tasty accompaniment to a freshly prepared salad of Paleo
vegetables.

Another tried-and-tested Paleo bread recipe from Elana’s Pantry provides an end
result with a slightly more "rustic" texture which goes well with a wide variety of Paleo
meals.

The above recipes use almond flour as a gluten-free alternative to regular wheat flour
or bread flour, but there are other gluten-free options available.
Popular Gluten-Free Flours ...
• White rice flour – this is commonly used in gluten-free baking but it often results in
an overly "sticky" or "gummy" outcome. It’s also considered too bland for most tastes.
• Brown rice flour – this has a nuttier flavor than white rice flour but there are health
concerns surrounding its use on a regular basis. The Food and Drugs Administration in
the U.S. is currently investigating the arsenic levels present in rice.
