Contingency Plan for Outside Catering


Introduction note:
Due to the inherent contingencies associated to Outside Catering a back up
plan should always be planed and taken in great consideration.


During negotiation
  Organizers should be informed and briefed during the negotiation
   process that we always include a back up plan for our outside caterings.
  Besides they should also be informed and discuss the following:
    Determine reasons for going to a back up plan
    Location for back up venue
    Transportation
    Decision timings (set according to the specific situation)
    Details and restrictions of back up venue
    Security restrictions


After negotiation
   Event orders to include detailed back up plan
   Catering/Banquet Managers to assure that back up is completely set up
   Other Managers and departments (such as the Property, AV, Chefs and
    Stewarding) have to be also completely prepared (which includes mise-
    en-places, equipment, moving and action plan, and determine who is
    responsible for what) for back up plan accordingly do Event Order
    Specifications.

Contingency Plan
  Decision to be taken by the Catering/Banquet Manager with consonance
   with the organizer.
  After decision the Action Plan for back up venue should be followed
